Typically known as Baba Ganoush, this eggplant dip differs from the traditional version in that it's missing tahini (or ground sesame seeds). Despite its ho-hum looks, this eggplant dip will truly surprise and impress you with its delicious flavor and soft texture interspersed with some meaty eggplant bits. Serve it with your favorite veggies or pita, and turn any leftovers into a sandwich spread.

6 tablespoons extra-virgin olive oil
2 pounds globe eggplants, peeled and cut into 1-in. pieces (about 2 medium eggplants)
4 medium garlic cloves, crushed
3 tablespoons fresh lemon juice (from 1 lemon)
2 teaspoons honey
1 teaspoon kosher salt
3/4 teaspoon smoked paprika
1/2 teaspoon ground cumin
1/2 teaspoon black pepper
1/4 cup chopped fresh flat-leaf parsley

Steps:

  • Heat oil in a medium saucepan over medium-low. Stir together eggplants, garlic, lemon juice, honey, salt, paprika, cumin, and pepper in saucepan. Cover and cook, stirring occasionally, until eggplant is very tender, about 25 minutes. Remove from heat; cover and let stand 10 minutes. Uncover and mash any large pieces of eggplant with a potato masher or the back of a spoon. Transfer to a medium bowl, and sprinkle with parsley.

3 cups cubed eggplant
1 medium onion, chopped
1/3 cup finely chopped sweet red pepper
1 jar (4-1/2 ounces) sliced mushrooms, drained
1/3 cup olive oil
4 garlic cloves, minced
1 jar (6 ounces) pimiento-stuffed olives, drained and chopped
1 can (6 ounces) tomato paste
2 tablespoons red wine vinegar
1-1/2 teaspoons sugar
1 teaspoon salt
1/2 teaspoon dried oregano
Hot pepper sauce to taste
Pita bread wedges or tortilla or corn chips

Steps:

  • In a large skillet, combine the eggplant, onion, red pepper, mushrooms and oil. Cover and cook over medium heat for 10 minutes or until tender; add garlic and cook 1 minute longer. , Stir in the olives, tomato paste, vinegar, sugar, salt, oregano and hot pepper sauce; bring to a boil. Reduce heat; cover and simmer for 20-30 minutes or until flavors are blended. Serve warm or at room temperature with pita wedges or chips.

2 lbs eggplants
2 garlic cloves, sliced
3 medium tomatoes, peeled deseeded and chopped
1 teaspoon paprika
1/2 teaspoon ground cumin
1 tablespoon cilantro, chopped
1 1/2 tablespoons olive oil
3 tablespoons lemon juice

Steps:

  • Preheat oven to 425 degrees.
  • Cut slits in the eggplants and insert slices of garlic.
  • Bake in oven until skin is charred and blistered.
  • Remove from oven and leave to cool.
  • Peel eggplant, squeeze out the juice and discard juices, then place in a bowl.
  • Mash eggplant and garlic, tomatoes, paprika, cumin, cilantro and salt.
  • Heat the oil in a frying pan, add eggplant mixture and fry, stirring frequently, until very thick.
  • This takes about 15 minutes.
  • Pour off the excess oil.
  • Add lemon juice to the paste, to taste.
  • Serve warm or cool.

2 large globe eggplants
1/4 cup chopped fresh Italian parsley
2 tablespoons chopped fresh mint
1 teaspoon chopped fresh oregano
2 tablespoons lemon juice
6 dried pequin chiles, crushed
1 teaspoon kosher salt
1/4 cup extra-virgin olive oil
Flatbread or crackers, for serving

Steps:

  • Preheat the oven to 425 degrees F.
  • Pierce each eggplant with the tip of a knife in about 10 spots. Place on a rimmed baking sheet and roast until very soft and cracking in a few spots, about 50 minutes. Let cool slightly.
  • Cut each eggplant open lengthwise and scrape out the flesh with a large spoon; discard the skin. Place the flesh in the bowl of a food processor and pulse to coarsely chop. Add the parsley, mint, oregano, lemon juice, chiles, salt and olive oil. Puree for 20 seconds to combine. Allow to cool slightly before serving with crackers.

