BEST EVER CHEESY POTATOES
This is a super simple recipe but it is super delicious. We make this for every familiy holiday and it never fails to disappear. This recipe does make super buttery potatoes, so if that isn't what you want you really should cut down on the butter.

Steps:
- Mix everything but the hashbrowns in a large bowl.
- Add the hashbrowns.
- Bake at 350 for at least 1 hour (until slightly brown and bubbly).

Steps:
- Heat oven to 375°F.
- Combine all ingredients except bacon in 8-inch square baking dish sprayed with cooking spray; cover.
- Bake 45 min.
- Top with bacon; bake, uncovered, 5 to 10 min. or until potatoes are tender.

SCALLOPED POTATOES
Here's a great scalloped potato recipe that's so easy and absolutely delicious. The leftovers are just as good, maybe even better, the next day. This is one of my favorite and most prepared recipes, from my 1971 Florence Junior Welfare League cookbook.

Steps:
- In a small sauce pan, melt butter and blend in flour.
- Let sit for a minute.
- Add all of cold milk, stirring with a whisk.
- Season with salt and cayenne.
- Cook sauce on low until smooth and boiling, stirring occasionally with a whisk.
- Reduce heat and stir in cheese.
- Place a half of the sliced potatoes in a lightly greased one quart casserole dish.
- Pour half of cheese sauce over potatoes.
- Repeat with second layer of potatoes and cheese sauce.
- Sprinkle the remaining cheese on top.
- Top with some paprika for color.
- Bake uncovered for about 1 hour at 350°F.

- Preheat oven to 350 degrees. In a small saucepan, on medium high heat, add 2 tablespoons of melted butter. Whisk in flour, and allow to brown and bubble, stirring constantly, for two minutes. Slowly whisk in milk and chicken base, and stir frequently while the mixture simmers and thickens slightly (about 3-4 minutes). Remove from heat.
- In a large bowl, mix together remaining 4 tablespoons of melted butter, sour cream, Greek yogurt, and onion powder.

- Preheat the oven to 350 degrees. Place the unpeeled, whole potatoes in a large pot. Cover with water and bring to boil, then reduce to a simmer and cook for 10 to 15 minutes or until the potatoes are still firm, but not soft. Drain and cool.
- Depending on your preference, leave the skin on the potatoes or peel them. Cut the potatoes into 1-inch chunks and add to a large bowl. Toss the potatoes with the cheese, bell peppers, and onions, and season with the kosher salt and pepper.
- Spray a baking dish with nonstick cooking spray. Transfer the potato and cheese mixture into the baking dish, cover tightly with foil and bake for 15 minutes. Remove the foil and bake 5 minutes more. Serve hot for breakfast, brunch, or as a dinner side dish.
