Eggplant Teriyaki Stir Fry with Tofu image

Eggplant Teriyaki Stir-Fry with Tofu! Vegan & GlutenFree, this healthy dinner is ready in less than 30 minutes.

Teriyaki Sauce:
1/3 cup balsamic vinegar
1/4 cup maple syrup
1 tbsp. soy sauce
2 tsp. grated fresh ginger
1 garlic clove, grated
1 tsp. miso paste
1 tsp. rice wine vinegar
1/3 cup water
2 tsp. oil of choice, divided
Remaining Ingredients:
1 16 oz. package tofu, drained and pressed, sliced into 1" cubes
1 pound Japanese eggplant, sliced into 1" slices or cubes
¼ cup chopped scallions
1 garlic clove, finely chopped
Cooked rice, for serving

Steps:

  • Place ingredients for Teriyaki sauce in a saucepan and bring to a boil. Reduce heat to low and simmer for 15 minutes until thick.
  • While the sauce is cooking, heat 1 tsp. oil in a large non-stick pan. Add the tofu and stir-fry until golden, about 5 minutes.
  • Remove from skillet. Add another tsp. oil and add the eggplant, scallions, garlic and cook for an additional 5-10 minutes until soft. Add the tofu back in along with the teriyaki sauce. Cook for an additional 5 minutes until combined and thick.
  • Serve over cooked rice. Garnish with scallions and sesame seeds.

Stir-fried eggplant and tofu in a homemade teriyaki sauce-really easy and perfect enjoyed with some rice for your next meal!

3 large eggplants ((400g total), I used chinese eggplants)
400 g extra firm tofu
3 tbsp toasted sesame oil (or other oil)
2 cloves garlic (minced)
1/2 red bell pepper (sliced)
5-6 tbsp homemade or store-bought teriyaki sauce
Salt and pepper (to taste)
Sesame seeds and chopped spring onion (for topping)
Steamed rice

Steps:

  • Slice eggplant into strips or your choice of shape. To blanch eggplant, boil a pot with water. Once the water boils, add in the eggplant and leave to cook for 3-4 minutes until half-cooked. Then set aside.* (see notes)
  • Drain excess liquid from the tofu. I like to do this by wrapping the tofu in a towel and pressing down with a heavy surface. Slice tofu into strips or shape of your choice.
  • Heat a non-stick pan. Add in 2 tbsp oil. Once hot, add in the tofu. Pan-fry until golden brown and crisp on each side. You may need to do this in batches depending on the size of your pan. Set tofu aside.
  • In the same pan, add 1 tbsp sesame oil. Sauté the garlic until aromatic then add in the bell peppers. Once the bell peppers are cooked, add in the tofu and eggplant. Pour in the teriyaki sauce. Leave to cook for a few minutes until the tofu and eggplant have absorbed the sauce. Feel free to add more teriyaki sauce.
  • Season with some salt and pepper, to taste. Drizzle more sesame oil, if desired. Feel free to top with more sesame seeds. Turn off heat and enjoy with some steamed rice!

2/3 cup plus 2 teaspoons cornstarch
1 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1 medium eggplant, peeled and cut into 3/4-inch cubes
1 block extra-firm tofu, drained, pressed dry between paper towels and cut into 1-inch cubes
1 tablespoon peanut oil, plus more for frying
1/4 cup chicken stock
2 tablespoons soy sauce
2 tablespoons rice vinegar
1 1/2 tablespoons sugar
1 teaspoon lime juice
1 tablespoon grated peeled fresh ginger
3 Thai bird chiles, minced, or as desired
2 cloves garlic, grated on a rasp
1 tablespoon toasted sesame oil
Cooked white rice, for serving
Chopped fresh cilantro, for garnish

Steps:

  • In a shallow dish, combine 2/3 cup of the cornstarch, the salt and pepper. Toss the eggplant pieces in the cornstarch mixture to coat, shaking off the excess; set aside. Repeat the process with the tofu.
  • Heat 1/2 inch of the peanut oil in a large, deep, straight-sided skillet over medium heat until it shimmers. Working in batches, cook the eggplant first, tossing gently until golden brown, about 3 minutes on each side. Transfer to a paper-towel-lined plate to drain. Repeat with the remaining eggplant and the tofu.
  • In a small bowl, whisk together the chicken stock, soy sauce, vinegar, sugar, lime juice and remaining 2 teaspoons cornstarch.
  • Carefully drain the oil from the skillet, and wipe out any residue using paper towels held with tongs. Add 1 tablespoon of peanut oil to the skillet and heat it over medium heat. Add the ginger, about 1 teaspoon of the minced chiles (or to taste) and the garlic. Cook, stirring, until just fragrant, about 30 seconds; pour in the chicken stock mixture and bring it to a simmer. Simmer until slightly thickened, 2 to 3 minutes.
  • Add the cooked eggplant and tofu to the skillet and toss gently to combine. Stir in the sesame oil and remove from the heat. Serve immediately over rice and garnished with the remaining minced chiles if desired and chopped cilantro.

