FARFALLE WITH FRESH HERBS AND GOAT CHEESE

Kosher salt
1 pound farfalle pasta
3 tablespoons olive oil
3 cloves garlic, minced
1 shallot, minced
1/2 cup half-and-half
6 ounces goat cheese, at room temperature
Freshly ground black pepper
Zest and juice of 1 lemon
3 tablespoons minced fresh parsley
3 tablespoons minced fresh dill
3 tablespoons minced fresh mint
3 tablespoons thinly sliced chives
1 cup grated Pecorino Romano
Extra-virgin olive oil, for drizzling

Steps:

  • Bring a large pot of salted water to a boil. Add the pasta and return to a boil, stirring occasionally. Cook until al dente according to the package instructions, 8 to 10 minutes. Reserve about 1 cup of the pasta water, then drain.
  • Meanwhile, add the olive oil to a large skillet and heat over medium heat. Add the garlic and shallot and saute until softened, about 2 minutes. Add the half-and-half and whisk in the goat cheese until smooth and warm. Season with pepper. Add the lemon zest and juice and half of the reserved pasta water and whisk until combined. Add half of the parsley, dill, mint and chives.
  • Transfer the drained pasta to the skillet and cook until the sauce starts to thicken, about 2 minutes. Turn off the heat, add 1/2 cup of the Pecorino Romano and stir to combine. Adjust the consistency of the sauce with the remaining pasta water if needed. Drizzle with extra-virgin olive oil.
  • Divide the pasta among bowls and garnish with the remaining Pecorino Romano, parsley, dill, mint and chives.

2 tbsp olive oil , plus extra to serve
2 garlic cloves , finely chopped
1 red chilli , finely chopped
250g asparagus , woody ends trimmed, cut into small pieces
1 lemon , zested and juiced
handful basil leaves
30g pine nuts , toasted
50g feta , crumbled

Steps:

  • Bring a large pan of salted water to the boil. Tip in the pasta and cook for 1 min less than pack instructions.
  • Meanwhile, heat the oil in a frying pan over a medium heat. Stir in the garlic, chilli and a pinch of salt, and fry for 1 min until fragrant. Add the asparagus and lemon zest, and cook for 4-5 mins until the asparagus is just tender.
  • Drain the pasta and tip into the asparagus pan. Add the lemon juice, stir through the basil, grind over some black pepper, then divide between bowls. Top with the pine nuts, feta and a drizzle of oil to serve.

1 pound cremini mushrooms, thickly sliced
1 pound thin asparagus, trimmed, cut crosswise into 1-inch pieces
1 cup mascarpone cheese
Pinch freshly grated nutmeg
3/4 cup walnuts, toasted
1/4 cup freshly grated Parmesan

Steps:

  • Bring a large pot of salted water to a boil. Add the farfalle and cook until al dente, stirring occasionally, about 12 minutes. Drain, reserving 1 cup of pasta water.
  • Meanwhile, melt the butter in a heavy large skillet over medium heat. Add the mushrooms and saute until tender and most of the juices have evaporated, about 5 minutes. Add the asparagus and saute until the asparagus is crisp-tender, about 5 minutes. Add the farfalle. Stir in the mascarpone and nutmeg and toss until the cheese coats the pasta, adding the reserved cooking liquid 1/4 cup at a time to moisten. Stir in 1/2 cup of walnuts. Season the pasta, to taste, with salt and pepper. Mound the pasta in a large bowl. Sprinkle with the Parmesan and remaining 1/4 cup of walnuts. Serve.

