Traditional at English Tea time - these are some of the simplest and best scones I have made. The recipe was originally from a 1987 Canadian Living Cookbook.

Number Of Ingredients 10

2 cups all-purpose flour
2 tablespoons granulated sugar
4 teaspoons baking powder
1/2 teaspoon salt
1/3 cup cold butter
1 egg
1 additional egg yolk
1/2 cup approximately half-and-half cream
1 egg white, lightly beaten (reserved from yolk used above)
granulated sugar

Steps:

  • Mix together flour, sugar, baking powder and salt.
  • Cut in butter until mixture resembles coarse crumbs.
  • In a small bowl, combine eggs, egg yolk and cream - beat with a fork until well blended.
  • Add the liquid mix all at once to the dry ingredients, stirring with a fork to make a soft, slightly sticky dough - add a little more cream if necessary.
  • Press into a ball and knead gently on a floured surface about 10 times.
  • Roll out dough to 1/2 inch thick and cut in to triangles or rounds.
  • Place on an ungreased baking sheet and brush with egg white then sprinkle lightly with sugar.
  • Bake in a pre-heated 425 degree oven for 12 - 15 minutes or until golden.
  • Now the very best part. Serve them warm with butter, raspberry or strawberry jam and to be really traditional you may also add a dollop of Devonshire cream. Whipping cream is a good substitute.

Afternoon Tea Scones image

This recipe produces a lovely, light scone, typical of those served at afternoon teas all across the UK.

Number Of Ingredients 9

2 cups (284 g) all-purpose (plain) flour
2 tsp baking powder
2 Tbsp sugar
a pinch of salt
1/3 cup (70 g) salted butter (cold)
one egg, room temperature
1/2 cup (118 ml) + 1 tbsp buttermilk
(1/4 cup (40 g) raisins or currants, optional)
Cream and jam to serve

Steps:

  • Heat oven to 400ºF (205ºC)
  • In a bowl, place the dry ingredients. Mix lightly to combine.
  • In a measuring jug, put the buttermilk (including the 1 tbsp.) Beat the egg in a small bowl, then pour into the buttermilk. Stir to combine.
  • Place the butter in the center of the dry ingredients and cut with a knife into about 16 pieces. Next, take another knife, or pastry blender and cut/mix the butter into the flour until resembles coarse crumbs, finishing off the pastry using your hands once the pieces have become quite small.
  • Make a well in the center of the dry ingredients and pour in the egg and buttermilk, (reserving one tablespoon of liquid in the jug).
  • Mix gently with a wooden spoon until a dough forms, just about 10 seconds. (If you are adding dried fruit or any additions, add it now.)
  • Place dough onto a clean, well-floured surface. Form into a ball, then pat out to approximately 3/4″ in thickness. Do not knead the dough or it will make the scones tough. With sharp cutters, cut out scones and place on silicone baking mat or parchment lined baking tray. Gently knead scraps together and repeat until dough is finished, (make a "runt" with the remaining little bit of dough).
  • Using a pastry brush, brush the tops of the scones with the remaining egg/buttermilk mixture.
  • Place in middle of preheated oven for about 9 minutes, then turn tray 180º and continue to bake for another 9 minutes or until scones look golden brown on top.
  • Remove from oven, and place in a towel lined basket, or on a cooling rack if you wish to serve them on a plate. Serve with butter, or real cream and jam.

2C sifted all-purpose flour
2T sugar
3t baking powder
1/2t salt
5T butter
1 egg, beaten
3/4 C milk

Steps:

  • 1. Preheat oven to 425°F 2. Sift together flour, sugar, baking powder, salt 3. Chap in the cutter with a pastry cutter (or two knives) until the flour-coated pieces of butter are the size of coarse cornmeal. 4. Add the egg and about 3/4 of the milk. Stir quickly and lightly, only until no flour shows. Add more milk if needed to make a soft dough. 5. Turn the dough out on a floured surface and knead gently about 15 times. Cut the dough in half. Shape each half into a ball, press each down into a round about 1/2" thick and cut into 8 wedges like a pie. 6. Place the wedges on a greased cookie sheet without allowing the sides to touch. Glaze, if desired, with lightly beaten egg. 7. Bake until deep golden brown, about 12 minutes.

CLASSIC SCONES WITH JAM & CLOTTED CREAM

350g self-raising flour, plus more for dusting
1 tsp baking powder
85g butter, cut into cubes
3 tbsp caster sugar
175ml milk
1 tsp vanilla extract
squeeze lemon juice (see tips below)
beaten egg, to glaze
jam and clotted cream, to serve

Steps:

  • Heat the oven to 220C/200C fan/gas 7. Tip the self-raising flour into a large bowl with ¼ tsp salt and the baking powder, then mix.
  • Add the butter, then rub in with your fingers until the mix looks like fine crumbs. Stir in the caster sugar.
  • Put the milk into a jug and heat in the microwave for about 30 secs until warm, but not hot. Add the vanilla extract and a squeeze of lemon juice, then set aside for a moment.
  • Put a baking tray in the oven. Make a well in the dry mix, then add the liquid and combine it quickly with a cutlery knife - it will seem pretty wet at first.
  • Scatter some flour onto the work surface and tip the dough out. Dredge the dough and your hands with a little more flour, then fold the dough over 2-3 times until it's a little smoother. Pat into a round about 4cm deep. Take a 5cm cutter (smooth-edged cutters tend to cut more cleanly, giving a better rise) and dip it into some flour. Plunge into the dough, then repeat until you have four scones. You may need to press what's left of the dough back into a round to cut out another four.
  • Brush the tops with a beaten egg, then carefully arrange on the hot baking tray. Bake for 10 mins until risen and golden on the top. Eat just warm or cold on the day of baking, generously topped with jam and clotted cream. If freezing, freeze once cool. Defrost, then put in a low oven (about 160C/140C fan/gas 3) for a few minutes to refresh.
