1 tablespoon kosher salt
1 tablespoon chili powder
1/2 teaspoon pepper
1/2 teaspoon cayenne pepper
1/2 teaspoon Old Bay Seasoning
1/2 teaspoon thyme
1 teaspoon onion powder
1 teaspoon garlic powder
5 -6 lbs baby back ribs
barbecue sauce

Steps:

  • Mix all herb and spice ingredients.
  • Rub over both sides of ribs.
  • Let sit in refrigerator for a couple hours or overnight.
  • Bake in covered pan at 325 degrees F.
  • for 2 1/2-3 hours or until done.
  • At this time you can refrigerate until ready to barbecue or immediately put on moderately heated grill and brush your favorite barbecue sauce over them while turning and heating through.

2 ounces fresh ground pepper
1 ounce chili powder
1 ounce onion powder
1 ounce garlic powder
1 ounce ground cumin
1 ounce sweet paprika
1/2 ounce cayenne pepper

Steps:

  • Combine ingredients in a shaker jar with lid.
  • Apply dry rub liberally to rinsed and dried baby back ribs (membrane removed of course) covering completely.
  • Refrigerate overnight.
  • Reserve any left over for up to 3 months in a sealed container.
  • For that real "wood cooked" barbecue flavor we recommend plank cooking the ribs.
  • Soak a cedar plank in water for at least 30 minutes; place on the grill over low or indirect heat.
  • Cook the ribs slow and low until they are tender.

½ cup chili powder
¼ cup paprika
¼ cup brown sugar
2 tablespoons mustard powder
1 tablespoon seasoned salt
1 tablespoon ground black pepper
2 teaspoons curry powder
1 teaspoon garlic powder
1 teaspoon ground cinnamon
1 pinch cayenne pepper
2 slabs baby back pork ribs

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Combine chili powder, paprika, brown sugar, mustard powder, seasoned salt, black pepper, curry powder, garlic powder, cinnamon, and cayenne pepper in a container with a lid. Seal container and shake until rub is well combined. Generously coat ribs with rub and place in a roasting pan. Loosely cover pan with aluminum foil.
  • Bake in the preheated oven for 1 hour 30 minutes.
  • Preheat an outdoor grill for medium-high heat and lightly oil the grate. Transfer ribs to grill.
  • Cook ribs on the preheated grill until browned, 5 to 10 minutes per side.

1/2 cup smoked paprika
1/4 cup sea salt (finely ground)
1/4 cup brown sugar (packed)

2 Tbsp cayenne

Steps:

  • In a large bowl, add all ingredients mix until well combined. Use a whisk to break up the brown sugar chunks, if necessary. The dry rub should be uniform in color.
  • Transfer and store in a sealed, air-tight container. I use an old jam jar. Store at room temperature, in your cupboard. It will keep for a long time, up to a year.
  • Use as a dry rub for chicken, fish, ribs, beef brisket, etc. Or sprinkle on top of french fries, burgers, roasted vegetables -- everything!

1 rack baby back pork ribs

  • Preheat smoker to 225 degrees
  • Trim fat and membrane / silver from ribs.
  • Combine mustard, apple juice and Worcestershire sauce in small bowl and mix well.
  • Pour over ribs and slather into meat until thoroughly coated on both sides.
  • Combine all dry rub spice ingredients together and mix well.
  • Sprinkle onto ribs and rub into meat until coated - on both sides.
  • Place directly onto rack of smoker and cook for 2 1/2 hours.
  • Remove from smoker and place onto rimmed baking sheet lined with aluminum foil.
  • Sprinkle with another 1/4 cup of apple juice and 1/3 cup of additional brown sugar.
  • Place baking sheet with ribs back out onto smoker rack, seal in aluminum foil and continue cooking at 300 degrees for an additional 2 hours.
  • Optional step: Brush ribs with favorite bbq sauce and cook for another 60 minutes.
  • Remove meat from smoker and allow to rest for at least one hour.
