PAN-SEARED SCALLOPS, CORN, AND TOMATOES

3/4 pound sea scallops
3/4 teaspoon salt
1/2 teaspoon dried thyme, crumbled
1 slice bacon, chopped
1 tablespoon olive oil
2 scallions, sliced thin
1 cup fresh corn (cut from about 2 ears) or thawed frozen corn
1 cup cherry tomatoes, halved

Steps:

  • Remove tough muscle from side of each scallop if necessary and halve any large scallops. Pat scallops dry with paper towels and in a bowl toss with salt and thyme. In a large non-stick skillet cook bacon over moderate heat, stirring occasionally, until crisp and with a slotted spoon transfer to paper towels to drain. Increase heat to moderately high and in drippings remaining in skillet sear scallops, stirring occasionally, until golden and cooked through. With slotted spoon transfer scallops to a clean bowl.
  • In same skillet heat oil over moderately high heat until hot but not smoking and sauté scallions, stirring occasionally, until they begin to brown, about 1 minute. Add corn and tomatoes and cook, stirring occasionally, until corn begins to brown, about 3 minutes. Return scallops to skillet and heat through, seasoning mixture with salt and pepper.
  • Serve scallops sprinkled with bacon.

1 1/2 cups half-and-half
1 tablespoon sugar
Two 14-ounce packages frozen corn (about 5 cups), thawed
1 1/2 cup coarsely crushed buttery crackers, such as Ritz or Toll House
1 cup shredded white Cheddar (about 2 ounces)
Kosher salt

Steps:

  • Position a rack in the top third of the oven and preheat to 325 degrees F. Grease a 2-quart oval gratin or baking dish with 1 tablespoon of the butter.
  • Whisk the eggs and half-and-half together in a large bowl. Add the sugar, corn, 1/2 cup of the crushed crackers, 1/2 cup of the Cheddar and 1 teaspoon salt. Pour the mixture into the baking dish, spreading with a spatula or spoon to make an even layer.
  • Bake uncovered until the edges are set but the center is still wet, about 35 minutes. Meanwhile, melt the remaining 3 tablespoons butter in a small dish in the microwave, about 30 seconds. Mix the butter into the remaining 1 cup crushed crackers until evenly moistened. Sprinkle the remaining 1/2 cup shredded Cheddar and the buttered crackers over the corn. Continue baking until the edges are brown and the top is set and golden, 20 to 25 minutes more. Remove from the oven and let stand 5 minutes before serving.

2 1/2 cups whole kernel corn (fresh or well drained canned)
1 3/4 cups roma tomatoes, chopped (fresh)
1/4 cup tomato juice
2 tablespoons butter or 2 tablespoons margarine
salt & pepper
1 cup fine breadcrumbs
5 tablespoons onions, minced
5 tablespoons green peppers, chopped (I use jalapenos)
2 tablespoons brown sugar (or sugar substitute)
2 tablespoons butter or 2 tablespoons margarine
1/4 cup parmesan cheese (optional)

Steps:

  • Lightly grease a 1-quart casserole dish.
  • Heat oven to 350°F.
  • Mix the corn, tomatoes, tomato juice and 2 tbsp of melted butter (margarine). Season to taste.
  • Blend in the crumbs, onion, pepper and sugar.
  • Turn into the casserole.
  • Top with the parmesan cheese if you are using it.
  • Bake at 350°F for 30 minutes or until lightly browned and heated through.

1 tablespoon sugar

1 red onion (1/2 thinly sliced, 1/2 diced)

1 1/2 pounds large scallops, "foot" muscles removed, patted dry
2 small vine-ripened tomatoes, diced
1/2 cup fresh basil, thinly sliced

Steps:

  • Slice the kernels off 4 ears of corn. Grate the remaining 2 ears on the large holes of a box grater.
  • Bring 1/2 cup water, the vinegar, sugar and a big pinch of salt to a boil in a small saucepan over high heat. Remove from the heat; add the sliced red onion and set aside to pickle, at least 10 minutes.
  • Meanwhile, heat 1 tablespoon vegetable oil in a medium saucepan over medium-high heat. Add the diced red onion and cook, stirring occasionally, until softened, about 4 minutes. Add the corn kernels and cook, stirring, 2 minutes. Reduce the heat to medium and add the evaporated milk and grated corn. Simmer until thick, 5 to 7 minutes; season with salt and pepper. Cover and keep warm over low heat.
  • Heat the remaining 2 tablespoons vegetable oil in a large nonstick skillet over high heat. Season the scallops with salt and pepper. Add to the skillet and cook, undisturbed, until browned on the bottom, about 3 minutes. Flip and cook until cooked through, about 1 more minute.

