CHICKEN FAJITA TORTILLA CUPS

If you like to impress when you cook, these are the appetizers for you. Perfect finger food for a small gathering, a work potluck or my favorite, a Cinco de Mayo party. These require a little bit of work to prepare, but are fun, festive and worth it. Garnish with sour cream if desired. I have served just as an appetizer with chips and salsa or along with my sour cream chicken enchiladas. Good with beer and/or margaritas.

6 (10 inch) flour tortillas
¼ cup garlic-flavored oil, or as needed
2 tablespoons olive oil
1 tablespoon finely chopped white onion
2 (6 ounce) packages grilled chicken strips, chopped
2 tablespoons fajita seasoning
1 large avocado, finely chopped
3 small Roma tomatoes, seeded and diced
2 tablespoons lemon juice
5 cloves garlic, minced, or to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Cut each tortilla into a 6-inch square using a pizza cutter. Cut each 6-inch square into four 3-inch squares, making 24 total. Use kitchen scissors to cut a 1-inch slit from each corner.
  • Brush garlic oil over both sides of the tortilla squares. Press squares into a mini muffin tin to create small, pointed tortilla cups.
  • Bake in the preheated oven until golden brown, 8 to 10 minutes.
  • Heat 2 tablespoons olive oil in a pan over medium-high heat. Saute onion until tender, 3 to 5 minutes. Add chicken and fajita seasoning; stir until blended. Remove from heat and let cool for about 20 minutes.
  • Combine avocado and tomatoes in a mixing bowl. Add lemon juice and garlic; stir to blend. Add the cooled chicken mixture and stir again until blended.
  • Spoon mixture into the tortilla cups. Serve immediately while tortilla cups are still crispy, or refrigerate for the next day.

Marinating chicken, peppers and onions in a highly flavored marinade imparts big Tex-Mex flavors onto these mouthwatering grilled fajitas. Spiced yogurt and avocado sauce served alongside fresh cilantro keeps the fajitas healthy and fresh tasting.

1 cup packed cilantro leaves, plus extra for serving
1/4 cup lime juice, about 2 limes
1/4 cup low-sodium chicken broth
3 scallions, cut into 1-inch pieces
2 cloves garlic
1 jalapeno, seeded if desired
1 tablespoon honey
Kosher salt
1 1/2-pounds boneless skinless chicken breasts
1 red onion, sliced into 1/2-inch thick rounds
2 orange and/or yellow bell peppers, quartered, seeds removed
1 ripe avocado, halved, seeded and peeled
1 1/2 teaspoons olive oil
1/8 teaspoon ground cumin
1/8 teaspoon ground coriander
1/4 cup fat-free Greek Yogurt
12 corn tortillas

Steps:

  • Put the cilantro, lime juice, broth, scallions, garlic, jalapeno, honey, and salt in a blender, puree until smooth. Reserve 2 tablespoons; do not wash out the blender.
  • Put chicken breasts in a medium bowl and the peppers and onions in another. Divide the remaining cilantro puree evenly between the chicken and the peppers and onions. Toss well to coat the chicken and vegetables and let stand, at room temperature, for 30 minutes.
  • Add the avocado, 1/2 cup water, and the reserved 2 tablespoons cilantro sauce to the blender. Puree until smooth and season with salt. Set aside.
  • Heat the oil in a small skillet set over medium heat until hot. Add the cumin and coriander and continue to cook until fragrant, about 30 seconds to 1 minute. Pour the spices over the yogurt and set aside for the flavors to blend. Stir before serving.
  • Preheat a grill for medium-high/direct heat cooking. Oil the grill grates. Grill the chicken and vegetables, turning, until the vegetables are tender and the chicken reaches an internal temperature of 160 degrees F, about 5 to 8 minutes for the vegetables and 12 to 15 minutes for the chicken. Let chicken rest 5 minutes. Place the tortillas on the grill until just warmed through, about 30 seconds.
  • To assemble the fajitas: slice the onions and peppers into thin strips and then slice the chicken. Place some peppers, onions, chicken and cilantro in a tortilla topped with the spiced yogurt and the avocado sauce.

2 green peppers, Thinly Sliced
3 -4 bell peppers, of other colors Any Variation
1 large onion, Thinly Sliced
2 garlic cloves
2 tablespoons fajita seasoning mix
1 tablespoon oil
8 all natural burrito-size flour tortillas
3 cups cooked and shredded chicken breasts
2 cups mild salsa
2 cups light sour cream
1 cup mild cheddar cheese, Shredded

Steps:

  • Preheat Oven to 350.
  • Heat skillet on Medium/high. Add 1 tbsp canola oil. Once hot, add garlic and stir frequently until lightly browned. Add onions and continue to sauté.
  • In large mixing bowl, Add fajita mix to 1/4 cup warm water and 1 tbsp canola oil. Whisk contents together. Add in peppers and coat peppers entirely with fajita mixture/sauce. Salt and Pepper the mixture (eyeball it). Once coated, add to sautéed onions. Sauté peppers until tender (not mushy). Add more salt and pepper.
  • In another large mixing bowl, mix together 1 1/2 cups salsa with 1 1/2 cups sour cream. Add in chicken (or beans) and coat completely. Add 1/2 cup cheddar and continue to mix. Add in pepper mixture. Mix all ingredients until completely coated.
  • Spray 9x13 (or 2 8x8) pan with cooking spray. Heap 4 spoonfuls of filling mix into each tortilla. Roll tightly and place towards edge of pan, seam side down. Once pan is filled with enchiladas, mix together remaining 1/2 cup salsa with 1/2 cup sour cream. Pour over top of enchiladas. Sprinkle remaining 1/2 cup cheddar. *.
  • Put in oven uncovered. Bake for 25-30 mins, or until tortillas are browned and cheese is completely melted/browned on top.
  • Yummy. Enjoy.
  • *(This is a great recipe to make ahead. Assemble the enchiladas, cover tightly with wrap or foil, and put it in the refrigerator or freezer until you are ready to cook and eat. Just pull it out and bring to room temperature before putting it in the hot oven).

4 chicken breasts
1/2 cup onion, chopped medium
1 teaspoon minced garlic
1 envelope fajita seasoning mix
2 cans chicken broth
1 can cream of chicken soup
1 can Rotel Tomatoes
2 cups milk
1 bag tortilla chips
2 cups shredded cheddar cheese

Steps:

  • In a non stick skillet over medium heat cook together the chicken, onions and garlic.
  • Remove from heat and chop the chicken into bite sized pieces, scrap the onions and garlic into a large saucepan or soup pot.
  • Add the chicken and the envelope of fajita mix.
  • Toss to coat the chicken.
  • Add remaining ingredients and cook on medium for around 40 minutes, stirring often to prevent sticking.
  • Break up tortilla chips into largish pieces to make 2 cups.
  • Place 1/2 cup of chips in each of 4 bowls, and 1/2 cup of cheddar in each of 4 bowls.
  • Ladle on the soup and offer more chips and cheese at the table if you wish.
