ELLIE'S EXTRA CHEESY LASAGNA

I found this awesome recipe from a website called Vintage Victuals. I modified it slightly to my tastes. It is absolutely delicious, found myself waking up for a midnight snack of the leftovers. I usually serve it with homemade garlic bread. You can make this recipe with either ground beef or turkey, I like to use the ground turkey because it is a bit healthier than the beef. I always make this with the ground turkey and no one ever knows the difference.

1 tablespoon extra virgin olive oil
1 lb ground sausage
1 lb ground turkey
8 large garlic cloves, minced
48 ounces pasta sauce
1/2 cup water
2 (8 ounce) packages cream cheese
2 cups ricotta cheese
2 eggs
4 tablespoons Italian spices
1 tablespoon parsley
2 cups pre-shredded mozzarella cheese
1 (9 ounce) package no-boil lasagna noodles
1/2 cup asiago cheese
1/2 cup parmesan cheese
1/2 cup romano cheese
salt
ground pepper

Steps:

  • Preheat oven to 350 degrees and grease a large glass baking dish.
  • In a large skillet heat oil on medium and add the ground turkey and sausage. Brown meat until thoroughly cooked and then push all the meat to one side of the pan. On the empty side of the pan add the minced garlic cooking until fragrant, then mix in with the ground meat.
  • In a very large pot add the water and pasta sauce, heat on medium for a couple minutes then add the meat. Simmer for 20-30 minutes, stirring consistently.
  • While the sauce is simmering, in a large microwaveable bowl soften the cream cheese in the microwave for about 20-30 seconds. Stir in ricotta cheese until blended. Add the eggs, seasoning, parsley and 1 cup of the mozzarella and stir until well blended.
  • Now to assemble the lasagna, pour a thin layer of the sauce mixture on the bottom of the dish, then layer the noodles over the sauce. Spread the cheese mixture over the noodles, a thick enough of a layer to just cover the noodles. Then again place the sauce over the cheese, then add the noodles, and then the cheese. And then finally one last layer of sauce, noodles, and then cheese. Then add the rest of the sauce in a thin layer over the cheese. Top the sauce with the Asiago, Parmesan, Romano, and Mozzarella, sprinkling over the sauce.
  • Place in the oven and bake for approximately 30 minutes covered with foil. Then remove the foil and bake another 15-20 minutes or until the cheese on the top is well melted and golden brown.

My husbands favorite lasagna! He likes it because of the lack of ricotta cheese. This recipe uses cottage cheese instead. This is a low fat recipe from kraftfoods.com

3/4 lb extra lean ground beef
3 garlic cloves, minced
1 1/2 teaspoons dried oregano leaves
1 (26 ounce) jar spaghetti sauce
1 large tomatoes, chopped
1 egg
1 (16 ounce) container low fat cottage cheese
1/4 cup kraft grated parmesan cheese
9 lasagna noodles, cooked, drained
2 cups kraft 2% milk shredded reduced-fat mozzarella cheese, divided

Steps:

  • PREHEAT oven to 375°F Brown meat with garlic and oregano in medium saucepan. Stir in spaghetti sauce; simmer 5 min., stirring occasionally. Remove from heat; stir in tomatoes.
  • MIX egg, cottage cheese and Parmesan cheese. Spread 1/2 cup of the spaghetti sauce mixture onto bottom of 13x9-inch baking dish. Top with layers of 3 noodles, 1 cup of the cottage cheese mixture, 1/2 cup of the mozzarella cheese and 1 cup of the remaining spaghetti sauce mixture. Repeat layers. Top with remaining 3 noodles and remaining spaghetti sauce mixture. Cover with foil.
  • BAKE 30 minute or until heated through. Uncover; top with remaining 1 cup mozzarella cheese. Bake, uncovered, an additional 5 minute or until cheese is melted. Let stand 5 minute before serving.

1 package (8 oz) sliced mushrooms
1 medium red bell pepper, chopped (1 cup)
1 3/4 cups milk
1 1/4 cups hot water
1 box Hamburger Helper™ four cheese lasagna
4 mozzarella cheese sticks (4 oz), cut into 3/4-inch pieces

Steps:

  • In 12-inch nonstick skillet, cook beef, mushrooms and bell pepper over medium-high heat 10 to 12 minutes, stirring occasionally, until beef is no longer pink; drain.
  • Add milk, hot water and sauce mix (from Hamburger Helper™ box); stir to combine. Stir in uncooked pasta (from Hamburger Helper™ box). Heat to boiling, stirring occasionally. Reduce heat; cover and simmer 9 to 11 minutes, stirring occasionally, until pasta is tender and sauce is thick. Remove from heat.
  • Gently stir in cheese; cover and let stand 2 to 3 minutes or until cheese is melted.

