FAJITA GROUND TURKEY LETTUCE WRAPS
Say hello to the most delicious 30 minute meal you'll ever eat! These fajita ground turkey lettuce wraps are easy to throw together and have a punch of flavor!

Steps:
- Place 2 tablespoons of olive oil in a large skillet or cast-iron pan and turn to medium/high heat.
- When olive oil is fragrant, add garlic and ground turkey.
- Cook for around 5 minutes to partially brown and then add bell peppers and onion.
- Cook for around 5 more minutes to fully brown meat and cook down veggies.
- Add homemade fajita seasoning and a few tablespoons of water. Mix, making sure everything is fully coated.
- Let mixture cook down for a few more minutes to thicken the sauce. Add more water as needed. This all depends on how saucy you want your lettuce wraps.
- Once fully cooked, remove from heat and set aside.
- Next, prepare avocado crema. Place avocado, Greek yogurt, lime juice, and water into a high-speed food processor. Blend on high until smooth. You may need to add more water depending on how thick you want your crema.
- Assemble lettuce wraps by scooping about 1/3 cup of fajita filling on top of a piece of iceburg lettuce and then drizzling with avocado crema.
- Serve with fresh lime juice and cilantro

TURKEY FAJITA WRAPS
Steps:
- Heat the oil in large skillet over high heat. Add the onion, peppers, and garlic and cook, stirring, until slightly softened. Add the turkey, cumin, chili powder, salt, pepper, and cayenne and cook, stirring, until cooked through, about 5 minutes.
- Spoon a couple tablespoons of the turkey mixture on the inside of a lettuce leaf, top with a tablespoon of cheese and a dollop of sour cream, and roll up like a burrito. Close with toothpicks. Repeat to make 6 wraps total.
- Serve with salsa picante and guacamole, if desired.

TURKEY LETTUCE WRAPS ( PF CHANG )
A copycat recipe from Damn Delicious with very few changes . So easy to fix at home, I was amazed ! This smells so great cooking that is it a good thing it is ready in less than 10 minutes. Instead of Butter Lettuce leaves, I use Large Romaine leaves that you can easily load and enjoy ! I serve with brown rice , which helps you make sure you get every little bit of this awesome filling.

- Heat olive oil in a saucepan over medium high heat. Add ground turkey and cook until browned, about 3-5 minutes, making sure to crumble the turkey as it cooks; drain excess fat.
- Stir in garlic, onion, hoisin sauce, soy sauce, rice wine vinegar, ginger and Sriracha until onions have become translucent, about 1-2 minutes. Stir in diced chestnuts and green onions until tender, about 1-2 minutes; season with salt and pepper, to taste.
- To serve, spoon several tablespoons of the chicken mixture into the center of a lettuce leaf, taco-style.

- In a large skillet or wok, heat olive oil over medium and sauté the onion until it begins to sweat and starts to become translucent, about 5 minutes.
- Add the bell peppers and continue sautéing another 7 minutes before adding the garlic. Cook until bell pepper is tender but still al dente. If at any point, the veggies look like they’re drying out, add a couple of tablespoons of water or broth to help them steam.
- Add the ground turkey meat along with all of the spices and salt. Stir and chop the meat into quarter-sized hunks. Continue stirring and cooking until meat is cooked all the way through, about 5 to 8 minutes.
- Prepare your lettuce wraps by spooning desired amount of fajita fixings on top of lettuce leaves. Add desired toppings, such as cheese, rice, beans, avocado, salsa or sour cream.
