1 can (10 ounces) enchilada sauce, divided
4 ounces cream cheese, cubed
1-1/2 cups salsa
2 cups cubed cooked chicken
1 can (15 ounces) pinto beans, rinsed and drained
1 can (4 ounces) chopped green chiles
10 flour tortillas (6 inches)
1 cup shredded Mexican cheese blend
Optional: Shredded lettuce, chopped tomato, sour cream and sliced ripe olives

Steps:

  • Spoon 1/2 cup enchilada sauce into a greased 13x9-in. baking dish. In a large saucepan, cook and stir the cream cheese and salsa over medium heat until blended, 2-3 minutes. Stir in the chicken, beans and chiles. , Place about 1/3 cup chicken mixture down the center of each tortilla. Roll up and place seam side down over sauce. Top with remaining enchilada sauce; sprinkle with cheese. , Cover and bake at 350° until heated through, 25-30 minutes. If desired, serve with lettuce, tomato, sour cream and olives.

I can't remember which magazine I found this recipe in (I was sitting in a waiting room and scribbled it down on scratch paper). I know that I've made some changes from the original recipe, (by making them "suiza" style and playing around with the ingredients). I have since lost my notes (it's been quite a few years). I make this by memory only, so tweak this as you see fit. I have used Cheddar cheese (my favorite), Mexican cheese blend or Monterey Jack to make this, so you choose your favorite. 8 (8 inch) flour tortillas
2 -3 boneless skinless chicken breasts (poached and shredded)
1 (10 3/4 ounce) can cream of chicken soup (undiluted)
1/2 cup sour cream (plus more for serving)
1 cup Pace Picante Sauce (plus more for serving)
1 -2 teaspoon chili powder (to taste)
1 cup monterey jack cheese or 1 cup your favorite cheese, divided
1 tomatoes (chopped) (optional)
1 scallion (thinly sliced) (optional)
shredded lettuce (optional)

Steps:

  • Pre-heat oven to 350* degrees F.
  • In a medium bowl, stir together soup, sour cream, picante sauce (I use Pace Medium) and the chili powder.
  • In another bowl, mix together only 1 cup of the sauce mixture with the shredded chicken and 1/2 cup of the cheese.
  • Warm tortillas in a damp paper towel for approx 10 seconds in the microwave.
  • Lay tortillas out and divide the chicken mixture evenly among the tortillas, running the filling down the center of each, roll up and lay them in an 11x8 baking dish.
  • Pour the remaining sauce mixture over the tops of enchiladas, and sprinkle with the other 1/2 cup of cheese.
  • Cover with foil and bake for 30 - 35 minutes, remove foil and bake an additional 5 minutes.
  • Remove from oven, sprinkle chopped tomatoes and scallion over the top of dish (this is optional -- I leave both on the side of the plate on top of some shredded lettuce**). Serve with additional picante sauce and sour cream at the table. (**I like to line each plate with shredded lettuce for color and texture).

1 1/4 ounces taco seasoning
2 tablespoons butter
8 ounces sour cream
1 whole rotisserie-cooked chicken
1 dash salt
1 dash black pepper
8 ounces shredded Mexican blend cheese
10 (6 inch) flour tortillas

Steps:

  • Debone chicken.
  • Pull the meat with 2 forks.
  • Melt the butter.
  • Add can of sauce, taco seasoning, sour cream, salt & pepper.
  • When sauce is well blended add chicken meat.
  • Spray 8 x 8 casserole dish.
  • Place a tortilla in the palm of a hand. Spoon in a big spoonful of mixture into the middle of the tortilla and close the two sides inches Next place each tortilla seem down in dish while pushing tortillas tighter together.
  • Once all tortillas are in the dish, if I have any mixture left, I spoon the remaining along the two sides of the pan.
  • Top the dish with shredded cheese as much as you want.
  • I cover the dish with aluminum foil & bake at 400 for 20 - 25 minutes to melt cheese.
  • I serve it with Tostitos bite size.

