CHOCOLATE SWISS ROLL

If you've made a Swiss roll cake before and worried about rolling the cake while it's warm and fragile, this easy chocolate Swiss roll recipe is for you.

Number Of Ingredients 15

4 large eggs, room temperature
1 tsp. Diamond Crystal or ½ tsp. Morton kosher salt
½ tsp. cream of tartar
1 cup (200 g) granulated sugar, divided
½ cup (32 g) unsweetened cocoa powder, preferably Dutch-process
⅓ cup vegetable oil
1 tsp. vanilla bean paste or extract
½ cup (58 g) bleached cake flour
½ tsp. baking powder
2 cups heavy cream
3 Tbsp. granulated sugar
2 Tbsp. instant vanilla pudding mix
1 tsp. Diamond Crystal or ½ tsp. Morton kosher salt
1 tsp. vanilla bean paste or extract
Powdered sugar (for serving)

Steps:

  • Place a rack in middle of oven; preheat to 350°F. Line bottom of a 17x12" rimmed baking sheet with parchment paper (do not grease pan or parchment). Separate yolks from 4 large eggs, room temperature, over a medium bowl to catch egg whites. Place yolks in a large bowl and set aside.
  • Add 1 tsp. Diamond Crystal or ½ tsp. Morton kosher salt, ½ tsp. cream of tartar, and ½ cup (100 g) granulated sugar to egg whites and beat with an electric mixer until sugar is dissolved and egg whites are glossy and stiff peaks form, 8-10 minutes. (You can also beat on medium-high speed in the bowl of a stand mixer fitted with the whisk attachment.)
  • Add remaining ½ cup (100 g) granulated sugar to reserved egg yolks and whisk to combine, about 1 minute. Add ½ cup (32 g) unsweetened cocoa powder, preferably Dutch-process, ⅓ cup vegetable oil, 1 tsp. vanilla bean paste or extract, and ⅓ cup room-temperature water and whisk until cocoa is fully dissolved. Sift ½ cup (58 g) bleached cake flour and ½ tsp. baking powder over, then whisk vigorously to combine.
  • Add one fourth of meringue to cocoa mixture and mix thoroughly (you can use either a whisk or rubber spatula). Add remaining meringue in 3 batches, gently folding after each addition until only a few streaks of meringue remain (err on the side of mixing slightly less rather than more to keep the batter billowy).
  • Scrape batter into prepared baking sheet and, using a small offset spatula, gently spread to edges of pan, smoothing surface. Bake cake until top springs back when lightly pressed, 18-20 minutes (cake may start to shrink from sides of pan). Let cake cool in pan, 30-40 minutes.
  • Using an electric mixer on medium-high speed, beat 2 cups heavy cream, 3 Tbsp. granulated sugar, 2 Tbsp. instant vanilla pudding mix, 1 tsp. Diamond Crystal or ½ tsp. Morton kosher salt, and 1 tsp. vanilla bean paste or extract in a large bowl until medium-firm peaks form, about 4 minutes. (Or, use a stand mixer fitted with the whisk attachment, about 1 minute.)
  • Run a small offset spatula along edges of pan to release cake from sides. Place a wire rack (same size as cake and rimmed baking sheet) on top of cake and flip over to invert cake onto it; remove baking sheet. Carefully peel away parchment paper (start from a long edge where it might be embedded in the cake and pull gently to ensure you don't tear cake); discard. Place a clean sheet of parchment on top of cake and flip cake over so wire rack is now on top; remove wire rack.
  • Dollop filling over surface of cake. Using spatula, smooth cream evenly over cake, working all the way to the edges. Starting from a short end and using parchment as a guide, roll up cake. Transfer cake, seam side down, to a platter and chill until filling is set, at least 30 minutes and up to 4 hours.
  • Using a serrated knife, trim ¼"-½" off both ends of cake to create clean edges; discard (or consider them a snack!). Using a small fine-mesh sieve, dust top of Swiss roll with powdered sugar. Slice with serrated knife to serve. Do ahead: Cake (without powdered sugar) can be assembled 2 days ahead. Tightly wrap and keep chilled. Dust with powdered sugar just before serving.

¼ cup (57g) plus 1¾ cups (398g) whole milk
2½ Tbsp. cornstarch
½ cup (99g) sugar
2 oz. (56g; about ⅓ cup) dark chocolate, chopped
3 Tbsp. dark Dutch-process cocoa powder
1 tsp. vanilla extract
¾ tsp. sea salt
1½ cups (340g) Brooklyn Brewery Black Chocolate Stout, or other stout of choice
1½ cups (340g) unsalted butter, cut into ½-inch pieces
1½ cups (126g) dark Dutch-process cocoa powder
3 cups (360g) all-purpose flour
2¾ cups (544g) sugar
¾ Tbsp. baking soda
1½ tsp. salt
1 cup (227g) sour cream
3 large eggs, at room temperature
16 Tbsp. (1 cup, 8 oz.) cold unsalted butter
7 cups (795g) confectioners' sugar, plus more for thickening
¾ cup Salted Dark Chocolate Pudding
½ cup (42g) dark Dutch-process cocoa powder
¼ tsp. salt

