BUCATINI WITH FRESH TUNA

Steps:
- Bring a large pot of salted water to a boil. Meanwhile, heat 1 tablespoon olive oil in a large skillet over medium-high heat. Season the tuna with salt, add to the skillet and cook, turning, until browned on all sides, about 2 minutes. Remove to a plate.
- Add the remaining 1 tablespoon olive oil to the skillet and reduce the heat to medium. Add the red onion, fennel and celery, season lightly with salt and cook, tossing, until the vegetables begin to soften and brown around the edges, 4 to 5 minutes. Add the capers, oregano and red pepper flakes; cook until sizzling, about 1 minute. Pour in the wine and simmer until reduced by half, about 1 minute. Add the tomatoes and 1/2 cup of the boiling water. Cook, smashing the tomatoes with the back of a spoon, until they begin to break down and the sauce is thickened, 8 to 10 minutes.
- Meanwhile, add the pasta to the boiling water and cook as the label directs for al dente. Reserve 1/2 cup cooking water, then drain.
- Return the tuna to the skillet. Add the pasta and toss to coat, adding the reserved cooking water as needed to loosen. Divide among bowls and top with the celery leaves and fennel fronds.

BAKED RISOTTO WITH TUNA
Steps:
- Preheat an oven to 400 degrees F. Place a large (about 12-cup) ovenproof dish over medium heat, about 1 minute. Add in the olive oil, the onion, garlic and sea salt. Saute until the onion is soft and translucent, about 5 minutes. Add the rice to the dish and stir for another minute or until the rice is lightly coated in oil and light gold in color.
- Add the stock and the tomatoes to the dish. Bring the mixture to a simmer. Stir in the tuna, zucchini, and season with the black pepper, to taste. Cover the dish, with a lid or aluminum foil, and bake until the rice is tender and cooked through, about 30 minutes. Scatter the parsley over the top of the risotto and sprinkle with grated Parmesan cheese, if desired, before serving.
SUPER TUNA
Steps:
- For the tuna and beans: Drain the tuna, put in a bowl and set aside. Open the beans but don't drain.
- In a large skillet over medium heat, caramelize the garlic and onions together in some olive oil. When browned, add the can of beans and saute. Cook for 2 minutes, and then add a handful of Pecorino Romano cheese, 2 pinches salt and 5 turns of the pepper mill.
- Add the tuna to the bean mixture. Give a quick toss in the skillet, and then put the contents into a bowl.
- Scoop a cup of tuna and beans and put on a plate. Add the hummus as a side. Drizzle sesame oil on top of the hummus, and add grind some pepper on top.
- For the side salad: Toss the carrots, olives and pickles in a bowl and drizzle with olive oil. Add salt and pepper to taste and balsamic vinegar to your liking. Serve on the side.
FAVA BEANS IN TAHINI SAUCE
A delicious recipe I learned from an Egyptian friend. If you don't want a strong garlic taste, feel free to cook the garlic with the onion. You can stuff this mixture into a pita, add a dollop of plain yogurt, and enjoy!

- Heat olive oil in small to medium saucepan over medium-high heat. Cook onion in oil until softened.
- Stir in the beans and lemon juice. Next, stir in the tahini until mixture is thick. Then, add the garlic, and cook for a few minutes more. Season to taste with salt and pepper.
