CREAMED SPINACH

2 pounds fresh spinach, washed and tough stems removed
2 tablespoons unsalted butter
1/2 cup finely chopped shallots
1 teaspoon minced garlic
3/4 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/4 teaspoon nutmeg
1/2 cup heavy cream

Steps:

  • Bring a pot of salted water to a boil over high heat. Add the spinach and cook for 2 minutes. Drain in a fine mesh strainer, pressing with a large spoon to release as much water as possible. Finely chop and set aside.
  • Melt the butter in medium saute pan over medium-high heat. Add the shallots and garlic and cook, stirring, until soft and fragrant, about 2 minutes. Add the spinach and cook, stirring, just until the liquid is released. Add the cream, salt, pepper, and nutmeg, and cook until the cream is reduced by half, about 4 minutes. Remove from the heat and serve immediately.

ARTICHOKE AND SPINACH DIP

1/4 cup plus 2 tablespoons vegetable oil
1/4 cup all-purpose flour
2 cups milk
Salt
Cayenne pepper
1/2 cup grated Parmesan (about 2 ounces)
1/2 cup grated Monterey Jack (about 2 ounces)
1 cup chopped onions
1 (10-ounce) bag fresh spinach, stemmed, rinsed and chopped
2 tablespoons chopped garlic
2 (15-ounce) cans artichoke hearts, drained and julienned
10 to 15 small corn tortillas, cut into fourths
Vegetable oil, for frying

Steps:

  • Preheat the oven to 400 degrees F. Preheat the oil in a deep fryer.
  • Combine 1/4 cup of the vegetable oil and flour in a saucepan over medium heat. Stir the mixture constantly 5 to 6 minutes for a blond roux. Whisk in the milk and bring the liquid up to a boil. Season the liquid with salt and cayenne. Simmer the liquid for 5 to 6 minutes, or until the liquid is thick and coats the back of a spoon. Remove the sauce from the heat and stir in the cheeses. Set the sauce aside.
  • In a saute pan, heat the remaining 2 tablespoons vegetable oil. When the oil is hot, add the onions and saute for 2 minutes. Stir in handfuls of spinach at a time, until all the spinach is incorporated. Add the garlic and artichoke and saute for 2 minutes. Season the vegetables with salt and cayenne. Remove the vegetables from the heat and turn into a mixing bowl. Fold the cheese sauce into the vegetables. Turn the mixture into a baking pan. Bake the dip for 10 to 15 minutes, or until the top is golden brown.
  • Fry the tortilla chips, batches at a time, for about 2 to 3 minutes or until the chips are golden and crispy. Remove from the oil and drain on a paper-lined plate. Season with salt and pepper. Serve the chips with the dip.

8 ounces andouille sausage, crumbled into small pieces
2 tablespoons minced shallots
1 teaspoon minced garlic
1 cup bread crumbs
1 tablespoon Essence
24 large shucked oysters
1 cup flour
2 eggs, slightly beaten
4 cups assorted baby greens (arugula, red and green oak, red and green leaf, radicchio, lola rosa)
Emeril's Spinach Coulis
8 (12-inch) bread sticks
4 ounces block of Parmigiano-Reggiano cheese
Black pepper

Steps:

  • Preheat the fryer.
  • For the oysters: In a saute pan, render the andouille for 1 to 2 minutes. Add the shallots and garlic and continue rendering for 1 minute. Remove from the stove and cool slightly. In a food processor, add the andouille, bread crumbs, and Essence, blend until fully incorporated. Dredge each oyster in the flour. Dip the oyster into the beaten eggs, letting any excess drip off. Dredge the oysters in the andouille crust, coating each side completely. Place the oysters in the fryer and fry for 2 to 3 minutes or until golden brown and their edges start to curl. Remove from the fryer and place on a paper-lined plate. Season with Essence.
  • In a mixing bowl, toss the greens with the Spinach Coulis. Season with additional salt and pepper if needed. Mound the greens in the center of the plate. Dot the rim with any remaining dressing. Arrange the oysters around the greens. Garnish with the shaved Parmigiano-Reggiano, bread sticks, and black pepper.

1 tablespoon unsalted butter
1/4 cup chopped shallots
1/4 cup Herbsaint or other anise-flavored liqueur
1/4 cup chopped green onions (scallions), green parts only
1 tablespoon chopped fresh parsley leaves
One 10-ounce bag fresh spinach, thoroughly washed and trimmed of tough stems
3/4 cup heavy cream
1/2 teaspoon salt
1/8 teaspoon freshly ground white pepper

Steps:

  • Heat the butter in a 10-inch saute pan over medium heat. Add the shallots and cook, stirring, until soft and lightly golden, about 2 minutes. Carefully add the Herbsaint so that it does not flame. Add the green onions, parsley, and spinach and cook until the spinach is slightly wilted, about 1 minute. Add the cream and simmer for 2 minutes, stirring occasionally.
  • Pour the mixture into a food processor or blender and process until the mixture is smooth, about 1 minute. Add the salt and pepper and pulse two or three times to blend, and serve immediately.

