- Preheat the oven to 350 degrees F. Butter a 9-by-13-inch baking dish.
- In a large skillet set over medium-high heat, melt the butter. Add the celery and onions and cook, stirring, until fragrant and softened, about 5 minutes. Stir in the parsley, sage, thyme, salt and pepper and cook for 1 more minute. Add the chicken broth and scrape up any brown bits that have formed on the bottom of the skillet, cooking for an additional minute. Remove from the heat and cool slightly.
- In a large bowl, combine the cooled mixture with the stuffing and beaten eggs and mix well. Transfer the mixture to the prepared baking dish.
- Bake until golden brown on top, 30 to 35 minutes. Let cool 5 to 10 minutes. Top with additional parsley and serve.

- Preheat the oven to 400 degrees F. Line a rimmed baking sheet with parchment.
- For the salad: Toss the baguette cubes with the oil on the prepared baking sheet and bake until nicely toasted and golden brown in spots,10 to 15 minutes. Set aside to cool slightly, about 10 minutes.
- Meanwhile, whisk together the vinegar and sugar in a small bowl to combine. Add the onion and toss until well coated. Set aside to pickle, tossing occasionally, about 20 minutes.
- Toss the arugula, celery, carrot, leek, sage and thyme in a large bowl. Drain the onions, reserving 1/4 cup of the pickling liquid. Add the onions to the bowl, along with the croutons.
- For the dressing: Combine the olive oil, lemon juice, garlic, reserved 1/4 cup pickling liquid, 2 teaspoons of the bouillon concentrate, 1 teaspoon black pepper and a good pinch of salt in a medium bowl. Whisk well. Taste for seasoning, adding up to 1 teaspoon more bouillon as needed. Pour the dressing over the salad and toss until everything is well coated. Sprinkle with Parmesan before serving.

- Preheat the oven to 350 degrees F. Spray a 9-by-13-inch baking dish with cooking spray. Line a baking sheet with parchment.
- Tear the burgers (meat and buns) into quarters. Spread in a single layer on the prepared baking sheet. Bake until the buns are dry and starting to brown and the meat is heated through, 10 to 15 minutes. Let cool slightly, then transfer to a large bowl. (Leave the oven on.)
- Heat a large skillet over medium-high heat. Add the butter and heat until melted, then stir in the celery and onion. Cook until the onion is softened and beginning to brown, 5 to 7 minutes.
- Sprinkle the mustard powder, thyme and sage over the onion mixture and cook, stirring to combine, about 30 seconds. Pour in the broth a little at a time, using a wooden spoon to scrape up any browned bits from the bottom of the skillet.
- Pour the broth mixture over the burgers in the bowl and toss until coated. Add the eggs and toss until combined. Transfer the mixture to the prepared baking dish and press into an even layer. Bake until the stuffing is cooked through and starting to brown on top, 40 to 45 minutes. Serve immediately or at room temperature.

- Heat the oven to 140C/120C fan/gas 1 and lightly butter a deep 20 x 30cm baking dish. Tip the bread out onto a baking sheet and bake for 40 minutes until crisp and dry.
- Meanwhile, melt three-quarters of the butter in a large pan over a medium heat and cook the onion and celery with a pinch of salt for 10 minutes until softened. Stir in the herbs, then season with plenty of black pepper. Tip in the bread, toss to combine, then pour in half the chicken stock and toss again. Tip the stuffing mixture into the prepared dish and leave to cool slightly.
- Turn the oven up to 180C/160C fan/gas 4. Whisk together the remaining stock and the eggs, then pour this evenly over the stuffing in the dish. Dot the remaining butter over the top, then cover with foil and bake for 30 mins before removing the foil and baking for another 30 mins until golden.
