WAYNE'S FAMOUS BEEF RIBS
Delicious, fall off the bone Beef Ribs with a tangy, sweet sauce, smoked on the barbecue, this is my Husband's much sought after recipe for Beef Ribs.

Steps:
- Place ribs in a large pot of water and simmer covered for approx 3 hours or until tender.
- These ribs will be smoked on the grill, so you will need to soak approximately 1/2 cup of oak or wood chips in water now, until you are ready to grill.
- Mix sauce with brown sugar, molasses and curry powder. Remove ribs from pot and baste with sauce.
- Pre-heat barbecue grill to medium-low and add oak chips to coal, or under grill, and place ribs on grill.
- Grill approximately 15 minutes per side with lid down to smoke.
- Baste ribs periodically with more sauce while grilling.
- Enjoy the most succulent beef ribs you have ever had!

SHORT RIBS OF BEEF
Steps:
- Preheat oven to 325 degrees F. In a large ovenproof saute pan or roasting pan, heat the olive oil over medium-high heat.
- Sprinkle the short ribs on all sides with the salt, pepper, garlic salt and seasoned salt. Pat the seasonings into the meat. Dredge the short ribs in the flour and pat off any excess flour.
- Place the short ribs in the pan and sear until browned on both sides, 2 to 3 minutes. Add the garlic, carrots, celery and onions and saute for 3 minutes. Add the wine and simmer for 5 minutes. Stir in the chicken stock, veal stock, water, undrained tomatoes and Worcestershire sauce. Bring to a simmer. Cover and place in the oven. Roast for 2 hours. Then add the potatoes, cover and roast for an additional 30 minutes.
- Be sure to occasionally check the liquid in the pan to make sure there is enough to keep the meat moist and simmering. Add more stock if necessary.
- Serve over Three Cheese Polenta.
- In a large saucepan combine water, polenta and 1/2 teaspoon salt. Stir over high heat until mixture boils; reduce heat to medium-low. Simmer polenta for 25 to 30 minutes or until smooth, whisking occasionally to ensure a smooth consistency. Remove from heat and stir in the cheeses and butter. Add salt and pepper to taste. Set aside and keep warm.
BBQ BEEF RIBS

- Prepare the grill for indirect heat using hickory and charcoal and heat to 250 degrees F.
- Place the ribs on a clean cutting board and pull off the membrane, the thin fatty skin that lines the underside of the ribs. Trim the ribs of excess fat and meat.
- For the rub: Whisk together 2 tablespoons salt, brown sugar, paprika, chile powder, cumin and pepper. Rub the beef ribs with the seasoning and place on a sheet tray, cover with plastic wrap, and if time, let marinate in the refrigerator for 8 hours or overnight.
- For the glaze: Add the maple syrup, apple juice, brown sugar, vinegar, mustard, chile powder, cayenne, salt and pepper to a medium saucepan and bring to a simmer. Cook until syrupy, about 8 minutes, stirring with a wooden spoon on occasion.
- Remove the ribs from the refrigerator. Place the ribs meatier-side-down on the grill away from the coals. Cook the beef 3 hours, adding more coals as needed. Turn and cook until the ribs "bend" and the meat easily separates from the bone using a fork, about 45 minutes more. Brush on the glaze to the ribs and cook for another 5 minutes. Remove and slice into individual ribs.
MIKE MILLS' BEEF RIBS

- Prepping the meat: There is a skin-like membrane on the back of the ribs. The easiest way to remove it is to start in the middle of the rack and work a table knife or a screwdriver underneath the skin, going all the way across and teasing it up. Slide your forefinger in there and bring your thumb across, holding the rib down and pulling the membrane straight up. It'll peel from the middle.
- Once you start cooking the ribs, you can't leave the pit or grill unattended for any more than about 20 minutes. You'll need to continually check that the temperature remains between 250 and 275 degrees F at all times in the grill. If it gets too hot, shut the top and bottom drafts to smother the fire. If some of the coals appear to be glowing red, that will cause a hot spot. Don't cook the ribs directly over the hot spot, move them to a different, cooler, part of the grill. If the temperature dips too low, move the ribs to a hot spot for a while and add some hot coals.
- Sprinkle ribs liberally with Magic Dust, coating both sides. Put them in a shallow pan or on a cookie sheet and cover them with clear plastic wrap or a lid. Refrigerate them until you're ready to use them. I recommend letting them marinate for at least 1 hour. At the restaurant we dust the ribs up to a day in advance.
- Place ribs on grill and cook for 1 1/2 to 2 hours. About 10 minutes before you remove the ribs from the grill, mop them with sauce. When you take them off the grill, mop again with sauce and sprinkle some more Magic Dust on them. Serve immediately. Serves 4 very hungry people or you can cut the rack in half to serve 6 to 8 people who have a regular appetite.
- Mix all ingredients and store in a tightly covered container. You'll want to keep some in a shaker next to the smoker, grill, or stove. Keeps indefinitely but won't last long.
- Combine the ketchup, rice vinegar, apple juice or cider, cider vinegar, brown sugar, soy sauce or Worcestershire sauce, mustard, garlic powder, white pepper, cayenne, and bacon bits in a large saucepan. Bring to a boil over medium-high heat. Stir in the apple, onion, and bell pepper. Reduce the heat and simmer, uncovered, 10 to 15 minutes or until it thickens slightly. Stir it often. Allow to cool, then pour into sterilized glass bottles. A clean glass jar that used to contain mayonnaise or juice works real well. Refrigerate for up to 2 weeks.
DOUBLE COOKED BEEF RIBS
This recipe is made for the Rib-lovers.... 2 different sauces make this an extremely tasty addition to the summer cookout.