16 plum tomatoes, cut 1/2-inch dice (about 2 1/2 pounds)

1 teaspoon freshly ground black pepper
1/2 cup julienned basil leaves, lightly packed
1 cup freshly grated Parmesan cheese

Steps:

  • Preheat the oven to 350 degrees F.
  • Heat 3 tablespoons of olive oil in a large (12 inch) saute pan over medium heat. Add the bread cubes and stir to coat with the oil. Cook over medium to medium-high heat for 5 minutes, stirring often, until the cubes are evenly browned.
  • Meanwhile, combine the tomatoes, garlic, sugar, salt, and pepper in a large bowl. When the bread cubes are done, add the tomato mixture and continue to cook, stirring often, for 5 minutes. Off the heat, stir in the basil.

2 14.5 ounce cans whole tomatoes, drained and cut up
1 8.75 ounce can whole kernel corn, drained
1 8.25 ounce can cream-style corn
2 slightly beaten eggs
2 tablespoons all-purpose flour
1 teaspoon sugar
½ teaspoon ground black pepper
¼ teaspoon salt
¼ cup butter or margarine
1 cup finely chopped onion
1 clove garlic, minced
3 cups soft bread crumbs
½ cup grated Parmesan cheese

Steps:

  • In a large bowl, combine tomatoes, corn, cream-style corn, eggs, flour, sugar, pepper, and salt. Transfer to a 12x7-1/2x2-inch baking dish. Set aside.
  • In a medium saucepan, melt butter. Add the onion and garlic. Cook until onion is tender but not brown.
  • In a large bowl, combine bread crumbs and Parmesan cheese. Add onion mixture; toss to combine. Sprinkle bread crumb mixture over the tomato mixture.
  • Bake in a 350 degree F oven 30 minutes or until a knife inserted near the center comes out clean. Makes 8 servings.

The easiest hot-weather supper, this salad benefits from peak-summer ingredients, which need very little prep. You can throw the corn cobs and halved peaches directly on the grill, but if your scallops are small enough to fall through the grates, you should skewer them onto metal skewers or wooden skewers that have been soaked in water. The only thing worse than losing a sweet, meaty scallop into the fire would be overcooking it, so be sure to remove the scallops from the grill before they're fully opaque.

1/2 cup 1% milk
1/2 lb plum tomatoes, seeded and cut into 1/4-inch dice (1 cup)
1 tablespoon chopped fresh flat-leaf parsley
30 large sea scallops (2 1/2 lb total), tough muscle removed from side of each if necessary

Steps:

  • Cook shallot and garlic in 2 teaspoons oil in a small skillet over moderately low heat, stirring, until softened, about 1 minute. Add corn, basil, salt, and pepper and cook, stirring occasionally, until corn is tender and beginning to lightly brown on edges, about 4 minutes. Add milk and scrape up any brown bits from bottom of skillet, then remove from heat.
  • Purée corn mixture in a blender at medium speed until very smooth, about 1 minute. Force purée through a fine-mesh sieve into a small saucepan, pressing hard on and then discarding solids. Cover coulis until ready to serve.
  • Toss tomatoes with parsley and salt and pepper to taste in a bowl.
  • Pat scallops dry and season with salt and pepper.   • MAKE DRESSING
  • Whisk the lime juice, lime peel, and piment d'Espelette in a small bowl. Gradually whisk in the oil. Season with fleur de sel and pepper.
  • MAKE BASIL PURÉE
  • Blanch the basil in a small pot of boiling salted water 30 seconds; drain. Squeeze to remove as much water as possible, then coarsely chop. Purée the basil and oil in a blender until smooth. Transfer to a small bowl. Season to taste with fleur de sel.

Scalloped corn is pure Americana. Enjoyed as old-fashioned comfort food throughout the United States, it's often attributed to New England, where any number of other ingredients are scalloped, like potatoes, oysters, clams and tomatoes. Cooks differ over whether to use heavy cream, condensed milk or white sauce, but nearly all agree buttered cracker crumbs or bread crumbs are essential for the topping. If you like, scalloped corn can be prepared several hours ahead of serving and reheated.

8 tablespoons unsalted butter (1 stick)
3 tablespoons all-purpose flour
2 cups milk or half-and-half
Salt and pepper
Pinch of cayenne
1 small onion, diced (about 1 cup)
1 small red bell pepper, diced (about 1 cup)
Kernels from 6 ears fresh corn (about 3 cups)
1 egg, beaten
1/2 cup crushed oyster crackers or soda crackers

Steps:

  • Heat oven to 375 degrees and position a rack in the middle. Use 1 tablespoon butter to grease a 9-inch square or round baking dish.
  • Make the white sauce: Melt 3 tablespoons butter in a saucepan over medium heat. Whisk in flour and cook mixture for about 1 minute, until sizzling but not browned.