Steps:

  • In a small bowl, whisk together the ¼ cup whole milk and the cornstarch until smooth. Set aside.
  • In a medium saucepan, combine the remaining 1¾ cups milk, sugar, dark chocolate, dark Dutch-process cocoa powder, vanilla extract and sea salt. Heat over medium-low heat, whisking, until the chocolate is melted.
  • Whisk the cornstarch mixture into the chocolate mixture until fully incorporated.
  • Reduce the heat to low, and continue to stir briskly with a wooden spoon or a heatproof spatula. The mixture will come to a simmer and will slowly begin to thicken.
  • Continue to cook for 1 to 2 minutes, or until the pudding coats the back of the spoon and slowly drips off. It will be thick and will just be starting to bubble. Remove the pudding from the heat and pour into 4 serving ramekins or bowls. Let cool.
  • Cover with plastic wrap, refrigerate the pudding until it sets, and serve.
  • Cut the cold butter into ½-inch pieces. Let it come to room temperature.
  • In the bowl of a stand mixer fitted with a paddle attachment, combine the butter, 3 cups of the confectioners' sugar, ½ cup dark Dutch-process cocoa powder, ¼ teaspoon salt, and ¾ cup Salted Dark Chocolate Pudding, and mix on low until just incorporated. Then beat on medium-high until the mixture is creamy and ingredients are incorporated, about 1 minute. Scrape down the sides of the bowl with a rubber spatula.
  • Add more confectioners' sugar, 1 cup at a time, and mix on low until the frosting is thick but spreadable. Beat for 1 minute after each addition. You may not need to add all the remaining sugar. Once you have your desired consistency, scrape down the sides of the bowl.
  • Raise the speed to medium-high, and beat for 3 to 4 minutes, or until very light and fluffy. The buttercream should be thick but spreadable. If the buttercream appears too thick, add more cream, 1 tablespoon at a time. If it appears too thin, add more confectioners' sugar, 1 heaping tablespoon at a time.
  • Preheat the oven to 350ºF. Grease two 9-inch cake pans with butter and dust with flour. Line with parchment rounds and grease the rounds.
  • In a large heavy saucepan over medium heat, bring the stout and unsalted butter to a simmer. (You can also melt the butter in your oven or in a large, microwave-safe bowl in a microwave oven and then whisk in the beer.) Remove the stout-butter mixture from the heat, add the Dutch-process cocoa powder and whisk until the mixture is smooth. Let cool for 5 minutes.
  • While the stout-butter mixture cools, in a large bowl, whisk together the flour, sugar, baking soda and salt.
  • In a separate large bowl, whisk together the sour cream and eggs.
  • Add the stout-butter mixture to the egg mixture and whisk to combine. Then add the flour mixture, and combine with a rubber spatula until all the ingredients are incorporated and the batter is smooth, with no lumps. Be sure to scrape the bottom of the bowl to incorporate any dry flour bits.
  • Divide the batter equally between the prepared cake pans. Bake for 35 to 40 minutes, or until a toothpick inserted in the center of each layer comes out clean. Transfer to a rack to cool.
  • Frost the cake with the Dark Chocolate Pudding Buttercream.

FLUFFY CHIFFON CAKE

You can think of the chiffon cake as angel food cake's even fluffier cousin. This is the recipe from Tartine Bakery in San Francisco.

Yield Makes 1 cake

Number Of Ingredients 11

2¼ cups (315 g) all-purpose flour
2 tsp. baking powder
1½ cups (300 g) sugar
¾ tsp. salt
½ cup vegetable oil, such as safflower or sunflower
6 large egg yolks
¾ cup water
2 tsp. vanilla extract
1½ tsp. lemon zest, grated
10 large egg whites
¼ tsp. cream of tartar or lemon juice

Steps:

  • Preheat the oven to 325°F. Line the bottom of a 10" springform pan with 3" sides with parchment paper cut to fit exactly. Do not grease the sides of the pan.
  • Sift together the flour and baking powder into a large mixing bowl. Add 1¼ cups of the sugar and the salt and whisk to combine. In a small bowl, whisk together the oil, egg yolks, water, vanilla, and lemon zest. Make a well in the flour, add the yolk mixture, and then whisk thoroughly and quickly for about 1 minute until very smooth.
  • Place the egg whites in a large mixing bowl. Using a mixer fitted with the whisk attachment, beat on medium speed until frothy. Add the cream of tartar or lemon juice and beat on medium-high speed until the whites hold soft peaks. Slowly add the remaining ¼ cup sugar and beat on medium-high speed until the whites hold firm, shiny peaks. Using a rubber spatula, scoop about one third of the whites onto the yolk mixture and fold in gently to lighten the batter. Gently fold in the remaining whites just until combined.
  • Pour the batter into the prepared pan, smoothing the top with an offset spatula if necessary. Bake until a cake tester inserted into the center comes out clean, 45-55 minutes. Let cool in the pan (the sides of the pan will help hold the structure of the cake as it cools) on a wire rack. To unmold, run a small, thin knife around the sides of the pan to loosen the cake and then release and lift off the pan sides. Invert the cake, peel off the parchment, and then use as directed in individual recipes. The cake will keep, well wrapped, in the refrigerator for up to 4 days or in the freezer for up to 1 month.

