Give beef a boost with this delicious soy marinade

1.8 kg boneless beef joint, such as sirloin or top rump
splash of brandy or bourbon (optional)
4 garlic cloves , roughly chopped
1 red chilli , deseeded and roughly chopped
large knob of ginger , peeled and chopped
3 tbsp soy sauce or teriyaki sauce
3 tbsp tomato ketchup

Steps:

  • To make the marinade, blitz the garlic, chilli and ginger in a blender until finely chopped. Add the soy or teriyaki sauce and ketchup, then pulse until completely blended. Put the beef in a dish and smear over the marinade. Leave in the fridge to marinate for up to 24 hours, the longer the better.
  • To cook the beef, fire up the barbecue and, when flames subside and coals glow, lay it fat side down and char for about 5 mins to get fat sizzling. Flip it over and cook for 40 mins for medium rare, turning occasionally until all sides are charred. If the barbecue has a lid, use it for a smokier flavour. A few mins before taking the beef off, drizzle over brandy or bourbon (if using) to flambé the meat.
  • Lift the meat onto a board, cover with foil and leave to rest for at least 10 mins. Carve the beef into slices like a roast and serve with any juices.

1/4 cup reduced-calorie or regular mayonnaise
2 tablespoons sour cream
2 cloves garlic, minced
2 teaspoons minced fresh ginger
1 tablespoon fresh lime juice
1/4 teaspoon salt
1/3 cup low-sodium soy sauce
3 tablespoons honey
1 tablespoon rice vinegar
1 tablespoon cornstarch
1 tablespoon plus 1 glass chilled Sutter Home Sauvignon Blanc
1 egg
2 tablespoons aioli
2 tablespoons sour cream
1 tablespoon fresh lime juice
1 teaspoon Asian hot chili sauce or bottled hot sauce
1 1/4 pounds skinless salmon fillets, chopped finely
2 green onions, thinly sliced
2 tablespoons chopped fresh mint leaves
2/3 cup bread crumbs
1 teaspoon salt
Vegetable oil
4 sesame buns, split
1/2 cucumber, peeled, seeded, and julienned
Radish or soy bean sprouts for garnish, optional

Steps:

  • Prepare grill with a medium fire for direct-heat cooking. In a small bowl, combine aioli ingredients. Reserve 2 tablespoons for burgers and chill remainder until serving time.
  • Combine soy sauce, honey, and rice vinegar in a small, heavy saucepan. Mix cornstarch and 1 tablespoon wine in a small bowl until smooth and add to soy mixture. Place over grill and stir mixture until glaze boils and thickens slightly, about 3 minutes. Meanwhile, sip a glass of Sutter Home Sauvignon Blanc, saving remainder for grilling. Set glaze aside. In a large bowl, whisk together egg, aioli, sour cream, lime juice, and chili sauce. Stir in salmon, onion, mint, bread crumbs, and salt to combine. Coat hands with vegetable oil and form 4 patties. Brush grill with vegetable oil and grill patties until browned on bottom, about 3 minutes. Turn patties and brush cooked side with soy glaze. Cook 3 minutes, turn, and brush other side with glaze. Grill just until done, about 4 to 6 minutes, turning and brushing with glaze frequently. During the last few minutes of cooking toast buns, cut side down, on outside of grill. Place cucumber strips on bottom half of bun, top with burgers, aioli, and bun tops. Garnish with sprouts, if desired.

1 tablespoon tomato puree
450 g minced chicken
1 large egg
50 g fresh white breadcrumbs
1 tablespoon sunflower oil
3 tablespoons dark soy sauce

1 lemons, juice of or 1 lime, juice of

Steps:

  • Place all ingredients for burgers except for oil in a bowl and mix together well with clean hands.
  • Wet your hands and shape mixture into 6 burgers.
  • Heat oil in frying pan and cook burgers over medium heat for about 5 minutes on eat side or until browned and cooked through.
  • For the glaze mix all ingredients in a small bowl then pour mixture over the burgers in the pan.

1 teaspoon sriracha asian hot chili sauce
1 1/4 lbs skinless salmon fillets, chopped finely
2 green onions, thinly sliced

vegetable oil, for forming the patties and brushing on the grill rack
4 hamburger buns with sesame seeds, split

Steps:

  • Prepare a medium-hot fire in a charcoal grill with a cover, or preheat a gas grill to medium-high.
  • To make the aioli, combine the first six ingredients (mayonnaise, sour cream, minced garlic, minced ginger, freshly squeezed lime juice and salt) in a bowl and mix well. Reserve 2 tablespoons for the patties and cover and refrigerate the remainder until serving.
  • To make the glaze, combine the soy sauce, honey and rice vinegar in a small, heavy fire-proof saucepan. Mix the cornstarch and 1 tablespoon white wine in a small bowl until smooth and add to the soy mixture. Place on the grill rack and stir the mixture until it boils and thickens slightly, about 3 minutes. Set aside.
  • To make the patties, combine the reserved 2 tablespoons aioli with the egg, sour cream, lime juice and chile sauce in a large bowl and whisk to blend well. Add the chopped salmon, onion, cilantro, bread crumbs and salt. Handle the salmon as little as possible to avoid compacting it, mix well. Coat your hands with vegetable oil and divide the mixture into 4 equal portions and form the portions into patties to fit the buns.
  • When the grill is ready, brush the grill rack with vegetable oil. Place the patties on the rack, cover and cook until browned on the bottom, about 3 minutes. Turn the patties and brush the cooked side with soy glaze. Cook, turning and brushing frequently with the glaze, just until opaque throughout, 4 to 5 minutes longer. During the last few minutes of cooking, place the buns, cut side down, on the outer edges of the rack to toast lightly.
  • To assemble the burgers, top each bun bottom with an equal portion of the cucumber strips, a patty and an equal portion of the aioli. Add the bun tops and serve.

1 (15 ounce) can soybeans, rinsed and drained
1/2 cup tofu, mashed
1 teaspoon salt
1 -2 garlic clove
1 cup onion, minced
2 scallions, minced
1/4 cup parsley, to taste
2 teaspoons dried dill
2 tablespoons cider vinegar
2 teaspoons dried mustard
2 cups fine breadcrumbs

Steps:

  • Place everything except bread crumbs in a food processor or blender and puree until fairly smooth.
  • Transfer to a bowl, and add the bread crumbs. Stir until well combined.
  • Form into patties abut 4 inches in diameter and 1/2 inch thick, using about 1/2 cup of mixture for each patty.
  • Heat a heavy, non stick skillet and brush with oil. When pan is hot, add burgers and turn the heat down to medium, and cook for about 10 minutes on each side. Watch them carefully so they get nice and brown but don't burn.
  • Serve burger style.
