These shortbread cookies are the Christmas cookies mom has made every holiday season. They're whipped shortbread cookies that are so soft they literally melt in your mouth. You will LOVE them!

3 cups all-purpose flour
2 cups salted butter (at room temperature - see notes)
1 cup powdered sugar
½ cup cornstarch
1 teaspoon vanilla
Colored candied cherries or dried cranberries (for garnish)

Steps:

  • Preheat your oven to 350 degrees. Position your oven rack in the middle of your oven.

Shortbread Sugar Cookies With Icing image

I love shortbread and I like sugar cookies but a cookie that is both...that's heaven! This is the kind of icing that "dries" and makes almost like a candy shell on the cookie. When the icing is dry, store in an airtight container for up to a week. You can also keep the unbaked dough in the fridge for up to a week...but who can resist making these that long? You have to use butter to get the right taste. Sometimes just for a different flavor I add a teaspoon or two of almond extract.

2 cups unsalted butter, at room temperature
1 1/2 cups powdered sugar
2 tablespoons vanilla extract
4 cups flour
2 teaspoons baking powder
2 cups powdered sugar
1/4 cup milk
1 teaspoon vanilla
food coloring, if desired

Steps:

  • Line cookie sheets with parchment paper or generously spray with non stick spray.
  • Using a hand mixer or stand mixer, mix butter and sugar until fluffy. Add vanilla and beat until combined.
  • In a separate bowl, combine flour and baking powder. Add slowly to butter mixture on low speed. Do not overbeat! Only mix until flour is incorporated.
  • Form dough into big ball and place in plastic wrap. Refrigerate for 30 minutes.
  • Preheat your oven to 350 degrees. Roll out chilled dough to 1/4 inch thickness. Cut with cookie cutter or you can use a pizza cutter and make squares or rectangles. Another option is to roll into a log and cut 1/4 inch thick slices.
  • Using a spatula, transfer to cookie sheets leaving about 1/2 inch between cookies.
  • Bake 10-12 minutes or until lightly browned around the edges. Cool 10 minutes on cookie sheet and then transfer to cooling rack.
  • When cookies are cool, whisk together the icing ingredients and either dip the cookies or spread on cookies. You can smooth the icing with the back of a spoon.
  • These are so good -- you should really double the recipe!

Emily brought these to a Christmas cookie exchange one year and everyone loved them. I have made these many times and they are on my favorite cookie list.

5/8 cup granulated sugar
1 cup unsalted butter (2 sticks)
2 cups all-purpose flour
1/4 cup butter (1/2 stick)
3/4 cup powdered sugar
1 teaspoon vanilla extract
food coloring

Steps:

  • Cream the butter and sugar until smooth.
  • Add flour and mix to combine well.
  • Cover and chill until firm enough to roll out.
  • Roll out on a lightly floured cutting board and cut out using lightly floured cookie cutters.
  • Bake at 350°F on baking sheets until pale golden in color, about 10 minutes.
  • Remove to racks to cool completely.
  • Mix icing together and tint as desired and chill slightly.
  • When cookies are cooled, ice cookies as desired.

A friend gave me this recipe after making them with my daughter for a church function. The best sugar cookies I have ever eaten and easy to make! These are a fluffy and somewhat chewy recipe that is good in high altitude.

1 cup sugar
1/2 cup butter
1 cup sour cream
1 egg
1 teaspoon vanilla
3 cups flour
1 teaspoon baking soda
1/2 teaspoon salt

Steps:

  • In large bowl, cream together sugar and butter. When creamed well, add sour cream and cream for an additional 2 minutes. Add egg and vanilla and combine. Sift flour, baking soda and salt and add it to the wet ingredients and combine well. Refrigerate for several hours. Roll out dough so that it is fairly thick. Bake at 375 degrees for 10 minutes (don't let them brown).

  • Beat butter and sugar with an electric mixer on medium speed until well combined, about 1 minute. Add vanilla, and beat just to combine, about 15 seconds. Whisk together flour and salt in a medium bowl. With mixer remaining on low speed, add flour mixture to butter mixture slowly, stopping mixer just before all flour is incorporated. Turn dough out onto a large sheet of parchment paper, and work gently by hand to pull mixture together to form a 1/2-inch-thick disk. Dough will be a little sandy. Fold parchment over disk, wrap in plastic wrap, and chill 1 hour.
  • Preheat oven to 350ºF. Turn dough out onto a lightly floured surface, and roll dough to about 1/4-inch thickness. Using cookie cutters, cut out cookies, and place on 2 parchment paper-lined baking sheets.
  • Bake in preheated oven until cookies are just beginning to brown around edges, about 13 minutes, rotating pans top to bottom halfway through baking. Remove pans to wire racks, and cool 5 minutes. Remove cookies with a spatula to wire racks, and let cool completely, about 30 minutes. Spread Snowy White Icing on cooled cookies, and decorate with sprinkles as desired.