3 -4 chicken breasts
15 white corn tortillas (fajita size) or 15 flour tortillas (fajita size)
3 (10 ounce) cans green enchilada sauce (I use Old El Paso)
3 -4 cups grated monterey jack pepper cheese (or for less spice, use 1 cup pepper jack and 2 cups of cheddar, or a fiesta blend mexican cheese mix)

Steps:

  • Boil chicken until it falls apart, then shred.
  • Mix 1/2 can of sauce and a little cheese with chicken.
  • Put other 1/2 can on bottom of 11x9 baking dish.
  • Microwave tortillas until soft.
  • Roll chicken mixture into tortillas.
  • Put in pan semi-tightly.
  • Cover with remaining 2 cans sauce.
  • Cover top with remaining cheese and bake at 350 until cheese is fully melted (usually about 20-25 min).
  • Brown top slightly or to preference.

1/2 cup shredded Monterey Jack cheese
6 flour tortillas (6-inch), warmed
1 small tomato, chopped (about 1/2 cup)
1 green onion, sliced (about 2 tablespoons)

Steps:

  • Heat the oven to 350 degrees F. Stir the soup, sour cream, picante sauce and chili powder in a medium bowl.
  • Stir 1 cup soup mixture, chicken and cheese in a large bowl.
  • Divide the chicken mixture among the tortillas. Roll up the tortillas and place seam-side up in a 2-quart shallow baking dish. Pour the remaining soup mixture over the filled tortillas. Cover the baking dish.

2 tablespoons vegetable oil
1 1/2 cups frozen chopped collard greens
1 teaspoon ground cumin
1 1/2 cups shredded rotisserie chicken, skin removed (about 6 ounces)
1 bunch scallions, chopped
1 3/4 cups shredded Monterey jack cheese (about 7 ounces)
Kosher salt and freshly ground pepper
1 16-ounce jar tomatillo salsa
1/2 cup heavy cream
8 corn tortillas
1 avocado, diced
Fresh cilantro and sour cream, for topping

Steps:

  • Preheat the broiler. Heat 1 tablespoon vegetable oil in a large ovenproof skillet over medium-high heat. Add the collards and cumin and cook until heated through, 2 to 3 minutes. Remove to a bowl (reserve the skillet). Add the chicken, half the scallions and 3/4 cup cheese to the bowl. Season with salt and pepper and toss.
  • Wipe out the reserved skillet and add the remaining 1 tablespoon vegetable oil. Stir in the salsa, heavy cream and 1/2 cup water; reduce the heat to medium and bring to a simmer. Dip the tortillas briefly in the sauce and lay on a baking sheet. Divide the chicken mixture among the tortillas and roll up.
  • Remove 1/2 cup sauce from the skillet; arrange the enchiladas seam-side down in the skillet. Spoon the reserved sauce on top. Broil until the enchiladas are just crisp and lightly browning, about 2 minutes. Sprinkle with the remaining 1 cup cheese and broil until bubbling, about 1 minute. Top with the remaining scallions, the avocado, cilantro and sour cream.

10 to 12 corn tortillas
2 tablespoons cumin
2 tablespoons chili powder, plus more for sprinkling
2 tablespoons Cajun spice
1 teaspoon salt
1 teaspoon freshly ground black pepper
2 boneless, skinless chicken breasts
1/4 cup vegetable oil
1 large onion, diced
Three 15-ounce cans green enchilada sauce (or use red if preferred!)
3 cups grated Cheddar-Jack cheese, plus more if needed
Sour cream, for serving
Diced tomatoes, for serving
Chopped fresh cilantro, for serving
Lime wedges, for serving

Steps:

  • Preheat the oven to 350 degrees F.
  • One at a time, hold the tortillas over the stovetop burner (heated to medium heat) to brown slightly, about 30 seconds per side. Set the warmed tortillas aside.
  • In a bowl, mix together the cumin, chili powder, Cajun spice, salt and pepper. Sprinkle both sides of the chicken breasts with the spice mix.
  • Heat the oil in a skillet over medium heat and cook the chicken on both sides until done in the middle and the juices run clear, 4 to 5 minutes per side. Set aside on a plate to cool, then shred finely with a fork.
  • Throw the onions into the same skillet, stir them around and cook until deep golden brown and caramelized, 4 to 5 minutes; set them aside on a plate. Pour the enchilada sauce into the skillet and reduce the heat to low, allowing it to warm through.
  • To assemble the enchiladas: Pour 2 cups of the sauce into a 9-by-13-inch casserole dish and leave the rest in the skillet. Dip a tortilla into the sauce in the skillet, then lay it on a baking sheet or plate. Sprinkle some cheese down the middle, followed by some chicken and finally, some of the caramelized onions. Roll it up tightly, then place it seam-side down in the casserole dish. Repeat with the rest of the tortillas. Pour the rest of the sauce over the enchiladas, then sprinkle on the rest of the cheese. Give it a final sprinkling of chili powder.
  • Bake until hot and bubbly, 30 minutes. Let it sit for 15 to 20 minutes before serving.
  • Serve the enchiladas topped with a dollop of sour cream, a sprinkle of diced tomatoes, a sprinkling of cilantro and a wedge of lime.

