Here's what you need: large eggs, 2% milk, kosher salt, sprouted grain bread, cherry tomatoes, chickpeas, fresh basil leaf, goat cheese, extra virgin olive oil

10 large eggs
½ cup 2% milk
1 teaspoon kosher salt
4 slices sprouted grain bread, cut in rough 1-inch (2 cm) squares
1 pt cherry tomatoes, halved
15 oz chickpeas, 1 can, rinsed and drained
¼ cup fresh basil leaf, roughly chopped
4 oz goat cheese, crumbled
1 tablespoon extra virgin olive oil

Steps:

  • In a large mixing bowl, whisk together the eggs, milk, and salt.
  • Add the bread and toss so that all of the bread is saturated with liquid.
  • Refrigerate the mixture and let it sit for at least 2 hours and up to overnight.
  • Take the egg and bread mixture out of the fridge and add the tomatoes, chickpeas, basil, and goat cheese to the mixing bowl. Toss everything together to thoroughly combine.
  • When you're ready to bake the strata, preheat the oven to 375°F (190°C).
  • Heat olive oil in a large, oven-safe skillet over medium heat. Swirl the oil to coat the bottom and at least an inch (2 cm) up the sides.
  • Pour the combined ingredients into the skillet, then use a spatula to spread everything evenly over the skillet, pressing the bread into a flat, even layer.
  • Bake the strata in the preheated oven until the eggs are completely set and the edges are golden brown, 35 to 40 minutes.
  • Take the strata out of the oven and let it sit in the pan for at least 15 minutes.
  • Flip the cooled strata out of the pan and onto a cutting board, then slice it into four portions.
  • Eat immediately, or let the strata cool completely before storing in an airtight container in the fridge.
  • Note: To reheat the strata: Microwave for 1 minute on high, or reheat in a 375°F (190°C) oven for 5 minutes, just to heat through.

6 cups crusty baguette, cubed
1 cup cubed ham
1 cup spinach, cooked and drained
1 cup shredded cheese

Steps:

  • Whisk together eggs, milk and salt and pepper. Add the cubed crusty bread, stir and let the bread soak up all the egg mix.
  • Oil a 9x13-inch (23x33 cm) pan, put down ½ of the soaked bread, add ham, spinach and cheese.
  • Top with the rest of the bread. If you need to, pat down the strata with your spoon or spatula. Sprinkle more cheese over the top.
  • Bake in preheated oven at 350°F (177°C) for 45 minutes.

In this delicious twist on a Mediterranean-style egg bake, we layer in rounds of buttery garlic toast and use a flavorful pasta sauce instead of canned tomatoes for a hearty meal that is as good for brunch as dinner.

6 tablespoons unsalted butter, at room temperature
1 clove garlic, grated
Kosher salt and freshly ground black pepper
1 round loaf Tuscan bread (about 13 ounces), sliced into 1/2-inch-thick slices
1 1/2 cups shredded mozzarella (about 6 ounces)
3/4 cup grated Parmesan (about 3 ounces)
1 teaspoon Italian seasoning
One 24-ounce jar tomato and basil pasta sauce
6 large eggs
Pinch crushed red pepper flakes

Steps:

  • Arrange an oven rack in the highest position in the oven and another in the middle position. Preheat the broiler to high.
  • Combine the butter, garlic, 1/4 teaspoon salt and a generous amount of black pepper in a small bowl with a fork. Put the bread on a baking sheet in a single layer and brush the top of each slice with the garlic butter. Broil on the top rack until golden brown and toasted, 2 to 3 minutes. Set aside.
  • Reduce the oven temperature to 425 degrees F.
  • Meanwhile, mix the mozzarella, Parmesan and Italian seasoning in a medium bowl.
  • Spoon 1 cup of the tomato sauce onto the bottom of a 9-by-13-inch baking dish. Arrange half of the bread toasted-side up on top of the sauce in a single layer. Spoon 1/2 cup sauce over the top and sprinkle with half of the cheese mixture. Repeat to make a second layer with the remaining bread, sauce and cheese.
  • Make 6 deep wells in the sauce and bread (it's ok if the bread rips a little) using the back of a tablespoon. Carefully crack 1 egg into each well. Sprinkle with the crushed red pepper flakes. Bake on the middle rack until the whites are set, the yolks are still runny and the cheese is melted and turning brown in some spots, 15 to 18 minutes. Let rest for 10 minutes before serving.

3 slices bacon
1 cup vertically sliced onion
2 cloves garlic, minced
2 ¼ cups milk
6 large eggs
¼ cup thinly sliced fresh basil
¾ teaspoon chopped fresh thyme
¼ teaspoon salt
¼ teaspoon ground black pepper
cooking spray
8 cups cubed Italian bread, divided
2 cups shredded Cheddar cheese, divided
12 (1/2 inch thick) slices tomato, seeds removed

Steps:

  • Cook bacon in a large nonstick skillet over medium heat until crisp, about 10 minutes. Remove bacon from pan, reserving drippings in the skillet. Crumble when cool enough to handle.
  • Add onion to drippings in the skillet; saute for 4 minutes. Add garlic and saute for 1 minute. Remove from heat; combine onion mixture and bacon.
  • Whisk milk, eggs, basil, thyme, salt, and pepper together in a bowl until well combined.
  • Spray a 9x13-inch baking dish with cooking spray and arrange 1/2 of the bread cubes in the bottom.
  • Top bread cubes with 2/3 cup Cheddar cheese, 1/2 of the onion mixture, and 6 tomato slices. Pour 1/2 of the milk mixture over tomatoes. Top with remaining bread cubes and 2/3 cup Cheddar. Top with remaining onion mixture, tomato slices, and milk mixture. Cover and place in the refrigerator to chill at least 8 hours or up to 24 hours.
  • Preheat the oven to 325 degrees F (165 degrees C).
  • Bake strata in the preheated oven, uncovered, for 55 minutes. Sprinkle with remaining Cheddar cheese and bake until cheese melts, an additional 5 minutes. Let stand 5 minutes before serving.

Some of my best memories growing up were in the kitchen with my mother and two sisters. My mother is known for creating some of the most incredible dishes, the following is a favorite breakfast item. Pairs well with Gallo Family Vineyards Chardonnay.

Number Of Ingredients 12

1 package (10 ounces) frozen chopped spinach, thawed
3 garlic cloves, minced
1 tablespoon olive oil
2 cans (14-1/2 ounces each) diced tomatoes, undrained
1 loaf (1 pound) French bread, cut into 1/2-inch slices
6 slices Swiss cheese
1/2 cup chopped onion
3/4 cup crumbled feta cheese
6 eggs
2 cups milk
Salt and pepper to taste
Grated Parmesan cheese

Steps:

  • In a skillet, cook spinach and garlic in oil until liquid evaporates. Cool. , Spread one can of tomatoes on the bottom of a greased 13-in. x 9-in. baking dish. Arrange one layer of bread slices over tomatoes. Arrange Swiss cheese slices over bread. Layer spinach, onions and Feta cheese over Swiss cheese. , Top with the second can of tomatoes and another layer of bread slices. Combine eggs, milk, salt and pepper; pour over bread. Cover and refrigerate 8 hours or overnight. Remove from the refrigerator 30 minutes before baking. Bake, uncovered, at 375° for 1 hour. Sprinkle with Parmesan cheese and bake 10 minutes longer or until a knife inserted near the center comes out clean. Let stand 5 minuets before serving.