SPINACH COULIS

1/2 pound spinach leaves, well washed and spun dry
1/4 cup heavy cream
3 tablespoons roughly chopped fresh chives
1 tablespoon roughly chopped fresh tarragon

Steps:

  • In a small saucepan over medium-high heat, combine spinach and 1 tablespoon water. Cook until just wilted. Add cream, chives, and tarragon. Bring to a boil. Transfer to a blender, and puree until very smooth. Add salt to taste.

3 tablespoons butter
1 cup minced onion
salt
fresh ground black pepper
3 lbs fresh spinach, washed, stemmed and finely chopped
2 tablespoons chopped garlic
2 cups heavy cream
12 ounces grated sharp cheddar cheese

Steps:

  • Preheat the oven to 375 degrees.
  • Lightly grease a 6 cup casserole.
  • In a large saute pan, melt the remaining butter.
  • Add the onions and season with salt and pepper.
  • Saute for about 2 minutes, or until the onions are soft.
  • Add the spinach.
  • Season with salt and pepper.
  • Saute for 3 to 4 minutes.
  • Add the garlic and cream.
  • Mix well.
  • Season the mixture with salt and pepper.
  • Bring the liquid to a boil and reduce to a simmer.
  • Simmer the mixture for 6 minutes.
  • Remove the pan from the heat and turn into the prepared pan.
  • Add 1/2 of cheese to casserole and stir.
  • Sprinkle the top with the remainder of the grated cheese and place in the oven.
  • Bake for about 4 to 6 minutes or until the cheese is slightly brown and bubbly.

EMERIL'S SPINACH, ORANGE AND CANDIED ALMOND SALAD



Emeril's Spinach, Orange and Candied Almond Salad image

My husband and I caught the Emeril Live cooking show on Food Network over at Mom's last night and I wanted to find this recipe before it was lost forever. I haven't tested it yet, but I KNOW it's good! This salad adds a splash of color to your dining table!

1/4 cup sugar, plus
2 tablespoons sugar
1 tablespoon water
1/2 cup almonds, sliced
4 small oranges
1/4 cup champagne or 1/4 cup white wine vinegar
1/4 cup extra virgin olive oil
1/2 teaspoon orange zest
1/4 teaspoon salt, to taste
1/8 teaspoon cayenne pepper
6 cups fresh Baby Spinach, washed and dried
1 cup celery, thinly sliced
1/2 cup red onion, thinkly sliced and cut into crescents
freshly ground cracked black pepper

Steps:

  • Lightly grease a 10" square of parchment paper with butter or vegetable oil and set aside.
  • Use a salad spinner to rinse the baby spinach thoroughy. Remove as much moisture as possible from the spinach or your salad will be soggy. Set aside to drain.
  • SIMPLE SYRUP: In a small saucepan combine 3 tablespoons of sugar and 1 tablespoon of water over medium-high heat. Swirl the mixture occasionally until the sugar turns a golden amber color*. This should take about 3-4 minutes.
  • Add the almonds and stir to coat. Continue cooking until the almonds are fragrant and golden brown, about 1 minute. *Be careful not to burn the sugar/nut mixture or yourself! Transfer nuts to parchment paper, using a spatula to spread into a thin layer, and set aside to cool completely.
  • With a sharp knife, peel the orange, remove the bitter white pith and cut the fruit into segments. (Use a small bowl to catch the orange juice that drips.) Reserve the segments in a separate bowl. Reserve the orange juice.
  • SALAD DRESSING: Combine 1/4 cup of the reserved fresh orange juice, remaining 3 tablespoons sugar, the Champagne or white vinegar, olive oil, fresh orange zest, 1/4 teaspoon salt, and the cayenne in a mixing bowl and whisk to blend. Transfer the dressing to a non-reactive container with a lid and refrigerate until ready to eat.
  • Put the fresh spinach in a large serving bowl, then top with the orange segments, celery, and red onions. Cover with plastic wrap and refrigerate until ready to serve.
  • When ready to serve, break the caramelized almonds (at this point the almonds have turned to "brittle") into bite-size pieces and scatter over the top of the salad. Drizzle the dressing over the salad and season with salt and black pepper, to taste. Toss to coat evenly and serve immediately.