2 lbs lean ground beef (can use half ground pork)
3 tablespoons onion powder
2 garlic cloves, minced
2 (15 ounce) cans tomato sauce
1 (12 ounce) can tomato paste
1 1/2 cups water
1 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon oregano
1/2 teaspoon italian seasoning
1 (8 ounce) package cream cheese (light is fine)
1 (16 ounce) carton ricotta cheese (fat-free is fine)
2 eggs or 2 egg substitute
12 ounces mozzarella cheese, sliced
1/2 cup grated parmesan cheese
12 oven-ready lasagna noodles

Steps:

  • In a dutch oven or very large skillet, brown the meat. Add the onion powder and garlic and cook a couple of minutes more.
  • Stir in the tomato sauce, paste, water and seasonings.
  • Cover, and simmer, stirring occasionally for 30 minutes.
  • With mixer or food processor, mix the cream cheese, ricotta and eggs.
  • Preheat oven to 350, and spray a large lasagna pan (11x15) with cooking spray.
  • Layer half the noodles in the bottom of the pan, breaking the noodles as needed.
  • Add half of the meat sauce, and spread evenly over the noodles.
  • Gently spread the cream cheese/ricotta mixture evenly over the sauce.
  • Lay the sliced Mozzarella on top of the cream cheese layer, covering completely.
  • Lay the remaining lasagna noodles on top of this.
  • Top with remaining meat sauce.
  • Sprinkle the Parmesan over the entire casserole.
  • Bake for 25 minutes. Cool 15 minutes before cutting.
  • NOTE: You could divide this into two smaller casseroles and freeze one.

A no boil lasagna that uses regular lasagna noodles. Easy to assemble, but allow enough time to cook. Family favorite for decades, especially the Florentine version. The Florentine version is vegetarian. To make this easier, I have bought already shredded cheese. The Italian mixed cheese is especially good. I found this recipe on the back of a Golden Grain/Mission Lasagna noodle box decades ago. I

1 lb ground beef or 1 lb Italian sausage
1/2 cup onion, chopped
1 garlic clove, minced
1 (28 ounce) jar spaghetti sauce or 3 1/2 cups spaghetti sauce
3/4 cup water
8 wide lasagna noodles
2 cups ricotta cheese or 2 cups cottage cheese
1/2 cup parmesan cheese
1 tablespoon chopped parsley
3 cups shredded mozzarella cheese
2 tablespoons parmesan cheese (for sprinkling on top)

Steps:

  • Heat oven to 375°.
  • Use a 9x13 GLASS pan.
  • Brown ground beef or sausage with onion and garlic.
  • Drain off fat.
  • Return beef mixture to skillet.
  • Stir in spaghetti sauce and water.
  • In a small bowl, combine ricotta, Parmesan and parsley; set aside.
  • In 13x9" glass pan, layer 1/3 of sauce.
  • Layer half of uncooked lasagna noodles. (I often stagger the noodles from end to end as well as overlap them a bit. Centering the noodles in the middle instead of to one end.).
  • Layer one half of ricotta mixture and half of mozzarella.
  • Cover with 1/3 sauce.
  • Repeat layers, ending with sauce mixture.
  • Cover tightly with foil.
  • Bake 1 hour,.
  • Uncover, sprinkle with extra parmesan . Let stand 10 minutes before serving.
  • For Florentine, omit meat and parsley. Stir onion, garlic and one 10 oz. package frozen chopped spinach that has been thawed and drained and 1/8 teaspoons nutmeg into cheese mixture. Layer as above. I often use steamed, chopped fresh spinach.
  • Microwave directions: ( I have never used these) Prepare as above except use plastic wrap and vent corner. Microwave on high for 10 minute or until sauce boils. Microwave at 50% power for 30-35 minute or until pasta is tender, rotating dish after 15 minute Uncover: top with parmesan cheese. Let stand 10 minute before serving. These directions were for older microwaves, so be careful with the times.