3 tablespoons vegetable oil
1 medium onion, sliced
5 cloves garlic
1 3-inch piece ginger, peeled
1 jalapeno pepper (remove seeds for less heat)
1 14-ounce can whole plum tomatoes
2 Japanese eggplants, cut into 3/4-inch pieces
1 teaspoon curry powder
1 14-ounce can unsweetened coconut milk
12 ounces firm tofu, cut into 1/2-inch cubes and patted dry
3 cups spinach
Kosher salt and freshly ground pepper
Rice, for serving (optional)

Steps:

  • Heat 1 tablespoon vegetable oil in a pot over medium-high heat. Add the onion and cook until softened, about 5 minutes. Meanwhile, puree the garlic, ginger, jalapeno and 1 to 2 tablespoons water in a mini food processor until a paste forms. Drain the tomatoes, reserving the juice; coarsely crush the tomatoes in a separate bowl.
  • Add the remaining 2 tablespoons vegetable oil and the eggplant to the pot; cook 2 minutes. Add the garlic-ginger paste and cook, stirring, 2 more minutes. Add the curry powder and tomatoes (but not the juice) and cook, stirring, 1 minute. Add the tomato juice and 1 cup water and cook until slightly reduced, about 3 minutes. Add the coconut milk and tofu; simmer until the eggplant is very tender, about 5 minutes. Add the spinach and cook until wilted, about 1 minute. Season with salt and pepper. Serve with rice, if desired.

My first stab at cooking tofu for myself was such a delicious success that I'm having another go at it. This recipe is from Sunset magazine, featuring one of my favorite vegetables - yummy, beautiful eggplant.

3 tablespoons vegetable oil
1 (18 ounce) package firm tofu, drained, cut into 1 1/2- by 2-in . chunks
2 garlic cloves, minced
1 lb eggplant, cut into 1- by 3-in . strips
1 small bell pepper, cut into 1-in . pieces
1/3 cup reduced sodium soy sauce
2 tablespoons sugar
2 tablespoons oyster sauce
1/4 cup fresh basil leaf

Steps:

  • Heat oil in a large nonstick frying pan over high heat, add tofu, and gently cook, turning tofu occasionally, until browned slightly, about 5 minutes. Use a slotted spoon to transfer tofu to a plate.
  • Cook garlic, eggplant, and bell pepper in pan until softened, stirring occasionally, 8 to 10 minutes.
  • Add soy sauce, sugar, and oyster sauce and cook until heated through, another 2 minutes.
  • Return tofu to pan and gently stir to coat.
  • Remove from heat and stir in basil leaves.
  • Serve over rice.

  • Rinse and cut off the top of the eggplant. Then chop the eggplant rangiri-style by rotating the eggplant (see vide) into equal size pieces. Transfer to a bowl of cold salted water and let it rest for 5 minutes.
  • In the meantime, slice the tofu into bite sized squares. Pat it dry and then coat all sides with potato starch. Over medium high heat, add some oil and cook the tofu on each side until golden brown (about 45-60 seconds per side). Remove from pan.
  • Drain the eggplant well. Over medium to medium high heat add 1 tbsp of cooking oil to the pan and then add the eggplant. Let eggplant soak up the oil (the eggplant will soak it up relatively quickly). Key point: As soon as the oil is absorbed by the eggplant, flip the them so that the skin side is facing down. This will help maintain the purple colour while still achieving some nice charring. Once the skin side is nice and brown, flip onto the other side and fry until light golden brown. In the meantime, dissolve the miso paste with the mirin.
  • Then add the sake, sugar and kombu mentsuyu and swirl the pan around 1-2 times. Add the tofu and let it cook until most of sauce is absorbed by the eggplant and tofu. Turn heat down to medium low and then add in the miso and chili bean paste. Key point: adding miso toward the end will ensure it doesn't burn and retains its flavour. Swirl the pan and then let it cook for 30-45 seconds to allow the eggplant and tofu to absorb the remaining sauce. Flip the tofu as needed to ensure the sauce coats everything.
