Nachos Cheese Dip & Sauce image

This dip is great not only because it's a two-in-one recipe, but because unlike most other cheese dips and sauces, it does not separate and congeal as it cools and it is just as good (if not better) served cool or at room temperature as it is warm. It's also a super simple recipe which takes minutes to prepare and only 5 or so minutes to cook.

2 1/2 cups / 225g / 8oz shredded cheese (Cheddar, Monterey Jack, Colby, etc), shred your own (Important - read Note 1)
1 tbsp cornstarch ((corn flour))
1 can evaporated milk ((375g / 12oz))
2 tbsp finely chopped jalapeño peppers ((fresh or canned))
1 tbsp hot sauce ((or adjust to your taste))
1/2 tsp onion powder ((optional - adds extra flavour))
1/2 tsp garlic powder ((optional - adds extra flavour))
1 tsp salt

Steps:

  • Toss the cheese and cornstarch together in a saucepan.
  • Add all other ingredients, cook over medium heat, whisking often until the cheese is melted and smooth.
  • Adjust to your taste if required - with extra hot sauce and salt.
  • While hot, it will have a sauce like consistency - perfect for pouring over nachos.
  • As it cools, it will thicken and become a dip-like consistency. Whisk occasionally to mix in the skin that forms on the top.
  • Stir in additional evaporated (or even normal) milk to achieve the desired consistency if you want to use it as a pourable sauce. Note that when you reheat it, it loosens up.

Make classic Ethiopian sourdough crepes at home, to serve with all your favorite Ethiopian dishes.

3 cups all purpose flour
1 cup buckwheat flour
2 tablespoons baking soda
1 teaspoon salt
4 cups club soda
1 cup white vinegar (or rice vinegar)
Oil (for pan)

Steps:

  • In a large bowl, mix both flours, salt, and baking soda together. Whisk in the club soda until smooth. Then add the vinegar and whisk.
  • Heat a large nonstick skillet over medium heat. Pour oil on a paper towel and wipe the skillet with the oiled paper towel. This creates a thin fatty layer to make it easier to flip the crepes.
  • Using a scoop, pour batter into the skillet creating a 6-inch circle. Quickly and carefully swirl the pan around to thin out the batter until it measures 8- to 9-inches across.
  • Cook for 1 minute, then using a large spatula, flip the Injera over and cook another minute. Remove from the skillet and stack on a plate. Repeat with remaining batter. The Injera will seem slightly crisp in the pan, but will soften immediately when placed on the plate. The stacking also helps steam and soften the Injera sourdough crepes.
  • Once finished cooking the Injera. Cut the circles in half with a pizza cutter, roll into tubes and stack. Keep warm until ready to serve. Serve the Injera with Doro Wat or Mesir Wat, tearing pieces of Injera and using it to pick up the Doro Wat.

½ teaspoon ground cardamom
⅛ teaspoon ground cloves
2 tablespoons butter
¼ cup finely chopped onion

2 cloves garlic, minced
2 pounds spinach leaves, cut into 2-inch pieces

Steps:

  • Mix cottage cheese, 1 clove of garlic, cardamom, and cloves thoroughly in a bowl. Cover and refrigerate until ready to serve.
  • Heat the butter in a skillet over medium heat. Stir in the onion, ginger, green chile pepper, and 2 cloves of garlic; cook and stir until the onion has softened and turned translucent, about 5 minutes. Stir in the spinach and cook until just wilted. Drain any excess liquid, and serve the spinach mixture over the seasoned cottage cheese.

She’s not kidding: When I was in Addis (as everyone calls it) last year, even a breakfast of stir-fried injera, known as fir-fir, was served with even more injera on the side.
  • Tibs (sautéed meat chunks) The country’s “go-to meat dish,” as Curtis describes it, is usually made from beef cut into small chunks and sautéed in butter or oil with onions, garlic, hot pepper and rosemary.
  • Shiro be Kibbe (legume stew) Says Richman, “This is Ethiopia’s peasant dish, although it’s eaten by all classes and is the most popular dish in the country.”
  • Berbere (typical spice blend) “Berbere is the name of the chili pepper and also the name of Ethiopia’s most prominent spice mix,” explains Curtis. “Everyone has a different recipe and these variations are often highly guarded family secrets, containing a minimum of 12 ingredients and a maximum of 25,” commonly including garlic, ginger, cardamom and fenugreek.
  • Kitfo (Ethiopian beef tartare) Tartare fans, this might be your favorite new Ethiopian dish. Kitfo is ground raw beef that’s been mixed with kibbe, the spiced clarified butter.
  • Coffee. Ethiopians are super-proud of their coffee, which they grow domestically. Richman explains, “Ethiopia is the birthplace of coffee and grows hundreds of varieties, and there are still thousands of undiscovered varieties!
