FABULOUS QUICK-TO-DISAPPEAR CHEESE BALL
I got this recipe from an o.r. nurse I worked with many years ago. She had made it for our dept Christmas party. I've made it many many times since and it's always a hit. I double the recipe when taking to a gathering because it disappears so quickly. It's a real winner, I promise!

Steps:
- Spread generous amount of chili powder on sheet of waxed paper.
- Set aside.
- Grate Cheddar and American cheeses.
- In bowl, combine grated cheeses and remaining ingredients.
- Mix thoroughly.
- (I dig in and use my hands to mix well) Form into ball.
- Roll in chili powder until well coated.
- Place in container with lid.
- Chill.
- Serve with Ritz crackers or any other cracker of choice.
- Enjoy!

MINDY'S FABULOUS OREO BALLS
This recipe comes from one of the girls that I work with, Mindy Czyzewski. She brought them in one day for an office party and everyone was totally raving about them. I had to call her and ask her for the recipe. Thanks Mindy! :-) Please note that I am not exactly sure of the sizes of the products needed. She said "one block of cream cheese, 1 bag of regular Oreo Cookies and 4 Giant Hershey's Milk Chocolate Bars." I will update the sizes once I go to the store for the ingredients. These are a must during PMS! Ha, ha! Servings are also estimated for now.

Steps:
- Using a food processor, crush the Oreos into a fine crumb.
- Mix the crumbs with the cream cheese. Mindy says to mix this by hand.
- Melt the chocolate bars (if using a microwave, be careful that it doesn't burn).
- Roll the crumb mixture into balls and submerse them into the melted chocolate.
- Set the balls on waxed paper and refrigerate until ready to serve.
- Please note: once you remove them from the refrigerator, they don't last long! Everyone will gobble them up!
DESSERT CHEESE BALL
I got this recipe from a friend of mine after eating it at a Christmas party. I usually cut back on the chips I stir into the ball and roll the ball in chips instead of nuts. Just personal preference. I also buy regular and chocolate graham crackers and arrange them around the ball for a nice presentation. Enjoy!

- In a mixing bowl, beat cream cheese, butter, and vanilla until fluffy.
- Gradually add sugars and beat until just combined.
- Stir in chocolate chips.
- Cover and refrigerate for 2 hours.
- Form cheese into a ball using hand protection (Saran wrap, wax paper, etc).
- Optional- just before serving, roll in additional chocolate chips or nuts of your choice.
- Serve with graham crackers.
