ENGLISH ONION SOUP WITH SAGE & CHEDDAR



English onion soup with sage & Cheddar image

This humble onion soup does it for me every time - I love the lid-like, giant crunchy croutons

6 cloves of garlic
5 red onions
3 large white onions
3 banana shallots
300 g leeks
1 good knob of unsalted butter
olive oil
1 good handful of fresh sage leaves
2 litres hot organic beef, vegetable or chicken stock
8 slices of good-quality stale bread, 2cm thick
200 g Cheddar cheese
Worcestershire sauce

Steps:

  • Peel and crush the garlic, peel and slice the onions and shallots. Trim, wash and slice the leeks.
  • Put the butter, 2 lugs of olive oil, the sage leaves (reserving 8 for later) and the crushed garlic into a thick-bottomed, non-stick pan. Stir everything round and add the onions, shallots and leeks. Season with sea salt and black pepper.
  • Place a lid on the pan, leaving it slightly ajar, and cook slowly for 50 minutes, without colouring the vegetables too much. Remove the lid for the last 20 minutes - your onions will become soft and golden. Stir occasionally so that nothing catches on the bottom. Having the patience to cook the onions slowly, slowly, gives you an incredible sweetness and an awesome flavour, so don't be tempted to speed this bit up.
  • When your onions and leeks are lovely and silky, add the stock. Bring to the boil, turn the heat down and simmer for 10 to 15 minutes. You can skim any fat off the surface if you like, but I prefer to leave it because it adds good flavour.
  • Preheat the oven or grill to maximum.
  • Toast your bread on both sides. Correct the seasoning of the soup. When it's perfect, ladle it into individual heatproof serving bowls and place them on a baking tray.
  • Tear toasted bread over each bowl to fit it like a lid. Feel free to push and dunk the bread into the soup a bit. Grate over some of the Cheddar and drizzle over a little Worcestershire sauce.
  • Dress your reserved sage leaves with some olive oil and place one on top of each slice of bread. Put the baking tray into the preheated oven or under the grill to melt the cheese until bubbling and golden. Keep an eye on it and make sure it doesn't burn! When the cheese is bubbling, very carefully lift out the tray and carry it to the table. Enjoy.

There's something so incredibly humble about onion soup. It's absolutely one of my favorites but unfortunately I only ever get to make it in the restaurant or for myself as the missus thinks she's allergic to onions. (She's not, because I whiz them up into loads of dishes without her knowing!) If you have the opportunity, get hold of as many different types of onion for this soup as you can - you need about 2 pounds in total. Sweat them gently and you'll be amazed at all the flavors going on.

Good knob of butter
Olive oil
Handful fresh sage leaves, 8 leaves reserved for garnish
6 cloves garlic, peeled and crushed
5 red onions, peeled and sliced

Sea salt and freshly ground black pepper

  • Put the butter, 2 glugs of olive oil, the sage and garlic into a heavy bottomed, nonstick pan. Stir everything round and add the onions, shallots and leeks. Season with salt and freshly ground black pepper. Place a lid on the pan, leaving it slightly ajar, and cook slowly for 50 minutes, without coloring the vegetables too much. Remove the lid for the last 20 minutes, the onions will become soft and golden. Stir occasionally so that nothing catches on the bottom. Having the patience to cook the onions slowly, slowly, gives you an incredible sweetness and an awesome flavor, so don't be tempted to speed this up.

When the cheese is bubbling, very carefully lift out the baking sheet and carry it to the table. Enjoy.

Onion soup is probably my very favourite. I'm always trying new recipes to find the best that's out there. So far, I haven't found any that I like quite as much as my own. I'm hoping you will like it too. If you don't have leeks, just throw in an extra onion. Afterall....this is ONION soup! By the way....Bubba is one of my husbands many nicknames. He doesn't like onions......but we all know he gets them anyway. He just doesn't realize it. :)

1/4 cup butter
4 vidalia onions
3 garlic cloves, chopped
2 leeks, white and light green sections only thinly sliced
1/4 teaspoon salt
2 (284 ml) cans condensed beef broth
2 (284 ml) cans water
1 teaspoon fresh ground black pepper
1/2 teaspoon Tabasco sauce
2 buns, sliced, I use multi-grain
2 1/2 cups mozzarella cheese, shredded

Steps:

  • In a large saucepan, melt butter.
  • Chop one onion until fine. I generally use my mini-chopper. Cut the remaining onions in half, then slice.
  • Add garlic, leeks and all the onions and the salt to the melted butter. Saute until soft. This should take approximately 15 minutes.
  • Cover and reduce the heat. Simmer for 15 minutes.
  • Add beef broth, water, pepper and tabasco sauce. Bring just to the boil.
  • Cover, reduce heat and simmer for 30 minutes.
  • At this point, you may continue with the recipe, or cool and store in the fridge. Great for single servings!
  • To serve:.
  • Preheat oven or toaster oven (good for single servings) to the broil setting.
  • Ladle soup into an oven proof bowl. Top with a slice of the toasted bun.
  • Spoon on a few of the onions and top with a 1/4 cup shredded cheese.
  • Broil until the cheese has melted and is starting to brown.
  • Enjoy!

12 tablespoons (1 1/2 sticks) butter, divided
24 cups thinly sliced onions (about 5 3/4 pounds)
8 cups (or more) low-salt chicken broth
1 1/2 cups 1/2-inch pieces torn crustless country-style bread
16 fresh sage leaves
1 1/2 tablespoons (or more) Sherry wine vinegar
2 teaspoons finely grated lemon peel

Steps:

  • Melt 6 tablespoons butter in heavy extra-large pot over medium-high heat. Add onions; sprinkle with salt and pepper and sauté until onions begin to soften, 15 to 18 minutes. Reduce heat to medium and sauté until onions are very tender and deep golden brown, stirring often and adjusting heat as needed, 25 to 30 minutes longer. Transfer 1 1/2 cups caramelized onions to small bowl and reserve for garnish.
  • Add 8 cups broth to remaining onions in pot and bring to boil. Reduce heat and simmer 25 minutes to blend flavors. Cool slightly. Working in batches, puree soup in blender until smooth. Return to same pot and add more broth by 1/4 cupfuls to thin soup to desired consistency. Season soup to taste with salt and pepper. DO AHEAD: Can be made 1 day ahead. Cover and chill reserved caramelized onions. Cool soup slightly. Chill soup uncovered until cold, then cover and keep chilled. Rewarm caramelized onions and soup separately before continuing.
  • Melt 2 tablespoons butter in medium nonstick skillet over medium heat. Add torn bread pieces and sauté until bread pieces are crisp and golden, 5 to 6 minutes. Remove from heat and reserve.
  • Cook remaining 4 tablespoons butter in small saucepan over medium heat until golden brown, stirring occasionally, 3 to 4 minutes. Add sage leaves and cook until slightly crisp, 30 seconds to 1 minute. Transfer leaves to small plate; reserve brown butter in saucepan.
  • Stir 1 1/2 tablespoons vinegar into reserved caramelized onions, adding more vinegar by 1/2 teaspoonfuls, if desired.
  • Divide warm soup among 8 bowls. Spoon vinegar-seasoned caramelized onions atop soup in each bowl. Sprinkle each serving with croutons and fried sage leaves. Drizzle sage brown butter over each; sprinkle lightly with grated lemon peel and freshly ground black pepper and serve.
