Egg Pulao is a delicious spicy preparation of seared eggs cooked with rice and aromatic spices. Egg pulao can be served with raita or even any spicy curry of your choice. This recipe is an ultimate meal to be enjoyed with family on weekends. If you want the pulao to be more or less spicy adjust the hotness accordingly. Furthermore, Egg Pulao can be cooked in a jiffy when you have sudden guest at home for a meal. Serve Egg Pulao along with Burani Raita, Beetroot Raita or any other Raita of your choice and a roasted papad for your everyday meal. Number Of Ingredients 25

12 Whole Eggs , hard-boiled
1 tablespoon Ghee
1 teaspoon Red Chilli powder
1/4 teaspoon Whole Black Peppercorns , freshly crushed
4 Green Chillies
12 cloves Garlic
2 inch Ginger
3 cups Basmati rice , soaked for 45 mins
1 cup Onions , finely sliced
1 cup Tomato , finely sliced
3/4 cup Curd (Dahi / Yogurt) , whisked well
3 Green Chillies , slit
1/4 cup Mint Leaves (Pudina) , chopped
1/4 cup Coriander (Dhania) Leaves , chopped
1 Lemon juice
Water , as required
1-1/2 teaspoon Cumin seeds (Jeera)
6 Cardamom (Elaichi) Pods/Seeds
2 Bay leaves (tej patta)
2 inch Cinnamon Stick (Dalchini)
1 Star anise
1/2 teaspoon Turmeric powder (Haldi)
8 Whole Black Peppercorns
3 tablespoon Ghee , or oil
Salt , to taste

Steps:

  • To begin making the Egg Pulao recipe, we will firstly fry the eggs. In a pan, heat 1 tablespoon of ghee and add the boiled eggs.
  • Add red chilli powder and toss well. Add freshly cracked pepper and fry until eggs are slightly brown and a little crisp. Keep them aside.
  • The next step is to make the pulao. Take another deep bottom pan or handi, heat ghee or oil.
  • Add cumin seeds, green cardamom, cinnamon, black peppercorns, star anise and fry them for few seconds till the cumin seeds crackle.
  • Meanwhile, add green chilli, garlic and ginger in a grinder and make a paste.
  • Once the cumin seeds crackle, add the ground coarse paste of green chili, garlic, ginger and saute for a minute.
  • Add onions and fry until it just starts picking up the golden color. Do not over-fry the onions.
  • Add sliced tomatoes, slit green chilies and cook until the tomatoes are mushy. Add turmeric and mix everything properly.
  • After 2 minutes, add in the whisked yogurt and stir until the yogurt is well combined with the spices.
  • Add salt, chopped mint, lemon juice and coriander leaves. Cook for half a minute.
  • Add soaked and drained rice and gently mix it. Give a slight slit to the fried eggs and add it along with the water. Bring it to a boil and cook until 80% of the water dries up.
  • Cover and simmer until done. (Approximately for 15 to 20 mins)
  • Gently fluff up the rice using a fork. Cover, let it rest for few minutes and Egg Pulao is ready to be served.
  • Serve Egg Pulao along with Burani Raita, Beetroot Raita or any other Raita of your choice and a roasted papad for your everyday meal.

45ml (3 tbsp) vegetable oil
6 green cardamom pods, crushed
1 cinnamon stick, approximately 10cm (4in) long
1 onion, finely chopped
1 garlic clove, crushed
370g (2 cups) basmati rice
2g (1 tsp) ground cumin
2g (1 tsp) ground turmeric
2 whole cloves
2 bay leaves
750ml (3 cups) water

Steps:

  • Heat the oil in a large saucepan and gently fry the cardamom and cinnamon until the spices' aromas are released, which should take about 5 minutes.
  • Add the onion and gently fry for around 5 minutes, or until it has softened and has become translucent.
  • Add the garlic and stir fry for another 2 minutes.
  • Tip in the rice, cumin, turmeric, cloves and bay leaves.
  • Stir vigorously then pour in the water.
  • Turn up the heat, give it another stir then wait for a slow simmering point to be reached.
  • Once it slowly simmers, cover the saucepan with a tight-fitting lid and cook for about 15 minutes or until the rice is cooked.
  • Fluff up the rice with a fork and serve immediately with your favourite curry. Enjoy!

