LASAGNA ROLLS

- To make the sauce: Melt the butter in a heavy medium saucepan over medium-low heat. Add the flour and whisk for 3 minutes. Whisk in the milk. Increase the heat to medium-high. Whisk the sauce until it comes to a simmer and is thick and smooth, about 3 minutes. Whisk the salt, pepper, and nutmeg into the bechamel sauce.
- Preheat the oven to 450 degrees F.
- Whisk the ricotta, spinach, 1 cup Parmesan, prosciutto, egg, salt, and pepper in a medium bowl to blend.
- Add a tablespoon or 2 of oil to a large pot of boiling salted water. Boil the noodles until just tender but still firm to bite. Drain. Arrange the noodles in a single layer on a baking sheet to prevent them from sticking.
- Butter a 13-by-9-by-2-inch glass baking dish. Pour the bechamel sauce over the bottom of the prepared dish. Lay out 4 lasagna noodles on a work surface, then spread a large spoonful (about 3 tablespoons worth) of ricotta mixture evenly over each noodle. Starting at 1 end, roll each noodle like a jelly roll. Lay the lasagna rolls seam side down, without touching, atop the bechamel sauce in the dish. Repeat with the remaining noodles and ricotta mixture. Spoon 1 cup of marinara sauce over the lasagna rolls. Sprinkle the mozzarella and remaining 2 tablespoons of Parmesan over the lasagna rolls. Cover tightly with foil. Bake until heated through and the sauce bubbles, about 20 minutes. Uncover and bake until the cheese on top becomes golden, about 15 minutes longer. Let stand for 10 minutes. Meanwhile, heat the remaining marinara sauce in a heavy small saucepan over medium heat until hot, and serve alongside.
LASAGNE ROLL-UPS RECIPE BY TASTY

- Brown off the minced beef in a pan then add the onions.
- Cook this through for a minute or so then add the tomatoes, garlic, oregano and basil, then season with a little bit of salt and a good bit of pepper.
- Stir it all together and allow to simmer for a few minutes until the sauce has reduced slightly and everything is cooked well then set aside.
- In a mixing bowl, add the ricotta, grated mozzarella, parmesan, parsley and egg. Season with salt and pepper. Mix this all up until it's well combined.
- Preheat oven to 180°C (350°F) Gas mark 4.
- Cut the lasagne sheets in half length ways and put them onto a baking tray.
- Put a few tablespoons of the tomato and beef mixture all the way down the sheet, leaving a bit of space on each end to help when you roll it. Don't overfill this here, otherwise it'll get messy!
- Place a layer of the cheese mixture on top of the beef mixture in the same way.
- Roll the lasagne sheets up to form little cylinders full of lovely stuff, if the filling spills out, just shove it back in.
- Top each roll-up with another tablespoon of both the beef and cheese then sprinkle a tablespoon of parmesan over all of it.
- Bake in the centre of the pre-heated oven for 12-15 minutes until the cheese mixture on top has browned slightly.

- Preheat oven to 400. Coat 7x11 in pan with cooking spray.
- In small bowl mix cornstarch with water and set aside.
- In a large non-stick skillet, heat sesame oil over high. Add scallions, ginger and garlic and cook, stirring constantly until fragrant, about 2 minutes.
- Add Chicken, mushrooms and carrots. Cook until vegetables begin to soften, about 4 minutes. Add coleslaw mix and vinegar and cook, stirring constantly until cabbage begins to wilt and becomes translucent, about 4 minutes. Push mixture to edge of skillet.
- Stir corn starch mixture to recombine and pour into the centre of the skillet. Stir into the vegetables thoroughly, then cook for about 1 minute. Transfer mixture to a bowl and stir in 1/2 cup hoisin sauce.
- Place 2 eggroll wrappers over the bottom of the prepared baking dish. Spread with 1/3 of the vegetable mixture. Cover with 2 more egroll wrappers then spread with 1/2 the remaining filling.
- Repeat with 2 more wrappers and the remaining filling. Top with the 2 remaining wrappers.
- Spray a piece of foil with non-stick cooking spray and tightly cover dish. Bake for 20 minutes. Uncover and brush with remaining Tbsp hoisin sauce. Sprinkle with sesame seeds. Replace foil and bake 10 mins more until casserole bubbles at the edges and is heated through to the centre.
- Serve, or let cool completely before covering tightly with foil and plastic wrap, then refrigerate or freeze.

- Cook and stir ground beef, onion, garlic powder, and oregano in a large skillet over medium heat until onion is tender and beef is browned, about 10 minutes. Add tomato sauce and sugar; simmer until sauce is heated through, about 10 minutes.
- Bring a large pot of lightly salted water to a boil. Cook lasagna in the boiling water, stirring occasionally until cooked through but firm to the bite, 8 to 10 minutes. Drain.
- Preheat oven to 375 degrees F (190 degrees C). Grease a 9x13-inch casserole dish.
- Mix ricotta cheese, egg, parsley, and 3/4 cup Parmesan cheese together in a bowl.
- Place a lasagna noodle on a work surface. Spoon one layer of ricotta cheese mixture, one layer meat sauce, and one layer mozzarella cheese atop the lasagna noodle; top with another lasagna noodle. - Stir together first 6 ingredients until blended.
- Stir in 1/2 cup mozzarella cheese and 1/2 cup Parmesan cheese.
- Set aside.
- Spread 1 cup pasta sauce in bottom of a lightly greased 13x9 baking dish.
- Cut egg roll wrappers in half; arrange 10 halves over pasta sauce (wrappers will overlap).
- Top with meatballs.
- Spoon 3 cups pasta sauce over meatballs.
- Sprinkle with 3/4 cup mozzarella cheese.
- Arrange 10 wrappers evenly over mozzarella.
- Spread ricotta cheese mixture over wrappers.
- Top with remaining wrappers and pasta sauce.
- Bake at 350F for 1 hour.
- Top with remaining 3/4 cup mozzarella and 1/2 cup Parmesan cheese.
- Bake 10 more minutes.
- Let stand 15 minutes before serving.

- Cook & Portion Lasagna: Cook the lasagna and then let cool to at least room temperature or use leftover lasagna. Cut into small slices about 2 Tablespoons in volume.
- Rolling: Using egg roll wrappers or spring roll wrappers, add the 2 Tablespoons piece of the lasagna filling to each wrapper. Add about 2 teaspoons of shredded cheese on top. Carefully add egg rolls to frying pan, without crowding the egg rolls in the pan (they will stick together if placed too close. Fry the egg rolls in batches if needed). Fry each side of the egg rolls for about 2-3 minutes or until crisp and golden brown (try to keep the oil temperature at about 350°F/175°C). Remove and blot on paper towel to remove excess oil.
- Allow to cool a little (the filling will be super hot right after frying), and then serve with your favorite dipping sauce.
