Grilled Escarole Caesar Salad image

Provided by Marc Murphy

Time 1h50m

Yield 6 to 8 servings

Number Of Ingredients 12

1/4 cup Garlic Confit, recipe follows
1/4 cup red wine vinegar
2 tablespoons (about 1/2 ounce) freshly grated Parmigiano-Reggiano
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
3 anchovy fillets
1 large egg yolk
3/4 cup vegetable or canola oil
2 heads escarole, trimmed with root intact and sliced in half lengthwise
Kosher salt and freshly ground black pepper
2 cups peeled garlic cloves (between 40 and 50)
1 1/4 cups extra-virgin olive oil, plus more as needed

Steps:

  • For the Caesar vinaigrette: Combine the Garlic Confit, vinegar, Parmigiano-Reggiano, salt, pepper, anchovies, egg yolk and 2 tablespoons water in a blender, then blend on medium speed until smooth. With the motor running, slowly add the oil in a thin stream until it has been incorporated and the vinaigrette is creamy.
  • Use immediately or transfer to an airtight container and refrigerate. The vinaigrette will keep for up to 3 days.
  • For the grilled escarole: Heat a grill for cooking over medium-high heat.
  • Sprinkle escarole with salt and pepper. Put escarole cut-side down on grill and cook until grill marks form, about 1 minute. Remove from grill and cut into 1 1/2-inch pieces. Transfer to a serving platter and toss with Caesar vinaigrette to taste.
  • Place the garlic in a small saucepan and add enough oil to cover. Set the saucepan over low heat and cook until the garlic is soft and pale golden, 30 to 35 minutes. Let the garlic cool in the oil. Store garlic covered in the oil, adding more oil if necessary.

ESCAROLE SALAD WITH TURKEY CRACKLING

Escarole Salad With Turkey Crackling image

Provided by Jacques Pepin

Categories     salads and dressings

Time 45m

Yield 8 servings

Number Of Ingredients 9

Skin from 1 14-to-15 pound turkey (about 1 pound)
Salt
1 large or 2 smaller heads escarole (Choose escarole heads with the whitest possible insides. Green leaves tend to be tough and bitter.)
2 teaspoons Dijon-style mustard
1 to 2 cloves garlic, peeled, crushed and finely chopped (1 teaspoon)
1 tablespoon red-wine vinegar
1/2 teaspoon freshly ground black pepper
1/4 teaspoon salt
1/3 cup oil (half olive and half rape-seed oil or a mixture of olive, rapeseed and safflower oils - or 1/4 cup of the above oil and 2 tablespoons of the fat rendered by cooking the turkey skin)

Steps:

  • To remove the skin from the turkey, cut along the backbone of the turkey with a sharp knife. Begin pulling and cutting on each side of the bone to help separate the skin from the carcass. Keep pulling and cutting the skin to separate it completely from the bird. Do not worry if you make holes in the skin or if it is cut into smaller pieces.
  • For the crackling, spread the turkey skin, stretching it thinly in one piece or several pieces on a large cookie sheet in one layer. Sprinkle with salt and place in a preheated 350-to-400-degree oven. Bake for about 30 minutes, until crisp and brown all over. The skin will have shrunk considerably. If the skin is very thick, bake longer, until very crisp. Cool slightly and lift from the surrounding fat. Break into half-inch pieces and set aside. The skin from one turkey should yield one to one-and-a-half cups of crackling. Reserve the fat in the pan for sauteeing vegetables or for adding to the vinaigrette above.
  • For the salad, trim off the outside escarole leaves that are very green or damaged and cut the remaining leaves into two-inch pieces. Wash thoroughly, lifting the leaves up out of the water. Dry well in a salad spinner. You should have approximately 9 to 10 cups of washed escarole.
  • For the dressing, combine the mustard, garlic, vinegar, pepper and salt together with a spoon. Add the oil and turkey fat slowly and mix well. (The dressing should be slightly separated, not homogenized, so the salad is shiny when tossed with the dressing.
  • At serving time, add the dressing to the greens and toss well. Sprinkle with the crackling and serve immediately.

ESCAROLE SALAD WITH ANCHOVY VINAIGRETTE

Escarole Salad with Anchovy Vinaigrette image

Provided by Marc Murphy

Categories     side-dish

Time 40m

Yield 4 to 6 servings

Number Of Ingredients 11

2 cups cubed country bread (about 1-inch dice)
2 tablespoons olive oil
3/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1 large or 2 small heads escarole
5 tablespoons extra-virgin olive oil
1 large shallot, finely chopped
2 olive oil-packed anchovy fillets, chopped
Pinch red pepper flakes
3 tablespoons red wine vinegar
Kosher salt and freshly ground black pepper

Steps:

