BALSAMIC CHICKEN DRUMSTICKS

This recipe is courtesy of Giada De Laurentiis. I haven't actually made it, but I work with a young lady who prepared it and brought it to the office. This was so good we looked like some hogs "slopping at the trough" gnawing on those drumsticks and licking our fingers. We were even eating the marinade after all the chicken was gone because we didn't want to waste a drop. If you wanted to serve this as an appetizer you could use the "drumettes" from the chicken wings. The original recipe does not call for salt, but after tasting it I feel it does need some salt so I listed it as an optional ingredient.

1/2 cup balsamic vinegar
1/2 cup honey
1/2 cup brown sugar
1/4 cup soy sauce
1/2 teaspoon salt (optional)
5 sprigs fresh rosemary
5 garlic cloves, halved
10 chicken drumsticks
2 tablespoons toasted sesame seeds
1/4 cup flat leaf parsley, chopped

Steps:

  • Combine the balsamic vinegar, honey, brown sugar, soy sauce, rosemary sprigs, salt and garlic cloves, stirring to mix well.
  • Pour into a large reseable zip-top plastic bag and add the drumsticks.
  • Seal with as little air as possible.
  • Place in the refrigerator and marinade for at least 2 hours.
  • Preheat oven to 450 degrees.
  • Place the chicken on a foil-lined baking sheet.
  • Bake until the skin is carmelized and very dark in spots, about 30 to 35 minutes.
  • While chicken is cooking, pour marinade in a small saucepan.
  • Bring marinade to a boil then reduce the heat and simmer over low heat, about 20 minutes.
  • Remove from heat.
  • During the last 10 minutes baste chicken with the marinade.
  • Place chicken on a serving platter and baste with the remaining glaze.
  • Sprinkle with the sesame seeds and chopped parsley.

1/2 cup all-purpose flour
1 teaspoon salt
1/2 teaspoon paprika
1/4 teaspoon pepper
6 chicken drumsticks (about 1 1/2 pounds)
1/4 cup butter, melted and cooled

Steps:

  • Heat oven to 425.
  • Mix flour, salt, paprika and pepper in bowl.
  • Dip chicken drumsticks into butter (or margarine); roll in flour mixture to coat.
  • Arrange in ungreased square pan, 8x8x2 inches (we use glass).
  • Bake uncovered until done, about 50 minutes.

5 lbs boneless skinless chicken thighs
3 onions, caramelized
15 garlic cloves, minced
3 tablespoons tomato paste
2 tablespoons thyme, minced
1 (28 ounce) can crushed tomatoes
6 bay leaves
1/2 cup nicoise olive, chopped
5 teaspoons chicken bouillon
5 cups white wine

Steps:

  • Salt chicken thighs and set aside. Combine all other ingredients into a uniform mixture and add chicken thighs.
  • Divide into five packs and freeze. Thaw before cooking.
  • Pressure cooker directions: Bring to pressure and cook 15 minutes. Use natural release.
  • Slow cooker directions: Cook four to six hours on low.

8 chicken drumsticks
1/4 cup hot pepper sauce
1/3 cup flour
2 tablespoons yellow cornmeal
1/2 teaspoon salt
3 cups vegetable oil

Steps:

  • Remove skin from chicken and place the chicken in a plastic bag.
  • Pour hot sauce over chicken, seal bag and refrigerate to marinate for at least 1 hour, up to 24 hours.
  • The longer the chicken marinates, the spicier it will be.
  • In another plastic bag combine the flour, cornmeal and salt.
  • Add chicken, seal bag and shake to coat.
  • Heat oil in a large, deep skillet to medium high heat.
  • Add chicken and fry, uncovered, for 25 to 30 minutes or until juices run clear.
  • Turn occasionally to brown.
