- Preheat oven to 400 degrees F. Put the flour on a baking sheet and cook for about 30 to 40 minutes, stirring occasionally, until the flour is a dark nut brown.
- Meanwhile, in a large heavy skillet or Dutch oven, heat the oil with the butter over medium heat. Add the onions, pepper, celery, and garlic. Season with salt and pepper and cook until softened, about 10 minutes. Add the tomatoes, crushing them through your fingers into the pot with their juices and cook for another 5 minutes. Gradually sift the browned flour in the pot until the vegetables are coated, cook for 2 minutes more. Slowly pour in the stock and clam juice, stirring constantly. Add the okra, bay leaves, lemon juice, salt, cayenne, thyme, and crabs. Bring to a boil, lower the heat, cover, and cook for 15 minutes.
- Add the shrimp, oysters with their liquid, green onions and parsley; cook until the shrimp turn pink, about 3 minutes. Add the lump crabmeat and season the gumbo, to taste. Serve with rice.

SPAGHETTINI WITH CHOPPED SHRIMP AND SCALLOPS IN RICH BROTH

- Peel the shrimp, reserving the shells. Carefully devein the shrimp and coarsely chop. Coarsely chop the scallops and combine with the shrimp and 1/4 cup water in the bowl of a food processor fitted with the steel blade. Pulse on and off to finely chop but don't create a puree. Add another tablespoon of water if the mixture becomes sticky. Cover, and set aside in the refrigerator while you make the broth.
- Start the broth, or fumet, by heating the olive oil in a large straight-sided saute pan. Add the reserved shrimp shells, onions, garlic, and hot pepper. Saute over moderate heat for about 10 minutes until the onions have softened and the shells have turned deep pink. Add the wine and reduce until you have 1/4 to 1/3 cup left in the pan. Add 4 cups water and boil vigorously to reduce until you have about 3 cups of liquid left. Strain the fumet through a fine sieve into another large saute pan. Add the tomato and bring to a boil. Taste and add salt, if necessary. Set aside over very low heat and simmer gently while you cook the pasta.
- Bring at least 5 quarts of water to a boil in a large pot. Generously salt the water and drop in the spaghettini. Cook, stirring often, until the pasta is almost al dente, about 4 minutes. Drain the pasta and transfer to the fumet. Fold in the chopped shrimp and scallops along with the butter and parsley. Simmer just until the spaghettini is al dente and the seafood is cooked through, 1 to 2 minutes. Serve immediately.

Quick and easy recipe adapted from Kraft Food and Family magazine. The mushrooms and artichokes give this a great flavor. I made this using fetuccini.

- In large skillet on medium-high heat, add mushrooms, onion, artichokes with 1/2 cup dressing and cook for about 3 minutes until veggies beginning to soften.
- Add shrimp and parsley and cook for about 3 minutes or until shrimp turn pink and vegetables are tender, stirring frequently.
- Toss with hot cooked pasta and remaining 1/4 cup salad dressing.
- Sprinkle with cheese and parsley.

SHRIMP AND PASTA IN A TOMATO-CHILE CREAM SAUCE

Steps:
- Set a large 1-gallon stock pot of water to a boil and add the kosher salt.
- Place the linguine in the pot and stir the pot until the water returns to a boil.
- Cook the pasta until tender, but with a bit of resistance (al dente), about 12 minutes.
- Drain a reserve 1/2 cup pasta water.
- While the pasta cooks, prepare the sauce.
- Set a 12-inch saute pan over medium-high heat.
- Add the butter and olive oil to the pan.
- Once the butter has melted, season the shrimp with 1 tablespoon of the Essence and 1/4 teaspoon of the salt and add the shrimp to the pan.
- Sear the shrimp until well browned on both sides, about 2 minutes.
- Remove from the pan and set aside.
- Add the onions and jalapenos to the pan and saute until the onions are softened and lightly caramelized, about 4 to 5 minutes.
- Add the garlic to the pan and saute until fragrant, about 30 seconds.
- Add the cream, remaining 1 tablespoon of Essence, remaining 1 1/4 teaspoons of the salt and the pepper to the pan and bring to a boil.
- Cook the sauce until the cream is reduced by half, about 2 minutes.
- Return the shrimp to the pan, and add the tomatoes, linguine and the reserved cooking water to the pan and cook, tossing to incorporate for 3 to 5 minutes.
- Remove pan from the heat and add the Pepper Jack, Parmesan, parsley and basil and toss to blend.
- Serve immediately & enjoy!

- Bring a large pot of salted water to a boil and cook the linguine per box instructions.
- While the pasta is cooking, toss the shrimp with the Creole seasoning in a medium bowl. Place 4 tablespoons of the butter in a large skillet set over high heat. Add the shrimp, spreading them evenly in one layer. Cook for 2 minutes, and then turn them to the other side. Add the garlic and cook for 30 seconds. Add the wine, lemon juice, and 2 tablespoons of the remaining butter, and cook for 11 /2 minutes. Season the shrimp with salt and the black pepper.
- Drain the pasta, reserving 1 /2 cup of the cooking water. Add the pasta, reserved cooking water, crushed red pepper, and green onion tops to the sauce in the skillet. Toss until everything for about 1 minute.
- Remove the skillet from the heat, add the remaining 2 tablespoons butter and the parsley, and toss to combine.
- Serve hot.

- Bring a large 1-gallon pot of salted water to a boil, and place the pasta in the pot.
- Cook for 5 minutes and then drain; pasta will be only partially cooked.
- As the pasta cooks, set a 14-inch saute pan over medium-high heat and add the olive oil.
- Once the oil is hot, add the onions to the pan and cook until lightly caramelized and wilted, about 3 to 4 minutes.
- Add the garlic to the pan and saute until fragrant, about 30 seconds.
- Add the red pepper flakes and saute briefly before adding the tomato sauce and tomato paste.
- Cook the sauce until reduced by about half, about 5 minutes.
- Add the shrimp to the pan and cook for 2 minutes.
- Add the partially cooked pasta to the pan along with 1 cup of the pasta cooking water and continue to cook the pasta in the sauce until al dente, about 3 to 4 minutes.
- Season the pasta with the salt and garnish with the parsley. Toss to combine and serve with grated Parmesan, if desired.

We love Alfredo Sauce and also have to watch the fat content. Smart Balance Margarine makes a spread with 67% vegetable oil that you can use in cooking and that's what I used.

- Make a Bechamel Sauce by melting the margarine in a pan, adding the flour and making a smooth mixture.
- Slowly add the milk and stir constantly with a whisk until well blended and of the thickness you desire.
- Add as much Parmesan cheese as you like, we thought 3/4 Cup was enough and let it melt and blend with the Bechamel Sauce.
- Defrost the shrimp in cold water, remove the tail if necessary, and add to the Alfredo Sauce until heated.
- Do not over cook as the shrimp with toughen.
- Cook the pasta as directed on the package, mix the pasta and Alfredo Sauce and serve with garlic bread and a tossed salad.