1 -2 garlic clove, peeled
1/2 cup cottage cheese (nonfat or low-fat)
1/4 cup low-fat milk

3/4 lb farfalle pasta
2 tablespoons chopped fresh chives (or parsley)
1 ounce pecorino cheese or 1 ounce parmesan cheese, grated

Steps:

  • Bring a large pot of water to a boil; add 1 tablespoon salt; then drop in the asparagus; boil 3-5 minutes, until just tender; remove from water using a slotted spoon; refresh with cold water and set asparagus aside.
  • Chop the garlic in food processor fitted with a steel blade; when it adheres to the sides, stop the machine and scrape down the sides.
  • Add the cottage cheese; blend until fairly smooth; scrape down the sides.
  • Add in the milk; blend again until smooth; add salt and pepper to taste; transfer to a wide pasta bowl.
  • Bring the water in the pot back to a boil; add in the pasta; stir to make sure the pasta doesn't stick to the bottom of the pot; cook until al dente; reserve ¼ cup cooking water and drain pasta.
  • Stir the reserved cooking water into the cottage cheese mixture; add the pasta, asparagus, chives, and pecorino; toss to combine; serve hot.

1/4 cup finely chopped shallot
1 garlic clove, minced
1 pint cherry tomatoes or 1 pint grape tomatoes, cut lengthwise in half
salt
fresh ground black pepper
1 lb asparagus
1 lb farfalle pasta
1 cup ricotta cheese
1/2 cup freshly grated parmesan cheese, plus more for serving
4 tablespoons chopped fresh chives

Steps:

  • Bring a large pot of lightly salted water to a boil.
  • Meanwhile, melt the butter over medium heat in a large skillet.
  • Add the shallots and garlic and cook, stirring occasionally, until the shallots are tender, about 3 minutes.
  • Add the cherry tomatoes and cook, stirring occasionally, until they are heated through, about 5 minutes.
  • Remove from the heat and season with salt and pepper to taste.
  • Snap off and discard the woody stems from the asparagus.
  • Cut off and reserve the asparagus tips.
  • Cut the remaining spears into 1/2-inch lengths and set aside.
  • Add the spears (not the tips) to the boiling water and cook until bright green, about 2 minutes.
  • Add the tips and cook until the asparagus is crisp-tender, about 2 minutes more.

  • Scoop out and reserve 1 cup of the pasta cooking water; drain the pasta.
  • Return the pasta and asparagus to the pot.
  • Add the tomato mixture, ricotta, Parmesan, and 3 tablespoons of the chives.
  • Toss gently, adding enough pasta cooking water to make a creamy sauce.
  • Season with salt and pepper to taste.
  • Serve at once, with a sprinkling of the remaining chives and extra Parmesan passed on the side.

1 pound uncooked farfalle pasta
1/2 onion, thinly sliced
4 cloves garlic, thinly sliced
1 pound asparagus, trimmed and cut into 1-inch pieces
4 cups vegetable broth
Kosher salt and freshly ground black pepper
1 cup frozen peas
2 teaspoons grated lemon zest
1 tablespoon fresh lemon juice
1/2 cup ricotta
1/4 cup grated Parmesan
1/4 cup fresh basil leaves

Steps:

  • Combine the pasta, onions, garlic, asparagus, broth and 1/2 teaspoon salt in a large Dutch oven or heavy-bottomed pot. Place over medium heat and cook, stirring frequently, until the mixture boils, 7 to 10 minutes. Reduce the heat and simmer, stirring frequently, for 10 minutes.
  • Stir in the frozen peas and continue to cook until the pasta is al dente and most of the liquid has been absorbed, about 2 minutes. Stir in the lemon zest, lemon juice and 1/4 teaspoon pepper. Taste and season with salt and pepper to taste. Transfer the pasta to serving bowls and top with dollops of ricotta and a sprinkling of Parmesan. Garnish with basil leaves and serve.

This wonderful pasta is made with nothing more than fresh tomato sauce and good ricotta, plus a little pecorino. It's most delicious if you keep the pasta quite al dente; use just enough sauce, no more; give it a good pinch of crushed red pepper; and season it with enough salt of course.

