3 cups cooked rice
1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
1 cup shredded cheddar cheese
1 cup half-and-half cream
1/2 cup chopped onion
1 tablespoon butter
1 teaspoon salt

Steps:

  • Preheat oven to 350°. In a bowl, combine all ingredients. Transfer to a greased 1-1/2-qt. baking dish. Cover and bake 25-35 minutes or until heated through.

2 cups cooked long-grain white rice
2 tablespoons unsalted butter, melted
1/4 cup finely chopped fresh cilantro leaves
1/4 cup finely chopped flat-leaf parsley
1/2 teaspoon lime zest
1/4 cup finely grated Parmesan
Salt and freshly ground black pepper

Steps:

  • Preheat your broiler to high.
  • Heat the rice in your microwave until it's warmed through. Place the rice in a flameproof casserole or baking dish and toss with the melted butter, the chopped cilantro, parsley, lime zest and Parmesan. Place the dish under the broiler for 5 to 7 minutes, until the cheese is browned. Season with salt and pepper and serve.

I really like this tasty side dish with ham. The flavors go so well together. It's very easy to put together and kids seem to like this alot because it's creamy and cheesy.

1/2 cup chopped onion
1 tablespoon butter
2 cups cooked rice
1 (10 3/4 ounce) can cream of mushroom soup (I like it with cream of celery or cream of chicken, too)
10 ounces frozen chopped broccoli, thawed
1/2 cup cheddar cheese, shredded (I use more)

Steps:

  • Cook onions in butter over medium heat just until tender.
  • Stir in rice, soup and broccoli (I usually add about an extra 1/2 cup of cheddar in with this, too).
  • Turn into a buttered, shallow, 1 1/2 quart casserole.
  • Sprinkle the cheese evenly over the top.
  • Bake at 350 for 30 minutes or until cheese starts to brown.

1/4 cup olive oil
1/2 medium diced onion
1/2 teaspoon salt
1/4 cup diced red bell pepper
1/4 cup diced green bell pepper
1 habanero, split lengthwise and seeds removed
1 teaspoon minced garlic
1 1/2 cups long grain white rice
1 teaspoon ground cumin
1 teaspoon ground allspice
1 teaspoon ground cinnamon
2 1/4 cups chicken stock
1/4 teaspoon white pepper
2 tablespoons cilantro, chopped

Steps:

  • Heat olive oil in a 2 quart sauce pot on medium-high heat and add the onions. Cook for one minute.
  • Add 1/4 teaspoon salt, bell peppers, and habanero. Continue cookign until soft, about 4-6 minutes.
  • Add garlic and cook for 30 seconds.
  • Add cumin, allspice, cinnamon and another teaspoon salt and rice adn cook until toasted, about 4 minutes.
  • Add the white pepper and stock, and bring to a boil, stirring occasionally.
  • Cover with a lid and turn the heat to low.
  • Continue to cook until rice is done, about 20 minutes.
  • Mix in cilantro and serve immediately.

225 g spring greens, finely shredded (8 oz)
2 teaspoons salt
5 tablespoons vegetable oil
3 eggs, lightly beaten
2 spring onions, finely chopped
450 g rice, cooked (1 lb)
1 pinch msg
75 g ham, finely shredded (3 oz)

Steps:

  • Sprinkle the finely shredded greens with 1 teaspoon salt and leave for 10 minutes, then squeeze out the liquid and chop finely.
  • Heat 1 tablespoon of oil in a frying-pan or crepe pan.
  • Pur in the beaten egg and allow to spread thinly over with a palette knife and cook the other side gently.
  • Remove the omelette and cut into fine shreds.
  • Heat another tablespoon of oil in the frying-pan and add the finely chopped greens.
  • Stir-fry for about 30 seconds, then remove from the pan.
  • Heat the remaining oil in a wok until it is smoking.
  • Add the spring onions, then the rice, and toss well together until the rice is heated through.
  • Add the remaining salt with the MSG, greens, omelette shreds and ham.
  • Toss all together and serve hot on a serving dish.
