SCRAMBLED EGG MUFFINS
These scrambled egg muffins with plenty of sausage and Cheddar cheese make a filling and fun treat at your next brunch. They're pretty, hearty, and fun to serve.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Lightly grease 12 muffin cups, or line with paper muffin liners.
- Heat a large skillet over medium-high heat and stir in sausage; cook and stir until sausage is crumbly, evenly browned, and no longer pink, 10 to 15 minutes; drain.
- Beat eggs in a large bowl. Stir in onion, green pepper, salt, pepper, and garlic powder. Mix in sausage and Cheddar cheese. Spoon by 1/3 cupfuls into muffin cups.
- Bake in preheated oven until a knife inserted near the center comes out clean, 20 to 25 minutes.

Steps:
- Flatten bread with a rolling pin.
- Spread a scant teaspoon of butter on one side of each bread slice.
- Press bread, buttered side down, into 4 muffin cups. Bake at 350 for 12-15 minutes.
- Meanwhile, in bowl, beat eggs, chives, salt, & pepper.
- In a skillet, melt remaining butter over medium-low heat.
- Add egg mixture;cook & stir until eggs are completely set.
- Spoon into bread cups; sprinkle with cheese.
- Bake 1-2 minutes longer, until cheese is melted.

- Crack the eggs into a large bowl and whisk together until light and airy.
- Melt the butter in a medium skillet over low heat. Add the eggs to the pan and wait about 10 seconds for them to start to set up. Swirl them with a rubber spatula to create soft curds. Season with salt and continue swirling until the curds are set but still a little wet.
- Garnish with chives, and drizzle with extra-virgin olive oil.
- Serve with roasted tomatoes and peasant bread.
SCRAMBLED EGGS WITH CAVIAR IN EGGSHELL CUPS
Steps:
- Prepare eggshell cups Bring a large pot of water to a boil. Hold a large egg in one hand, tapered end up. Place an egg topper (a special tool for neatly snipping off the tip of the shell) over the top and squeeze, using a scissor motion. Discard top of egg. Pour egg into a medium bowl. Repeat with remaining eggs. Boil shells for 5 minutes. Using a slotted spoon, transfer to a wire rack. Let dry, cut sides down.
- Prepare eggs Scramble eggs, using the butter and a large skillet. Transfer eggs to a pastry bag fitted with a 1/2-inch plain round tip (wrap bag with a kitchen towel if necessary, as eggs will be very hot). Pipe eggs into shells. Transfer shells to egg cups. Serve with a dollop of crème fraîche or sour cream, if desired. Top with caviar.

- Beat cream cheese until smooth.
- Gradually add milk.
- Add eggs, chives and salt.
- Beat with a fork or whisk until foamy.
- Melt butter in a frying pan.
- When sizzling, pour in egg mixture.

SCRAMBLED EGGS IN A CUP
My grandmother passed down this recipe after I had my son. This was one of his very first foods. Its easy to make, easy to clean up and easy to feed. Even the pickiest of toddlers will devour this simple easily digestible meal. After 10 years my son still asks for his eggs to be made this way and can even make them himself. It is still his favorite way to eat his eggs :) Also makes a quick on the go breakfast you can eat in your car. For adults add salt and pepper with your favorite cheese, spices or ketchup.

- * Add all the ingredients into the mug.
- * Whist with a fork.
- * Cook uncovered on high in the microwave for 30 seconds.

This is the method that restaurants use to serve eggs for a buffet brunch --- for cheesy eggs mix in 1-1/2 cups shredded old cheddar cheese or you may sprinkle the cheese on top after removing from the oven --- 2-1/2 cups half and half cream and milk will produce ultra fluffy eggs, for a firmer texture reduce to 2 cups--- NOTE this recipe was tested using large eggs I cannot promise the same results using small or extra large eggs --- if you are serving these eggs at a buffet some side ideas would be salsa, green onions, cheddar cheese and soft buns :)

- Set oven to 350 degrees F (set oven rack to lowest position).
- Spray a 13 x 9-inch glass baking pan with cooking spray then pour the melted butter into the pan.
- In a bowl whisk eggs and salt until smooth and well blended.
- Gradually whisk in the half and half and milk; pour into the baking pan.
- Bake uncovered for 10 minutes.
