1 1/2 cups shredded cheddar cheese

If the casserole is browning too quickly, cover with a foil for the last bit of baking time.
  • Let the casserole sit for 10 minutes before cutting and serving.

HASH BROWN EGG CASSEROLE WITH HAM

Hash Brown Egg Casserole with Ham image

This Cheesy Hashbrown Breakfast Casserole is everything you need on Christmas morning! (Or anytime you have guests for breakfast!) Frozen hashbrowns are baked til crispy, then topped with eggs, cheese, and black forest ham. It's an overnight recipe, so you have more time for stockings in the morning! Make ahead breakfasts are always a win at the holidays.

Provided by Karen

Categories     Breakfast

Time 1h25m

Number Of Ingredients 13

1 (30-ounce) package frozen shredded hashbrowns
1/2 cup melted butter (1 stick)
salt and pepper
1 & 1/2 cups shredded Monterey Jack cheese (packed )
1 & 1/2 cups shredded Cheddar cheese (packed )
1 & 1/2 cups black forest ham* (cut into bite-size pieces)
8 large eggs
1 & 1/3 cups evaporated milk OR cream
1 teaspoon seasoned salt (I like Lawry's)
1/2 teaspoon kosher salt (use 1/4 if all you have is table salt)
1/2 teaspoon pepper
1/4 teaspoon dry mustard powder (optional)
1/4 teaspoon onion powder (optional)

Steps:

  • Preheat your oven to 400 degrees F.
  • Spray a 9x13 inch pan with nonstick spray, or grease with butter.
  • Dump the bag of frozen hashbrowns into the pan. (There is no need to thaw first.)
  • Melt a stick of butter in a small bowl, and pour evenly over the potatoes. Sprinkle the potatoes with salt and pepper. Use a spoon to gently toss it all together, then spread it out so that it's even.
  • Bake at 400 degrees for 25-30 minutes, until the potatoes are tender and lightly browned on top. You can even nab a forkful to make sure they are done if you like.
  • Remove the casserole and reduce the oven temperature to 350.
  • Layer 1 and 1/2 cups each Monterey Jack and Cheddar cheese over the top of the potatoes (make sure you pack in your cheese! Don't skimp now!) Add the ham. You can either leave it layered or use a spoon to gently toss the cheese and potatoes and ham together. Either way is fine. (I like to toss for a more even distribution.)
  • In a large bowl or stand mixer, whisk together 8 eggs, 1 and 1/3 cups evaporated milk OR cream, 1 teaspoon seasoned salt, 1/2 teaspoon kosher salt (use less if all you have is table salt!), 1/2 teaspoon pepper, 1/4 teaspoon dry mustard, and 1/4 teaspoon onion powder. Beat well.
  • Pour the egg mixture evenly over the top of the casserole, making sure everything gets wet.
  • Bake at 350 degrees for about 40 minutes. It is done when bubbly. The edges should be starting to brown and the center should not wiggle when you shake the pan.
  • If the center of the casserole looks very wobbly but the top is starting to brown too much, cover with foil for the last few minutes of baking.

Provided by 2 sisters recipes

Categories     Breakfast Breads and Lattes

Time 40m

Number Of Ingredients 13

1/2 Tbsp. extra virgin olive oil
1/4 cup diced Italian pancetta
1/2 cup chopped onion (1 small onion)
3 whole eggs
5 egg whites
2 to 3 cups packed fresh baby spinach - rinsed, then thinly sliced
3/4 cup shredded mozzarella
1/2 cup heavy cream, or half and half
dash of ground turmeric
dash of cayenne pepper
1/4 tsp. salt
1/8 tsp. garlic powder
fresh cracked pepper, to taste

Steps:

  • Preheat oven to Bake at 350 degrees F. (175 degrees C)
  • Using a small baking dish, an 8 X 8-inch glass baking dish, or 7 X 10-inch baking pan.

  • In a medium-size mixing bowl, divide the egg whites from the yolks. Save the 5 yolks in the fridge to use the next day for another recipe.
  • Whisk whole eggs with egg whites. Toss in spinach, mozzarella, heavy cream, along with all the seasonings, and then add in the onions and pancetta. Whisk until well combined.
  • Pour the entire mixture into the 5 x 8 casserole dish. Or into a 12 muffin pan.
  • Place the baking dish on the middle rack in the oven.
  • BAKE for 22 to 25 minutes, or until the sides and bottom are golden browns.
  • Remove and let it sit for a few minutes. Cut into squares and serve.