1 pound dried pasta, such as farfalle or penne
Salt and pepper
2 tablespoons butter, softened
Crushed red pepper (optional)
2 ½ cups Quick Fresh Tomato Sauce, warm (see recipe)
6 ounces ultra-fresh ricotta, at room temperature
Grated pecorino
Basil leaves, for garnish

Steps:

  • Cook the pasta in a large pot of well-salted water, making sure to keep it quite al dente.
  • Put butter in a wide deep skillet over medium heat. Add drained pasta to the pan and season with salt, pepper and crushed red pepper, if using.
  • Add tomato sauce gradually and stir to coat pasta, using only enough sauce for a light coating (you may not need the entire 2 1/2 cups).
  • Transfer pasta to a warm serving bowl and dot top with spoonfuls of ricotta. Sprinkle lightly with pecorino and garnish with a few torn basil leaves.

500g asparagus
2 lemons
100g thinly sliced pancetta
500g farfalle
50g butter
284ml carton double cream
2 cooked skinless, boneless chicken breasts (about 250g/9oz total weight), torn into strips
a few gratings of fresh nutmeg
50g parmesan , freshly grated, plus extra for serving

Steps:

  • Trim the asparagus and cut into short lengths on the diagonal - keep the tips separate. (If you like, peel the stems to give a more vibrant colour when cooked.) Cook the stems in salted boiling water for about 4 minutes, then add the tips and cook for 1 minute more. Drain and refresh under cold running water.
  • Peel the lemons with a serrated knife, remove all the white pith, then cut into segments by slicing each side of the pieces of membrane. Now cut the segments into small pieces (flick out any pips) and put them in a bowl with any juice. Grill the pancetta for 3-4 minutes until crisp - keep an eye on it because it can burn easily.
  • Meanwhile cook the pasta in plenty of well-salted boiling water until al dente.While it's cooking, put the butter and half the cream in a large pan and let them bubble together over a low heat for 2-3 minutes until thickened slightly. Tip in the lemon segments and juice, the chicken, asparagus and a few pinches of salt. Turn off the heat.
  • Drain the pasta and add it to the contents of the pan along with the rest of the cream. Toss well, adding black pepper and nutmeg to taste, and the grated parmesan. Toss again, top with the pancetta and serve immediately.

1/2 cup hazelnuts, toasted, husked, coarsely chopped

Parmesan cheese shavings

Steps:

  • Preheat oven to 450°F. Line rimmed baking sheet with aluminum foil. Place asparagus on prepared sheet. Drizzle with olive oil and sprinkle with salt and pepper. Toss to coat; spread in single layer. Roast until asparagus is tender, about 10 minutes. (Can be prepared 2 hours ahead; let stand at room temperature.)
  • Cook pasta in large pot of boiling salted water until tender but still firm to bite, stirring occasionally. Drain, reserving 1 cup pasta cooking water. Return pasta to pot. Stir in mascarpone, grated Parmesan cheese, and asparagus. Toss over medium-low heat until pasta is coated with sauce and mixture is heated through, adding reserved pasta water by 1/4 cupfuls if dry, about 3 minutes.
  • Mound pasta in large shallow serving bowl. Sprinkle with hazelnuts, chives, and Parmesan cheese shavings.

3/4 lb farfalle pasta or 3/4 lb bow tie pasta
1/4 cup olive oil
1 red onion, small and finely diced
3/4 lb asparagus spear, sliced into 1-inch pieces
1/2 teaspoon crushed red pepper flakes
2 tablespoons lemon juice
1 tablespoon lemon peel, grated
6 tablespoons goat cheese
1 tablespoon chives, snipped
1/2 cup parmesan cheese, grated
salt
pepper

Steps:

  • In a pot of boiling water, blanch asparagus for 2 minutes. Drain, rince with cold water and set aside.
  • In another large pot, cook pasta as directed. Drain.
  • Meanwhile, in a deep skillet, heat olive oil. Add onion and cook until softened.
  • Add asparagus and red pepper flakes to onion in pan and saute for 4 minutes.
  • Add pasta, lemon juice, and lemon peel to skillet and mix well. Add salt and pepper to taste.
  • Add goat cheese and chives and toss to combine well.
  • Remove and plate pasta and top with parmsean.