SOUTH INDIAN EGG CURRY WITH RICE & LENTIL PILAU



South Indian egg curry with rice & lentil pilau image

Try something new with this aromatic, vegetarian, tomato-based curry packed with boiled eggs and served with spiced basmati

4 tbsp vegetable oil
1 ½ tsp mustard seeds
1 ½ tbsp curry leaf
2 large red onions , chopped
50g ginger , peeled and finely chopped
1 tsp turmeric
½ tsp chilli powder
2 x 400g cans chopped tomatoes
1-2 tsp sugar
8 eggs
small bunch coriander , chopped
250g basmati rice
140g split red lentil
4 tbsp vegetable oil
2 onions , sliced
50g ginger , peeled and finely chopped
3 whole green chillies , deseeded
2 bay leaves
mango chutney, natural yogurt and naan bread (optional), to serve

Steps:

  • Mix the rice and lentils in a bowl. Cover with cold water and soak for 15 mins.
  • Meanwhile, for the curry, heat the oil in a wok or medium saucepan, then toss in the mustard seeds followed by the curry leaves. Once the leaves have stopped spluttering, reduce the heat and add the onions and ginger. Fry over a medium heat for about 10 mins until golden.
  • Stir in the turmeric and chilli powder and cook for a few more secs. Tip in the tomatoes and sugar. Simmer, uncovered, for 10-15 mins until thickened, adding a splash of water if needed. Meanwhile, boil the eggs for 8 mins, then cool under cold running water before peeling and halving. Add to the curry and cover with a tight-fitting lid.
  • To cook the pilau, heat the oil in a pan and cook the onions, ginger and chillies until softened - about 10 mins. Drain the rice and lentils and add to the onions along with the bay leaves.
  • Pour over enough water to cover the rice and lentils by a depth of 3cm - about 600ml. Simmer, uncovered, until tender and the cooking liquid has been absorbed.
  • Stir the coriander into the curry and fluff up the rice. Serve with mango chutney, yogurt and naan, if you like.

SPICED AUBERGINE PILAF WITH POACHED EGGS

2 aubergines , cut into 2.5cm chunks
1 tbsp olive oil
200g basmati rice
25g butter
1 red onion , sliced
1 tbsp curry paste
450ml hot vegetable stock
4 eggs , fridge cold
juice 1/2 lemon
30g bag cashew nuts, roughly chopped
½ pack mint , leaves only, large ones torn
150g Greek yogurt

Steps:

  • Heat oven to 200C/180C fan/gas 6. Put the aubergines in a roasting tin, drizzle over the oil and some seasoning, then toss them together. Roast for 20 mins until tender and golden brown, turning once or twice.
  • Meanwhile, rinse the rice, then soak in cold water for 5 mins. Heat the butter in a pan over a low heat, add the onion and cook gently for 8 mins until softened. Drain the rice and add to the pan, stirring to coat in the butter. Cook for 2-3 mins, then spoon in the curry paste, stir, and let it sizzle. Pour over the hot stock, bring to the boil, then cover and turn the heat down to the lowest setting. Cook for 15 mins, then turn off the heat and let the rice steam for 10 mins - don't lift the lid.
  • Bring a large pan of water to the boil and poach the eggs, 2 at a time, then drain well. Stir the aubergines through the rice, squeeze over the lemon juice, then taste for seasoning. Divide the pilaf between plates and top with a poached egg, cashew nuts and mint leaves. Serve with a dollop of yogurt.

4 cups chicken stock
1 teaspoon salt
pepper
1/8 teaspoon onion salt
1 tablespoon parsley, chopped
4 tablespoons butter
4 eggs, slightly beaten

Steps:

  • Wash rice thoroughly; drain.
  • Place chicken stock and salt in a deep pot; heat to boiling point.
  • Add rice slowly. Cook, covered for 20 minutes, or until rice is tender. The rice should absorb all of the liquid.
  • Add seasonings, butter, and slightly beaten eggs.
  • Beat 2 minutes, serve at once.