Steps:
- Place ribs in large oven pan (cover bottom of pan w/aluminum foil).
- This recipe requires an oven AND a grill, so now would be a good time to start heating up that grill.
- Lather ribs with worcestershire, then coat top side of ribs with HALF of the tomato-based BBQ sauce (I prefer Kraft original BBQ sauce for this ingredient).
- Sprinkle with above mentioned spices, and cook in oven for 20 minute.
- on 400 degrees, TOP-SIDE up.
- After 20 minutes, remove ribs from oven, flip, and coat bottom side with the remaining tomato-based BBQ sauce, and cook for another 20 minutes, BOTTOM-SIDE up.
- Remove ribs from oven, and baste with sugar/molasses-based BBQ sauce (both sides).
- Place ribs on grill, and cook just enough to sear the meat (to give it that blackened crisp) (Be careful though, the flame is VERY ATTRACTED to the sugars in the sauce, make sure to keep an eye on it, otherwise, you'll have BLACK BURNED ribs).

HUNAN SMOKED BEEF RIBS

- To make the rub, combine all rub ingredients in a small bowl, and stir to combine evenly. Rub this mixture evenly all over the ribs using slight pressure of the hand to tear the micro fibers of the meat. Place the rubbed ribs in a large re-sealable bag and place in the refrigerator to marinate overnight.
- The next day prepare the sauce by combining the Hoisin sauce in a medium bowl; add the grated ginger, garlic, orange juice, sherry and sesame seeds.
- Strain the wood chips. Place 1 cup of dry wood chips on a large sheet of aluminum foil; mix in 2 cups of the wet until evenly distributed. Close the foil up loosely and make a sealed pouch. Pierce the pouch in several spots top and bottom. Repeat to make 3 pouches in total.
- Remove the ribs from the refrigerator and allow them to come to room temperature. Prepare barbecue by removing grates, placing a drip pan on one side of grill and place a smoke pouch on the other side. Replace the grates over the drip pan only.
- Preheat the grill for indirect cooling by leaving the 2 burners off under the drip pan and putting the heat on under the smoke pouch. Allow to heat to a temperature of 220F heat. Once smoke begins to form, lift the lid and place the ribs on the grill over the drip pan where there is no heat. Close lid and smoke for 2 1/2 hours, changing the smoke pouch when the smoke dissipates.
- After 2 1/2 hours, baste the ribs with the sauce. Close lid and continue to cook for 1 hour basting every 30 minutes. Ribs will be done when you can pull them from the bone with ease.
- Remove ribs from grill; loosely tent with foil and let rest for 20 minutes before cutting and serving. Serve with leftover Hunan sauce.

TEXAS-STYLE BEEF RIBS
From Taste of the South magazine. I really like the combination of spices and herbs in this beef rib rub. Cumin, mustard, and dark brown sugar, with smokey paprika for lots of Texas-style flavor. Cumin is included in the Mopping Sauce too.

- In a small bowl, combine salt, brown sugar, onion powder, paprika, mustard, thyme, basil, and cumin.
- Rinse ribs and pat dry. Remove thin membrane from back of ribs by piercing it with a sharp knife and pulling it off. Rub salt mixture evenly over ribs. Let stand at room temperature for 30 minutes.
- Preheat one side of grill to medium-low (250 - 300 degrees).

BBQ'D BEEF RIBS
Sometimes I just luck out and come up with a winner in my house the very first time...this was one of those times and my family has decided this should become my new BBQ sauce/marinade of choice! Thank goodness I wrote down the ingredients as I went!!! Prep time includes marinating for up to 24 hours. This freezes well and will do up to three pounds of beef ribs, so feel free to make plenty up for those cookouts this summer. It should also keep for 2 or 3 days refrigerated (remember there are no additives or preservatives).

- Run tomatoes through blender or food processor until smooth.
- Combine tomatoes and all ingredients except the beef ribs in 2 quart non-reactive pot such as stainless steel.
- NOTE: It is best to use an aluminum or copper clad pan for even heat distribution and to avoid hot spots, which will lead to sticking and possibly scorching.
- Bring tomato mixture to a boil, reduce heat and simmer until thickened, approximately 1 1/2 hours.
- Pour contents through sieve to strain out seeds and chunks (I stirred gently with a spoon to press more pulp through sieve a little more quickly).
- Allow to cool to room temperature.
- Place beef ribs in marinade and marinate for at least four hours, but over-night is better.
- If you are limited on time and have an injector, you can inject the beef ribs (if using boneless) rather than marinating.
- Place on pre-heated gas grill, or prepared charcoal grill and cook until desired doneness, basting frequently with marinade.
