ELECTRIC SKILLET MEATLOAF AND VEGGIES

I can't remember where I got this recipe, but have been making it for many years. The caramelized meatloaf and veggies are always a big hit. Hope you'll try it!!

Number Of Ingredients 7

1 1/2-2 lb your favorite meatloaf recipe (or see below for mine)
1 lb washed peeled or unpeeled potatoes cut into bite size
1 lb baby carrots or peeled carrots cut into about 1 inch lengths (baby carrots seem to work better though)
1 medium onion cut into thick strips
1/4 c butter or margarine (if using butter, add about a tbs oil)
salt and pepper to taste
garlic powder to taste

Steps:

  • 1. make your favorite meatloaf mixture or take 2lbs lean ground beef, about 1/4 cup ketchup or BBQ sauce (more or less to taste), 1 egg, about 1/4 to 1/2c bread crumbs, 1 sm. chopped onion, 1/2c chopped green pepper and 1-2 cloves minced garlic. season to taste with garlic powder, salt, pepper, and rosemary. For an extra punch...add a 1/4tsp red pepper. Mix to combine. Form into round shape. (I just use the mixing bowl)
  • 2. prepare the potatoes, carrots and onions. Melt the butter in a large electric skillet set to 250 degrees. When hot, add the meatloaf to the center of the pan. Surround with the veggie. Season veggies liberally with salt,pepper and garlic powder.
  • 3. Place the lid on the skillet. Then just walk away. Allow the meatloaf to cook about 45 min. or until desired doneness.
  • 4. This also works well with 1 can cut green beans.

1/3 cup breadcrumbs
1/3 cup milk
1/3 cup chopped fresh parsley
1 large egg
3 tablespoons Worcestershire sauce
1 small onion, finely minced
1 teaspoon chili powder
2 cloves garlic, grated or finely minced
1 1/2 pounds meatloaf mix (ground beef, pork and/or veal)
Kosher salt and freshly ground pepper
1 tablespoon vegetable oil
1/2 cup ketchup
1 to 2 tablespoons packed light brown sugar
1 tablespoon apple cider vinegar

Steps:

  • Mix the breadcrumbs, milk, parsley, egg, Worcestershire sauce, onion, chili powder and garlic in a large bowl. Add the meat, season with salt and pepper and mix with your hands until combined. Shape into six 3-to-4-inch oval loaves.
  • Heat the vegetable oil in a large nonstick skillet over high heat. Add the loaves and brown about 3 minutes per side.
  • Whisk the ketchup, sugar and vinegar in a bowl and brush a few tablespoonfuls over the meat. Add 1/2 cup water to the skillet, cover and simmer over low heat until cooked through, about 15 minutes.
  • Transfer the loaves to a plate. Add the remaining ketchup mixture to the skillet and cook over high heat, stirring, until thick, 3 to 5 minutes. Serve 4 meatloaves with the hot glaze, reserving 2 for quesadillas.

1 (10.75 ounce) can condensed tomato soup, divided
1 ½ pounds ground beef
½ cup dry bread crumbs
1 egg, lightly beaten
¼ cup chopped onion
1 teaspoon salt
1 teaspoon pepper
¼ cup water
½ teaspoon prepared yellow mustard
½ cup shredded mozzarella cheese

Steps:

  • In a large bowl, mix together 1/4 cup of the tomato soup, ground beef, bread crumbs, egg, onion, salt and pepper using your hands. Shape firmly into two loaves.
  • Heat a large deep skillet over medium-high heat. Brown the meatloaves in the hot skillet, then reduce heat to medium and cover with a lid. Simmer for about 25 minutes, or until meat is cooked through.
  • Spoon the fat from the skillet, and stir in the remaining soup, water, and mustard. Top with mozzarella cheese, and let simmer uncovered for 10 minutes, stirring sauce occasionally.

My family likes spice so I add in about 2 teaspoons dried chili flakes when sauteeing the veggies, but that is optional, you can sub chili sauce for the ketchup ---if you prefer to use fresh sliced mushrooms, just saute in the skillet before the onions and other ingredients, any leftovers makes a fantastic sandwich! :)

3 -4 tablespoons butter (can use more)
2 medium onions, chopped
2 green onions, chopped
2 tablespoons minced fresh garlic
2 celery ribs, chopped
1 large carrot, peeled (chopped into about 1/4-inch pieces)
3 teaspoons seasoning salt (or use white salt to taste)
1 teaspoon black pepper (can use more)
2 tablespoons Worcestershire sauce
1/2 cup ketchup
1 1/2 lbs extra lean ground beef
1 lb ground pork
1 (10 ounce) can sliced mushrooms, drained (can use more)
1/4 cup grated parmesan cheese
1/4 cup milk
1 1/2 cups fresh breadcrumbs
2 eggs, lightly beaten
1/3 cup fresh minced parsley
parmesan cheese
1 1/2 cups ketchup (or to taste)