Hardwood or lump charcoal

Steps:

  • Remove grate and prepare a charcoal grill for medium heat (coals should be covered with ash and glowing red with no black remaining). Place eggplants directly on coals and cook, turning occasionally, until skins are completely charred and flesh is collapsed, 15-20 minutes. Transfer to a rimmed baking sheet and let cool. (Or, you can grill on the grate of a gas or charcoal grill over medium-high heat, turning occasionally, 20-25 minutes.)
  • Split eggplants lengthwise and scoop flesh from skin into a medium bowl (it's okay if bits of charred skin get in there too). Mash eggplant with a fork to break up, then mix in garlic, yogurt, chopped mint, red pepper flakes, and 2 Tbsp. oil; season with salt.
  • To serve, drizzle dip with more oil and top with mint leaves.

2 to 3 medium eggplants (about 3 pounds total)
2 to 3 tablespoons olive oil
1/3 cup tahini
2 cloves garlic, peeled and crushed
Juice of 2 lemons (about 1/2 cup)
Kosher salt and freshly ground black pepper
N/A freshly ground black pepper

Steps:

  • 1. Preheat the oven to 450°F. Rub the outside of the eggplants with olive oil and place them in a roasting plan. Roast the eggplant until the skin has charred and the interior is tender, 15 to 20 minutes. Let cool.
  • 2. Peel and seed the cooled eggplant, roughly chop the flesh, and then transfer it to the bowl of a food processor.
  • 3. Into the processor bowl add the tahini, garlic, lemon juice, some salt and pepper to taste, and a few teaspoons of cold water. Process the mixture to a coarse paste, adding a bit more water as needed to allow the mixture to blend.
  • 4. Adjust the seasoning with salt and pepper to taste and serve.

Steps:

  • Preheat oven to 425 degrees. Place eggplant and garlic on a rimmed baking sheet and rub with 2 tablespoons oil. Roast until garlic is soft and golden, 20 minutes. Remove garlic and set aside. Continue to roast eggplant until soft and deflated, 20 to 25 minutes more. Let cool 20 minutes.
  • Slice eggplant open and scrape flesh into the bowl of a food processor. Peel garlic and add to bowl, along with lemon juice, tahini, salt, and 2 tablespoons oil. Process until smooth. (To store, refrigerate, up to 2 days.) Serve drizzled with more oil and a sprinkle of paprika if desired.

NOT your classic baba ghanoosh but nonetheless a very tasty eggplant dip which I've adapted from a recipe in 'The Australian Women's Weekly's TAPAS antipasto mezze'. This dip tastes best if refrigerated overnight. The overnight refrigeration time has not been included in the cooking or preparation times. Because vegetable sizes will inevitably be variable, add the olive oil sparingly until you can see how much you need to achieve the right consistency.

1 large eggplant (500g)
1 large yellow onions (for Americans) or 1 large brown onion, quartered (for Australians)
1/4 teaspoon olive oil, for brushing the eggplant and onions

Steps:

  • Preheat the oven to hot (220°C; 425°-450°F; 7-8 Gas Mark); pierce the eggplant all over with a fork or skewer; place the whole eggplant and the quartered onion on an oiled oven tray, brush lightly with olive oil and bake for 25-30 minutes.
  • Turn the eggplant and onion pieces.
  • After the eggplant and onion have been baked for another 10-15 minutes (a total of 35-45 minutes), add the garlic cloves to the baking tray and bake the vegetables for approximately 15 more minutes. The eggplant and onion should have been now baked for about an hour and the eggplant, the onion and the garlic should all have softened.
  • Set aside the eggplant, onion and garlic for about 15 minutes or until they have cooled; peel the eggplant; discard the skin; and chop the flesh coarsely.
  • Blend or process the eggplant flesh, the onion pieces and the cloves of garlic with the remaining ingredients (except for the chopped walnuts) until the mixture is smooth; cover and refrigerate for a minimum of 3 hours or preferably overnight.
  • Combine the chopped walnuts with the dip and serve it with pita bread or crusty rolls as part of an antipasto mezze platter.
