LOW CARB SAUSAGE GRAVY

This is thickened with xanthan gum, which you can find in health food stores. Be careful with it, as a little bit goes a long way, and it takes just a bit longer to thicken than flour or cornstarch, so do give it time.

1 lb bulk pork sausage or 1 lb turkey breakfast sausage
2 cups cream (I use Hood Carb Countdown) or 2 cups low-carb milk (I use Hood Carb Countdown)
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup coffee
3/4 teaspoon xanthan gum

Steps:

  • Brown sausage until cooked through and drain any excess fat.
  • Pour milk over crumbled sausage and season with salt and pepper.
  • Stir in coffee.
  • Sprinkle xanthan gum evenly over skillet, and stir over low heat until gravy thickens.
  • Note: xanthan gum takes a bit longer to thicken than flour (and uses quite a bit less), so be patient; if you start adding a lot of xanthan gum to get it to thicken, the gravy will turn pasty (but if it does, just thin it with milk).

1 pound breakfast sausage, hot or mild
1/3 cup all-purpose flour
3 to 4 cups whole milk, more to taste
1/2 teaspoon seasoned salt
2 teaspoons freshly ground black pepper, more to taste
Biscuits, warmed, for serving

Steps:

  • With your finger, tear small pieces of sausage and add them in a single layer to a large heavy skillet. Brown the sausage over medium-high heat until no longer pink. Reduce the heat to medium-low. Sprinkle on half the flour and stir so that the sausage soaks it all up, then add more little by little. Stir it around and cook it for another minute or so, then pour in the milk, stirring constantly.
  • Cook the gravy, stirring frequently, until it thickens. (This may take a good 10 to 12 minutes.) Sprinkle in the seasoned salt and pepper and continue cooking until very thick and luscious. If it gets too thick too soon, just splash in another 1/2 cup of milk or more if needed. Taste and adjust the seasoning.
  • Spoon the sausage gravy over warm biscuits and serve immediately!

8 cups milk
1/2 cup flour

Steps:

  • Brown sausage in a large skillet. Add flour and cook until flour browns just a bit. Add 2 cups of milk and stir, then add 2 more cups and stir, add remaining milk if needed and bring to a boil and keep stirring. If the mixture is not thick enough mix 2 tbs. of flour and 1/4 cup of milk, then add to gravy. Simmer for 5 minutes and serve over biscuits.

cheesecloth
coffee filters

Steps:

  • Put coffee grounds in a large container. Slowly pour water over the grounds.
  • Cover bowl with plastic wrap and steep at room temperature for 18 to 24 hours.
  • Line a strainer with several layers of cheesecloth and place atop a pitcher; strain coffee through the cheesecloth into the pitcher. Discard the grounds. To get a clearer brew, strain coffee again through coffee filters. Store in refrigerator.

2 tablespoons finely chopped onion
6 tablespoons all-purpose flour
1 quart milk
1/2 teaspoon poultry seasoning

This is classic Southern-style sausage gravy; two thumbs up from my relatives in Tennessee and Kentucky. I'm very proud. It's quick, easy and delicious. Besides the sausage, all other measurements in this recipe are approximate, I don't measure the flour or milk. And a note on the milk: do not use skim, it won't come out right. Spoon this gravy over biscuits, toast or just about anything.

1 lb bulk breakfast sausage
1 small onion, small diced
4 tablespoons all-purpose flour
3 1/2 cups milk
1 -2 dash hot pepper sauce (optional)
fresh coarse ground black pepper

Steps:

  • Heat a 10" to 12" skillet over medium high heat and add sausage.
  • Break up sausage with a wooden spoon. Add onion after a minute or two.
  • Once the sausage is cooked, use a teaspoon to heavily dust the sausage with flour.
  • Stir to incorporate the flour, you want it to coat the sausage and soak up the grease.
  • Once the flour has turned a very light brown (about 2-3 minutes) add the milk and bring to a boil.
  • Turn the heat down to medium and continue to stir, it should thicken up quite quickly. If the gravy seems to thick, add more milk.
  • Add the hot pepper sauce (I like Frank's) and 8-10 grinds of coarse black pepper. Stir and serve immediately. Bon Appetito.