Steps:

  • Set oven to 350 degrees.
  • In a large skillet melt butter; saute the onions, green onion, garlic, chopped celery and carrots over medium heat, stirring for until the carrots are fork-tender (about 10 minutes).
  • Season with seasoning salt and pepper.
  • Add in Worcestershire sauce and 1/2 cup ketchup; cook stirring 2 minutes; remove from heat.
  • In a large bowl combine the sauteed veggies, ground beef and pork, mushrooms, bread crumbs, eggs, milk, Parmesan cheese and parsley.
  • Pat into a shallow 10 x 5-inch oval baking dish.
  • Sprinkle with grated Parmesan cheese, then drizzle about 1-1/2 cups ketchup over the mixture.
  • Bake for about 1 hour or until cooked.

1/2 cup ketchup
1 tablespoon Worcestershire sauce
1 teaspoon prepared mustard

2 cups crushed saltines (about 40 crackers)
1 small onion, chopped
1/2 cup thinly sliced celery
1/2 cup thinly sliced carrot
2 pounds lean ground beef (90% lean)
Additional ketchup and mustard, optional

Steps:

  • In a large bowl, combine the first six ingredients. Add saltines, onion, celery and carrot. Add beef and mix well. Pat into a 10-in. nonstick skillet. Top with ketchup and mustard if desired. , Cover and cook over medium heat for 8 minutes. Reduce heat to low; cover and cook until meat is no longer pink and a thermometer reads 160°, 15-20 minutes longer. Drain. Let stand a few minutes before serving.

This is different from the routine meatloaf. Easy recipe to make. This comes from a Bisquick book that I have.

Number Of Ingredients 12

2 teaspoons instant beef bouillon or 2 bouillon cubes
3/4 cup boiling water
1 lb lean ground beef
3/4 cup Bisquick baking mix
1/2 cup crushed saltine crackers
1/2 cup chopped onion
1/2 cup chopped green pepper
2 tablespoons catsup
1/8 teaspoon pepper
2 -3 medium potatoes, cut in wedges (see note)
4 slices American cheese, cut crosswise into halves
1 (4 ounce) can sliced mushrooms, drained

Steps:

  • Note: I microwave the potatoes whole til they are approximately 1/2 to 3/4 done to assure they are cooked when meal is completed; Then I cut them into wedges and place on top of meatloaf.
  • Dissolve bouillon in water; mix 1/4 cup of the bouillon and the remaining ingredients except potatoes, cheese and mushrooms.
  • Pat mixture in 9" skillet to within 1" of edge.
  • Pour remaining bouillon around edge.
  • Place potato wedges on meatloaf in spoke fashion.
  • Cover and cook over low heat until potatoes are tender, 30 to 40 minutes.
  • Arrange cheese on potatoes; sprinkle with mushrooms.
  • Cover and cook until cheese is melted, 2 to 3 minute Sprinkle with snipped parsley if desired.

POT ROAST ELECTRIC SKILLET STYLE

4 lb boneless beef chuck or arm roast
1 onions, sliced
2 c celery, chopped
flour, olive oil, garlic pwd, onion pwd, black pepper

Steps:

  • 1. Season your meat pat with flour. Brown on both sides in small amt. of olive.
  • 2. Place roast and onion and celery in electric skillet with just a little drizzle of olive oil and brown on both side. Now add enough water so that it comes about half way up the side of roast. Add celery and onions. Place lid on and turn just to the far edge of warm. Watch for a couple minutes to make sure your skillet cuts on and off. If it stays on and the liquid starts to boil it is too high. You want the off and on method to cook it but not burn it. Check periodically to make sure you don't run out of water in the skillet. Flip roast after about 1 1/2- 2 hrs.
  • 3. When roast is done remove and make gravy---Use broth to make roast gravy. Mix 1 c. of COLD water with 2-3 tbls of cornstarch, OR mix about 3 tbsp of flour and same amount of hot water or broth, mix well with fork to make sure all lumps are out. Add to broth after meat and vegetables are removed, stir and cook over low heat till thickened. Another option is to use about 1-2 tbsp of A-1 after you add the flour or corn starch to add a little different flavor.
  • 4.