1 tablespoon olive oil
4 ounces shredded monterey jack pepper cheese (or more to taste)
2 (8 ounce) cans green enchilada sauce (I use Old El Paso)
6 flour tortillas

Steps:

  • Preheat the oven to 400 degrees. Cover a cookie sheet with aluminum foil. Pat chicken breasts dry with a paper towel. Brush with olive oil. Sprinkle with salt and pepper. Bake chicken in oven for 20 minutes or until juices run clear. Let chicken cool. Shred chicken.
  • Reduce oven temperature to 350 degrees.
  • Mix chicken, shredded cheese, and one can of enchilada sauce together in mixing bowl.

This is a fantastic little recipe for sour cream and chicken enchiladas. I've seen some similar recipes posted at 'Zaar but not this exact one. This turns out perfect every single time. It's also easy to double the recipe so you can serve a larger group. I'm always asked for this recipe and it's so easy! It's very mild. If you like spicy/hot you could add some chopped jalapenos (see directions). Can make ahead and freeze - just take it out the night before to thaw in your refrigerator, then follow cooking instructions. *Prep and cooking times do not include cooking the chicken breasts.*

8 (12 inch) flour tortillas (or 12 small)
3 cooked chicken breast halves, shredded (you could also try this using a cooked rotissiere chicken, I'm guessing you'll need approx. 3-4 cups)
1 cup onion, chopped
2 cups monterey jack cheese, shredded
1 (10 3/4 ounce) can reduced-fat cream of chicken soup
1 cup fat free sour cream
1 (4 ounce) can chopped green chilies

Steps:

  • Preheat oven to 400 degrees F.
  • Divide the shredded chicken, onions and 1 cup of the cheese equally into each tortilla. (This doesn't have to be exact or perfect here!).
  • Roll them each tightly and place seam-side down into a greased (cooking spray) 9x13 baking dish.
  • Prepare the sauce by combining soup, sour cream and green chilis (for a hotter recipe also add 1/4 cup finely chopped jalapenos).
  • The sauce should be of a thick gravy-like consistency. You may need to add a little water to thin it out (I usually add about 1/2 a can of water to reconstitute the soup).
  • Pour sauce over the rolled tortillas.
  • Bake for about 20 minutes.
  • Remove from oven and top with remaining cheese.

1 lb ground beef or 1 lb boneless skinless chicken breast
1/4 cup chopped onion
1 teaspoon garlic powder (I prefer fresh minced)
1 tablespoon Worcestershire sauce
1 (8 ounce) can tomato sauce
1 teaspoon paprika
1 teaspoon oregano
2 teaspoons chili powder (more or less for your taste)
1/2 teaspoon cumin
1/2 teaspoon black pepper
3 cups shredded cheese (I like the jack or cheddar combos)
1 (10 ounce) can enchilada sauce (I prefer the green sauce)
olive (optional)
12 corn tortillas
oil

Steps:

  • If using chicken, boil chicken in water.
  • Then rinse and shred with fork.
  • Add onion and garlic.
  • If using ground beef, brown with onion and garlic, drain.
  • Add next 7 ingredients (worcestershire sauce through black pepper).
  • In another skillet, heat oil.
  • Add tortillas, one at a time, for 10 seconds on each side.
  • Drain on paper towel.
  • In 10x13 baking pan, pour just enough enchilada sauce in the bottom to coat the bottom of the pan.
  • Fill each tortilla with a spoonful of meat mixture.
  • Cheese, onions, and/or olives can be put inside each enchilada at this time, if desired.
  • Roll tortilla and place seam side down in pan.
  • Continue with remaining tortillas.
  • Pour remaining enchilada sauce over tortillas and top with cheese (additional olives may be added if desired).
  • At this time, pan may be refrigerated for several hours or overnight.
  • Bake in 350 degree oven for 20 minutes (30 minutes if refrigerated).
  • Top with sour cream.
  • Enjoy!