  • For the croutons: Preheat the oven to 350 degrees F; position an oven rack in the middle of the oven.
  • In a large bowl, toss the bread cubes with the olive oil, salt and pepper. Spread the bread cubes on a rimmed baking sheet and bake until golden brown, 8 to 10 minutes. Let cool. (The croutons will keep in an airtight container for up to 3 days.)
  • For the escarole: Preheat a grill on medium heat.
  • Cut the escarole head in half, then wash and dry. Grill the escarole cut-side down to give it a little char, about 3 minutes. (Do not flip and cook the other side. We are looking for just some of the escarole to be charred.) Set aside and let cool.
  • For the warm anchovy vinaigrette: In a small saucepot, heat 1 tablespoon olive oil over low heat until shimmering. Add the shallots and anchovies and cook, stirring, until the shallots have softened and the anchovies fall apart and dissolve in the oil, 2 to 3 minutes. Stir in the red pepper flakes. Add the vinegar and cook, stirring, until it has reduced slightly, about 1 minute. Whisk in the remaining 4 tablespoons oil.
  • Cut the escarole into 1-inch pieces and put in a large bowl. Add the vinaigrette and croutons and toss to combine. Season with salt and pepper.

Provided by Food Network Kitchen

Categories     main-dish

Time 55m

Yield 6 to 8 servings

Number Of Ingredients 21

2 tablespoons extra-virgin olive oil
2 leeks (white and light green parts only), thinly sliced
3 stalks celery, chopped
3 carrots, chopped
2 parsnips, chopped
4 quarts Turkey Broth, recipe follows
Kosher salt
1 small head escarole, chopped
2 wide strips lemon zest (removed with a vegetable peeler)
3 cups chopped leftover roast turkey (skin removed)
1 cup farfalline or other small pasta
Juice of 1/2 lemon
1/4 cup chopped fresh dill and/or parsley (optional)
1 turkey carcass (from a roasted bird)
2 onions, cut into chunks
2 carrots, cut into chunks
3 stalks celery, cut into chunks
1 bunch fresh parsley
4 cloves garlic, smashed (unpeeled)
1 teaspoon black peppercorns
2 bay leaves

Steps:

  • Heat the olive oil in a Dutch oven or large pot over medium heat. Add the leeks, celery, carrots and parsnips and cook, stirring occasionally, 10 minutes. Add the broth and bring to a simmer. Season with salt and simmer until the vegetables are tender, about 20 minutes.
  • Add the escarole and lemon zest to the pot and simmer until the escarole is tender, about 10 more minutes.
  • Add the turkey and pasta and cook until the pasta is partially cooked, about 4 minutes. (The pasta will continue cooking in the hot soup.) Remove from the heat and stir in the lemon juice. Discard the lemon zest and top with the herbs.
  • Insert kitchen shears into the carcass and make a few cuts to get you started. Then, use your hands to carefully pull the carcass into 4 or 5 pieces.
  • Combine the carcass, onions, carrots, celery, parsley, garlic, peppercorns and bay leaves in a stockpot. Cover with cold water (about 7 quarts).
  • Bring to a boil, then reduce the heat to medium low. Simmer about 2 hours, occasionally skimming any foam or fat from the surface with a large spoon or ladle.
  • Pour through a large mesh strainer into a pot; discard the solids. Cool slightly, then refrigerate in covered containers for up to 3 days or freeze for up to 2 months.

ESCAROLE SALAD WITH WARM BACON DRESSING

Escarole Salad with Warm Bacon Dressing image

This has got to be one of my favorite salads because it has every flavor profile I'm usually craving all in one bowl. You'll get slight bitterness from the greens, saltiness from the bacon and anchovies, crunch from the crispy crostini, and sweetness from the vinaigrette. It's so good!

Provided by Kardea Brown

Categories     side-dish

Time 25m

Yield 6 to 8 servings (12 cups)

Number Of Ingredients 12

1 small baguette (about 6 inches), very thinly sliced
2 tablespoons olive oil
1 head escarole or frisée lettuce, torn into bite-size pieces
1 head radicchio, halved and thinly sliced crosswise
4 slices thick-cut bacon
1 anchovy fillet or 1/2 teaspoon anchovy paste
1 small shallot, minced
2 tablespoons whole-grain Dijon mustard
2 tablespoons white wine vinegar
1 tablespoon honey
1/4 cup extra-virgin olive oil
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 450 degrees F.
  • Arrange the bread slices on a large rimmed baking sheet lined with parchment paper. Brush evenly with the olive oil. Bake until toasted, turning halfway through, about 3 minutes. Remove from the oven and let cool.
  • Combine the escarole and radicchio in a serving bowl. Set aside.
  • Cook the bacon in a large skillet over medium-high heat until crisp, 5 to 7 minutes. Drain the bacon on paper towels, reserving the drippings in the skillet. Crumble the bacon.
  • Add the anchovy and shallot to the drippings in the skillet and cook until softened and fragrant, 30 seconds to 1 minute. Remove the pan from the heat. Whisk in the mustard, vinegar, honey, and extra-virgin olive oil until combined. Stir in the bacon and season to taste with salt and pepper. Pour the warm dressing over the lettuce in the bowl, add the crostini, and toss to coat.