HOMEMADE WINE VINEGAR



Homemade Wine Vinegar image

This universal homemade vinegar recipe works with any type of wine-red, white, rosé, or a mix if you find yourself with open bottles after a party.

Number Of Ingredients 4

1 bottle (750 mL) wine
½ tsp. (2.5 mL) 3% hydrogen peroxide (if the wine contains sulfites)
1 cup (237 mL) unchlorinated water
½ cup (118 mL) raw, unfiltered, unpasteurized vinegar, or a vinegar mother

Steps:

  • Pour the wine into a sanitized widemouthed jar. If the wine contains sulfites, stir in the hydrogen peroxide to neutralize them. Let sit for a minute. Stir in the water with a wooden spoon.
  • Pour in the raw vinegar. Stir well; a little oxygen is good for getting the process going.
  • Cover the jar with a piece of unbleached cotton (butter muslin or tightly woven cheesecloth), or a basket-style paper coffee filter. Secure with a string, a rubber band, or a threaded metal canning band. This is to keep out fruit flies.
  • Place on your counter or in another spot that is 75° to 86°F.
  • Check the vinegar in a month, when you should have nice acidity. However, it may take another month or two for the acidity to fully develop. Test the pH: It should be 4.0 or below.
  • Bottle half the vinegar and replace with the same amount of wine for another batch. Or bottle it all and store the mother for another batch or to share with a friend. Use immediately, or age to allow it to mellow and flavors to develop.

ZUCCHINI AND WHITE BEAN CAESAR

½ small loaf crusty bread (such as country-style, ciabatta, or baguette)
⅔ cup extra-virgin olive oil, divided; plus more for serving (optional)
½ tsp. Diamond Crystal or ¼ tsp. Morton kosher salt, divided, plus more
Freshly ground black pepper
2 large egg yolks*
2 large garlic cloves, finely grated
1 tsp. finely grated lemon zest, plus more for serving
¼ cup fresh lemon juice
3 tsp. Dijon mustard
3 oil-packed anchovy fillets
1½ oz. Parmesan, finely grated, plus more for serving
1½ lb. zucchini (about 6 medium), shaved into ribbons lengthwise with a vegetable peeler
1 15.5-oz. can white beans (such as cannellini, butter, or navy), rinsed, patted dry
Lemon wedges (for serving)

Steps:

  • Tear ½ small loaf crusty bread (such as country-style, ciabatta, or baguette) into 1" pieces (you should have about 4 cups). Heat ⅓ cup extra-virgin olive oil in a large skillet over medium-high. Add bread and season with kosher salt and freshly ground black pepper. Cook, tossing occasionally, until golden brown and crisp on all sides, about 5 minutes. Transfer to a plate.
  • Whisk together 2 large egg yolks*, 2 large garlic cloves, finely grated, 1 tsp. finely grated lemon zest, ¼ cup fresh lemon juice, and 3 tsp. Dijon mustard in a medium bowl. Whisking constantly, gradually pour in ⅓ cup extra-virgin olive oil, starting drop by drop and increasing to a steady stream. (To keep the bowl from sliding as you whisk, set inside a snugly fitting saucepan or wrap a damp kitchen towel around base of bowl to stabilize.) Whisk until mixture is emulsified and achieves a consistency between heavy cream and mayonnaise. (Alternatively, you can use a food processor, first pulsing egg yolk mixture together, then running the motor while you gradually stream in oil.)
  • Finely chop 3 oil-packed anchovy fillets, then sprinkle with salt and use the side of your knife to mash into a paste; scrape into egg yolk mixture. Add 1½ oz. Parmesan, finely grated, ½ tsp. Diamond Crystal or ¼ tsp. kosher salt, and lots of pepper; whisk to combine. Taste dressing and season with more salt and pepper if needed (dressing should be pretty assertive-we're about to add lots of bread, zucchini, and beans).
  • Place croutons, 1½ lb. zucchini (about 6 medium), shaved into ribbons lengthwise with a vegetable peeler, and one 15.5-oz. can white beans (such as cannellini, butter, or navy), rinsed, patted dry, in a large bowl; drizzle with dressing and toss gently to coat.
  • Divide salad among plates and top with more Parmesan and lemon zest, season with more pepper, and drizzle with more oil if desired. Serve with lemon wedges for squeezing over. *Raw egg is not recommended for infants, the elderly, pregnant women, people with weakened immune systems...or people who don't like raw eggs. Just use coddled egg yolks instead if needed.
