2 large Yukon Gold potatoes
4 tablespoons unsalted butter, melted
2 teaspoons fresh thyme leaves
Fine sea salt and freshly ground black pepper
2 tablespoons grated Parmesan

Steps:

  • Preheat the oven to 400 degrees F. Scrub the potatoes and pat them dry.
  • Place 2 chopsticks along either long side of a potato. Using a long paring or chef's knife, score the potato down to the chopsticks (the chopsticks act as a stopgap, keeping you from cutting all the way through the potato). Cut slits 1/8 inch apart all the way down the length of the potato. Repeat with the second potato.
  • Place the potatoes on a baking dish and brush with half the butter and sprinkle with some of the thyme and salt and pepper.
  • Bake for 35 to 40 minutes, brush with the remaining butter and continue baking until cooked through, about 30 minutes more. Sprinkle with more thyme and the Parmesan and bake for 5 minutes more before serving.

8 tablespoons (1 stick) butter, softened
1/2 cup extra-virgin olive oil
1/3 cup finely chopped fresh chives
Kosher salt and freshly ground black pepper
6 medium russet potatoes, scrubbed
3/4 cup Fromage Fort, recipe follows
1/2 pound leftover cheese pieces
1 clove garlic
1/4 cup white wine
Salt and pepper to taste

Steps:

  • Preheat the oven to 450 degrees F.
  • Stir together the butter, olive oil, chives and some salt and pepper in a small bowl.
  • Lay a potato lengthwise between the handles of 2 chopsticks. Slice the potato thinly, using the chopsticks to stop you from slicing all the way through. Repeat with the remaining potatoes.
  • Put the potatoes on a baking sheet and brush on the butter mixture, making sure to get in between all the slices. Bake until tender and crisp, 45 to 50 minutes.
  • Spread 1 1/2 tablespoons Fromage Fort over top of each and bake until cheese is golden brown and bubbly, an additional 8 to 10 minutes.
  • Add cheese, garlic, wine and some salt and pepper to a food processor and blend until smooth.

¼ cup olive oil
1 clove garlic, pressed
1 teaspoon paprika
1 teaspoon dried oregano
¼ teaspoon celery salt
1 tablespoon grated Parmesan cheese

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Thinly slice each potato several times, stopping just short of cutting all the way through.
  • Whisk olive oil, garlic, paprika, oregano, and celery salt together in a bowl; pour into a resealable plastic bag. Add the potatoes, seal the bag, and shake to coat completely. Transfer potatoes to a baking dish and reserve oil mixture in a small bowl. Sprinkle Parmesan cheese over the potatoes.
  • Bake potatoes in the preheated oven until layers start to separate and potatoes are slightly tender, about 30 minutes. Brush potatoes with reserved oil mixture, pulling layers apart if they are sticking together. Continue baking until potatoes are crispy on the edges and easily pierced with knife, 30 to 40 minutes more.

2 small baking potatoes, about 3/4-pound total
2 tablespoons melted butter
1/3 cup chicken stock
1/4 teaspoon chopped fresh thyme leaves
1/2 teaspoon salt
1/4 teaspoon freshly ground white pepper
11/2 tablespoons finely grated hard cheese, such as Parmesan
1 tablespoon fine dry bread crumbs

Steps:

  • Preheat the oven to 425 degrees F.
  • Peel potatoes. Cut each potato not quite through in a series of crosswise slices about 1/4-inch apart or closer so that they are still joined together at the bottom. Brush the potatoes with the melted butter and place in a small baking pan. Pour the chicken stock around the potatoes and sprinkle with the thyme leaves. Sprinkle with salt and pepper and roast until the potatoes are half cooked, 25 to 30 minutes, basting every 5 minutes with the butter-chicken stock mixture.
  • In a small bowl combine the grated cheese and bread crumbs and divide the mixture evenly between the tops of the 2 potatoes. Continue roasting without any further basting until the potatoes are crispy on the outside and cooked through, about 30 minutes.

8 garlic cloves, sliced in thin slivers
sea salt
coarse black pepper
olive oil

Steps:

  • Preheat oven to 450 degrees.
  • Clean the potatoes with skins on. Cut slits on top of each potato approximately 1/8 inch apart (careful not to go all the way through). [Chop sticks or wooden spoons along each side will help prevent cutting all the way through the potato.] Place on baking sheet.
  • Place a garlic sliver between each slit. Sprinkle with salt and pepper. Drizzle with olive oil.
  • Bake 1 hour. Baste with pan oil then bake another 30 minutes. [The potatoes will gently arch as the slits slightly fan out making for a pretty as well as tasty presentation.].

I found this recipe on the internet. This dish is named for the Hasselbacken restaurant in Stockholm.

4 potatoes (8 ounces each)
2 tablespoons butter, melted
2 tablespoons romano cheese, grated
1 tablespoon seasoned dry bread crumb
salt and pepper

Steps:

  • Heat oven to 425 degrees. Peel the potatoes and keep them in water to prevent browning. Place potatoes into a large cooking spoon. Using a sharp knife, make slices across the potato 1/4 apart. Cut down to the lip of the spoon leaving the potato intact at the bottom. Place the potato in the water while you cut the other potatoes. Place the potatoes in a shallow pan and drizzle with half the butter. Bake for about 35 minutes. Remove from oven and sprinkle with the remaining butter, cheese and bread crumbs. Bake for about 20 more minutes or until brown.

I got this idea from Cuisine at Home, but altered the recipe to produce a moister, cheesier version. This looks like a very fancy side dish, but is actually easy to do. Definately a unique way to serve potatoes.

4 medium yukon gold potatoes
1/2 cup seasoned bread crumbs (I use Parmesan flavored)
1/4 cup parmesan cheese or 1/4 cup asiago cheese, grated
1 tablespoon olive oil
1 teaspoon paprika
1/2 teaspoon salt
1/2 cup butter, melted (divided)

Steps:

  • Preheat oven to 450 degrees F.
  • Spray a rectangular glass baking dish with cooking spray.
  • Prepare potatoes, peel and cut in half length wise and fan.
  • To fan potatoes, place cut side down and slice in 1/8 inch slices.
  • *Tip*Place a chopstick on each side to prevent slicing all the way through.
  • Place breadcrumbs, grated cheese, olive oil, paprika, and salt in a food processor and process until mixed.
  • Place potatoes in rectangular baking dish and open up fans.
  • Drizzle with 1/3 cup butter, set aside remaining butter.
  • Place breadcrumb mixture in a plate and with fans slightly open dip tops of potatoes in bread crumb mixture and return to baking dish.
  • Cover dish with foil and bake for 30 minutes, remove foil and drizzle with remaining butter and bake for an additional 10-15 minutes.
  • May drizzle with additional butter if needed.

The idea of chopping up the potatoes like this is very cute. It was nearly impossible to season the potatoes since I decided not to shake them in a bag. I thought they'd break apart if I did that. They came out kind of toasted. And dry. If I figure out a way to change the mechanics of actually preparing them, I may make them again. It wasn't worth the trouble of making them. :/
