1 pound okra, stems removed
1/2 cup cornmeal
Vegetable oil, for frying
Kosher salt

Steps:

  • Cut the okra into 1/4-inch pieces and place into a colander. Rinse under cold water and allow to drain only slightly.
  • Place the cornmeal into a sealable ziptop bag. Add the okra and shake to coat thoroughly.
  • Add enough vegetable oil to a cast iron or stainless steel skillet in order to completely cover the bottom of the pan. Place over medium heat and heat until the oil reaches 370 degrees F. Add the okra all at once and fry until golden brown on 1 side, approximately 6 to 7 minutes. Do not disturb until the bottom is golden brown. Turn the okra with a spatula and do not disturb until the majority of the other side is golden brown as well, approximately 3 to 4 minutes. Now stir occasionally until all of the okra is golden on all sides, approximately another 3 to 4 minutes. Remove the okra from the pan with a slotted spoon or spatula to a cooling rack set over a newspaper-lined sheet pan. Season, to taste, with salt and allow to cool for 1 to 2 minutes before serving.

1 quart fresh okra
2 -3 tablespoons all-purpose flour
1 1/2 cups yellow plain cornmeal (stoneground is best)
1 egg, beaten
1 teaspoon salt
1/2 teaspoon pepper
lard or vegetable oil

Steps:

  • Wash okra and cut into 1/2 inch rounds.
  • Put in a mixing bowl and sprinkle with flour. Shake it around vigorously to coat evenly, then bounce in a wire strainer to remove all excess. Final coat should be very light!
  • Return to mixing bowl and add beaten egg. Stir to cover each piece of okra.
  • Place cornmeal in zipper bag with salt and pepper.
  • Add okra in 1 cup batches and shake until each piece is coated. Remove with something that will allow extra cornmeal to fall away. Put on a plate until all okra is coated.
  • Fry in 1/2 inch lard or oil at 400 degrees or med-high until pieces are golden brown.
  • Drain on brown paper or a wire rack.
  • Salt additionally if desired.

1/2 teaspoon salt
pepper
4 cups fresh okra
nonstick cooking spray

Steps:

  • Preheat oven to 350 degrees.
  • Spray a cookie sheet or jellyroll pan with non-stick cooking spray.
  • Combine corn meal, salt and pepper.
  • Wash okra; drain.
  • Trim ends and cut into 1/2 inch slices.
  • Dredge in corn meal mixture to coat well.
  • Okra should be moist in order for corn meal to adhere.
  • If necessary, rinse okra again in water before dredging.
  • Spread okra in a single layer in prepared pan.
  • Bake for 30 to 40 minutes or until crisp, stirring occasionally.

This is another recipe I grew up with. This is passed down from word of mouth, no one has ever written it down before! Fresh, fried okra is soo simple to fix and soo good!

1 lb fresh okra, cut into pieces (don't use the top of the stem but the bottom is wonderful to eat)
2 -3 cups cornmeal
1 egg
2 cups buttermilk (regular or lowfat milk is fine, too)
salt and pepper
oil

Steps:

  • In a big bowl beat egg with a fork, pour milk in and combine. Pour the cornmeal in another big bowl.
  • Pour enough oil in a big skillet, halfway up, or you can use a deep fryer. Set heat to Medium-high.
  • Put some okra pieces in milk mixture and then coat in cornmeal batter. Fry in skillet 10-15 min, occasionally turning/stirring them around. They are done when crispy and golden brown but not black!
  • Drain on paper towel lined plate. Sprinkle with salt and pepper (i don't use pepper but some people prefer it).
  • Repeat with rest of okra till all gone. Enjoy!

1 (16 ounce) package frozen cut okra
butter flavored cooking spray
¼ cup yellow cornmeal
¼ cup panko bread crumbs
½ teaspoon garlic salt
¼ teaspoon ground black pepper

Steps:

  • Preheat an oven to 375 degrees F (190 degrees C). Place a baking rack on top of a baking sheet or sheet pan.
  • Cook the frozen okra in the microwave using your microwave's frozen vegetable setting, or on high for 8 minutes. Drain and cool on paper towels, about 5 to 10 minutes. Spray generously with butter flavored cooking spray. Add the cornmeal, panko bread crumbs, garlic salt, and pepper to a plastic food storage bag. Place the okra into the bag and shake to coat the okra with the cornmeal mixture.

3 tablespoons buttermilk
2 tablespoons all-purpose flour

Oil for deep-fat frying
Additional salt and pepper, optional

  • Pat okra dry with paper towels. Place buttermilk in a shallow bowl. In another shallow bowl, combine the flour, cornmeal, salt, seasoning blend and pepper. Dip okra in buttermilk, then roll in cornmeal mixture., In an electric skillet or deep-fat fryer, heat 1 in. of oil to 375°. I am posting this in tribute to the hours I spent as a child picking okra in my grandparent's garden. I never knew fried okra was a vegetable growing up, I thought it was a special treat only available in the summertime. Frozen okra was thrown into gumbo, but when it was fresh, we usually fried it. (Unless Daddy requested "stewed" okra.....his favorite, not ours!) I can't believe this version isn't on food.com, but I couldn't find it. Here's to a wonderful childhood!

vegetable oil, enough to fill your skillet no more than half way up
1/4 cup cornmeal
1/2 cup all-purpose flour
1 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon garlic powder
1/8 teaspoon cayenne pepper
1 lb fresh okra, sliced 1/2 inch thick
1/4 cup buttermilk

Steps:

  • Heat the oil in a large, heavy-bottomed skillet (may use sauce pan, but you'll have to cook in more batches) to 350 degrees F.
  • In a plastic bag, combine cornmeal, flour, salt, black pepper, garlic powder, and cayenne pepper. Shake it up to mix it up thoroughly.
  • Place cut up okra in a bowl, and pour the buttermilk over it. Toss it so that each piece is coated with buttermilk.
  • Add the okra to the bag with the cornmeal mixture in it, and shake it well to coat.
  • Carefully add the okra to the hot oil, and cook until golden brown. You may need to cook it in batches, depending on the size of your skillet or pan.
  • Remove from oil, and drain on paper towels. Test a piece to check and see if you need to add more salt. Do so if needed. Serve immediately and enjoy!

  • Slightly beat egg with fork in medium-sized bowl.

  • Preheat skillet on medium-high until hot then add enough oil to coat bottom of pan.

Approximately 1 quart vegetable oil, for frying

Steps:

  • Cut the okra into 1/2-inch rounds. In a medium bowl, lightly beat the eggs. Place the flour, salt and pepper in a plastic bag large enough to hold the okra. Dip the okra in the eggs, then drop into the bag. Shake well, making sure that just enough flour adheres to cover and that the okra pieces do not stick together.