Categories     Breakfast

Time 1h5m

Number Of Ingredients 7

1 tablespoon Coconut Oil (plus more for coating the dish)
1 lb Ground Turkey
1/2 teaspoon Paprika
1/2 teaspoon Garlic Powder
12 large Eggs
1 small Sweet Potato (peeled and sliced thin)
1 cup Baby Spinach

Steps:

  • Preheat the oven to 375℉ and grease a 9 x 9 baking dish with coconut oil and set aside.
  • Peel and slice the sweet potato, making sure to cut them 1/4-inch slices (any thicker and they won't be tender). Line the bottom of the greased baking dish with the sliced potatoes in a single layer, some overlap is okay.
  • Melt 1 tablespoon of coconut oil in a medium-sized skillet over medium heat add the ground turkey and season with additional spices if desired. Using a spatula break the meat apart and cook until browned, about 3 to 5 minutes. Drain and place on top of the sweet potato layer.
  • In a medium bowl beat the eggs with a whisk until combined. Add the paprika, garlic powder, and any additional salt and pepper if desired. Pour over the ground turkey layer.
  • Place the dish in the oven and cook for 30 minutes. Carefully slide the dish out, without removing it from the oven, and top with the spinach. Return to its position and continue cooking for 5 to 15 minutes until the center of the casserole is firm. I usually cook my casserole for 40 to 45 minutes in total.

EGG CASSEROLE

Egg Casserole image

This fluffy Egg Casserole is perfect for busy mornings or serving a crowd. Add your favorite meats, vegetables or cheeses to create an Egg Casserole you will love!

Provided by Allison - Celebrating Sweets

Categories     Breakfast

Time 30m

Number Of Ingredients 6

14 large eggs
1 cup ricotta cheese or small curd cottage cheese
1 tablespoon melted butter
1 cup mix-ins, optional (see note)
2/3 cup grated cheddar (optional)
softened butter (for greasing the pan)

Steps:

  • Preheat oven to 375°. Generously grease a 9x13 baking dish with softened butter.
  • In a large bowl, whisk eggs, ricotta/cottage cheese, melted butter, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Whisk until well combined. The more you whisk the fluffier the eggs will be. Some curds of cottage cheese might still remain, but that's fine.
  • Pour the eggs into the greased casserole dish. Sprinkle your mix-ins around evenly. Note: if adding cheese, I prefer to add some into the eggs and the rest to the top of the eggs near the end of cook time.
  • Bake until the eggs are puffed and set, approximately 25-35 minutes. Beginning checking at 25 minutes*, then every few minutes until the center is no longer jiggly. A minute or two before you pull it from the oven, top with additional grated cheese. Cut into squares and serve immediately. Leftovers can be stored in the refrigerator and reheated in the microwave.

  • Ukrainian Traditional Egg Noodle Casserole. This traditional Ukrainian dish is one of the most straightforward egg noodle recipes you can make. It requires only four ingredients: egg noodles, milk, eggs, and smoked sea salt.
  • Sweet Noodle Kugel. With sour cream, cottage cheese, sugar, cinnamon, and plenty of butter, this kugel dish may be sweeter than you’re used to eating.
  • Beef Stroganoff. Surprisingly, you can whip up this rich and hearty homemade beef stroganoff in just 30 minutes, and no, you won’t need Hamburger Helper to do it!
  • Pizza Noodle Casserole. Pizza, noodles, and casserole are three things that don’t really go together, unless you combine them using this recipe, of course.
  • Reuben Noodle Casserole. You can also make a mean Reuben casserole with egg noodles in the same fashion. If you love the classic Reuben sandwich but want to try something new, make it in casserole form instead.

  • Set a large skillet over medium heat and coat it with nonstick spray or a drizzle of olive oil. Place sausage in the skillet and begin to break it up with a spatula or fork. Stir in the rosemary and brown the sausage, about 6-7 minutes.
  • Meanwhile, set a 2nd skillet over medium heat and coat it with nonstick spray or a drizzle of olive oil. (If you have a skillet large enough to fit both the sausage and veggies, you can just add the veggies to the sausage that is browning in step 1.) Add the peppers, mushrooms, spinach, onion, garlic, and a sprinkle each of salt and pepper. Begin stirring and cooking the veggies down until tender, about 6-8 minutes.
  • Generously grease a 9×13 baking pan. Break the bread into pieces and place in the pan in an even layer.
