Epcot's Canadian Cheddar Cheese Soup image

1/2 Pound Bacon, diced
1 Medium Red Onion, diced
3 Celery Stalks, diced
4 Tablespoons Butter
1 Cup Flour
3 1/2 Cups Chicken Broth
4 Cups Milk
1 Pound Sharp White Cheddar Cheese, grated
1 Tablespoon Tobasco Sauce
1 Tablespoon Worcestershire Sauce
1/2 Cup Canadian golden lager style beer, if desired
Salt, to taste
Pepper, to taste

Steps:

  • In a large stock pot, add the bacon pieces and cook for about 5 minutes.
  • Add the onion, celery, and butter. Cook for another 5 minutes, stirring frequently.
  • Sprinkle the flour over the mixture and continue stirring over medium heat for another 3 or 4 minutes.
  • Slowly whisk in the chicken broth and bring the soup to a boil. Lower the heat and allow it to simmer for about 15 minutes.
  • Add the milk and continue to simmer, without letting it come to a boil for another 10-15 minutes.
  • Remove the soup from heat and add the Tobasco, Worcestershire, and Sharp White Cheddar. Stir until the cheese is melted. (If you want a smoother soup, use an immersion blender at this point)
  • Mix in your desired amount of salt and pepper and serve the soup hot, garnished with chopped green onions.

Canadian cheddar cheese soup with bacon and beer inspired by the famous Le Cellier restaurant in Epcot's Canada pavilion!

6 oz bacon (6 slices of regular cut bacon)
1/2 medium onion, diced (about 1/2 up)
1 large celery rib, diced (about 1/2 cup)
2 tablespoons butter
1/4 cup all purpose flour
1 1/2 cups chicken stock
1 1/2 cups milk (2% or whole recommended)
8 oz. sharp white cheddar cheese
1 teaspoon Tabasco
1 teaspoon Worcestershire sauce
1/2 cup room temp lager beer
salt & fresh ground pepper to taste
chopped chives (or scallions) for garnish if desired

Steps:

  • 1. Cut bacon into 1/4 inch pieces. This is much easier if the bacon is very cold or even a bit frozen. 2. Cook bacon is a pot or Dutch oven over medium heat until lightly browned, about 5 minutes. 3. Add onion, celery, and butter and saute for 4-5 minutes or until onion is softened. 4. Add flour and saute for a few minutes over medium heat. Whisk in chicken stock and milk. Stir consistently until you see the first bubbles forming. Turn down to low heat and simmer uncovered for about 25 minutes. 5. Remove from heat and stir in cheese, Tabasco, Worcestershire sauce, and beer. If you want a smoother texture you can use an immersion blender (I like the texture the way it is). 6. Add salt and pepper to taste and serve with chopped scallions or chives.

3/4 lb white cheddar cheese, grated
1 tablespoon hot pepper sauce
1 tablespoon Worcestershire sauce
1/4 teaspoon salt
1/8 teaspoon black pepper
1/2 cup warm beer
5 scallions, chopped

Steps:

  • In large deep pot, cook bacon over medium heat for 5 minutes, stirring, until lightly browned. Add onion, celery and butter; saute until onion has softened, about 5 minutes.
  • Add flour and cook, stirring constantly, for about 4 minutes over medium heat. Whisk in chicken broth and bring to a boil for 1 minute. Reduce heat to a simmer; cook 15 minutes, stirring occasionally.
  • Add milk; continue to simmer 15 minutes. Do not bring to a boil.
  • Remove from heat; stir in cheese, hot pepper sauce, Worcestershire sauce, salt and pepper until cheese is melted and the soup is smooth. Stir in warm beer; if soup is too thick, add some warm milk.
  • Serve soup hot, garnished with scallions.

When we ate at the Le Cellier restaurant in the Canadian pavilion at Epcot, we ordered this soup and it was fantastic! I looked at many websites and finally found the recipe for it on a site that has many of Disney's authentic recipes. I made it and it tastes exactly like the soup we had at Walt Disney World -- terrific!

1/2 lb bacon, cut into 1/2-inch pieces
3 celery ribs, cut into 1/4-inch pieces
3 cups whole milk
1 medium red onion, cut into 1/4-inch pieces
2 tablespoons butter
3 cups water
3 dashes Tabasco sauce
1 cup flour
1/2 cup beer, regular or non-alcoholic
3/4 lb good quality white cheddar cheese, freshly grated
salt and pepper

Steps:

  • In a soup pot, start to brown the bacon over medium heat. When the bacon is starting to get crisp, add the onions, celery and butter. Cook until the onion is translucent.
  • Add the flour and incorporate with the butter. Cook for 4 minutes, constantly stirring. Add the water and whisk. Make sure there are no lumps.
  • Bring to a boil, then reduce to a simmer and cook for 15 minutes, stirring every couple of minutes. Add the milk and continue to simmer for 15 minutes. Do not boil after you add the milk.
  • After the last 15 minutes, turn off the heat and stir in the cheese and then the beer, stirring gently until the cheese is melted. Take off the heat, add tabasco sauce and season with salt and pepper. Garnish with chives or finely chopped green onions, if desired.
  • (If the soup is too thick, you can thin it out with some milk.).
