Steps:
- Prepare the fruit with a small serrated knife. Cut the top and bottom off the kiwi, stand it up on one of its flat surfaces and cut away the skin, keeping the knife as close to the skin as possible. Slice in half, following the core through the centre, then cut each half into slices. Put in a bowl and repeat with the other kiwi.
- Carefully cut the skin off the mango and slice off each cheek, running your knife as close to the stone as you can. Cut each piece into slices. Remove any remaining fruit from the stone in long thin slices. Add the mango to the kiwi.
- Top and tail the pineapple, then in a similar way to the kiwi, cut away the skin. Use your knife to go around the pineapple, taking out the divets or eyes, two to three at a time, you'll be left with a spiral pattern weaving around the outside of the fruit. Take of a circular slice, roughly 150g, quarter, remove the core then cut into chunks. Add to the bowl.
- Halve the grapes and add to the rest of the fruit along with the berries, you may want to slice or halve strawberries if they're large. Remove the peel from the orange using the same method as the kiwi and pineapple. Holding the orange over the bowl of fruit, remove the orange segments by carefully cutting between the membrane and the fruit. The pieces should fall out into the bowl along with any juice. Squeeze the membrane over the fruit to extract the juice, add a drizzle of honey, if you like. Mix everything together and leave in the fridge to macerate for 30 mins, if you have time.

FRUIT SALAD (COMBINATION OF FRESH, CANNED, AND FROZEN FRUITS)
This is a delightful fruit salad that always draws rave reviews anytime I fix it at home or take it to showers or carry-ins. The "secret ingredient" is a box of instant French Vanilla pudding! You really can substitute fresh fruits for canned or frozen or visa versa, so I'm going to list the combination that I usually use. Any time I use canned fruits, I use them in their own juice, and you can substitute sugar free pudding as well.

REFRESHING FRESH FRUIT SALAD
This is so simple; it's my favorite fruit salad combination. My grandmother whips this up every holiday and serves it with fresh whipped cream; I like it topped with a sprinkling of granola. So healthy! This is best served about 2 hours after refrigerating. It's good, though, for 2-3 days in the refrigerator, but the banana will turn a little soft. (Cooking time is refrigeration, but you can eat it as soon as you prepare it too)

Steps:
- Peel the orange, taking the white pith with it, like you would an apple.
- Slice into the orange along its sections and place in medium bowl.
- After slicing the orange, you should be left with a slim middle part of the orange; squeeze the juice from this section into the bowl.
- Peel and dice the apple into small pieces; immediately place in bowl and coat with orange pieces and orange juice.
- Peel and dice banana; immediately place in bowl and stir to coat (the orange juice will prevent these 2 fruits from turning brown).
- Slice grapes in half and add to mixture.
- Sprinkle with sugar and stir.
- (**Note,I only add the sugar or Splenda if my orange is a little too tart. If it's a sweet orange, you don't need any sugar).
- **I add blueberries to this if they're in season.
FRESH FRUIT SALAD
This is my slight variation of an old Southern Living recipe. I made it for the family Christmas dinner one year and everyone wanted more. The original calls for honeydew melon balls, but I had no honeydew on hand, so added an extra apple. I also diced the apples, cut the grapes in half and cut the orange sections into halves to make everything easier for the children to eat. The original called for 1 sliced apple. The preparation time does not include chilling time.
