SAUSAGE AND BACON EGG CASSEROLE
Ensure there are enough tasty eggs to go around. This hardy Sausage and Bacon Egg Casserole is packed with delicious breakfast meat and veggie favorites in every bite!

Steps:
- Preheat the oven to 400 F. Prep the casserole dish. Melt 1 tablespoon of butter and use a silicon brush to coat the inside of the casserole dish. Set aside.
- Bake the bacon: While the oven is preheating, line a baking sheet with parchment paper and place 8 ounces of bacon strips side by side on the pan. Place the baking sheet in the oven on the middle rack. Bake around 15 minutes. Check the bacon often to make sure it does not overcook.
- Cook the filling: Cook the sausage in a stove top pan. Place the cooked sausage in the casserole dish. Remove any excess sausage grease from the pan and then sauté the diced onion, peppers and garlic in the remaining grease. When perfectly sautéd with light browning, place in the casserole dish.
- Remove the bacon from the oven and allow to cool before handling.
- Assemble the casserole: Top the sausage and veggies with cheese. After the bacon has cooled, crumble into the casserole dish and mix all the ingredients together until well distributed.
- Whisk the eggs and milk together. Pour the egg mixture over the meat and veggies and lightly mix with a wooden spoon or spatula.
- Add a bit of salt and pepper and green onion slices on top.
- Place the casserole dish in the oven, on the middle rack, and bake for 25-30 minutes.
- Once baking is complete, remove from the oven and allow to cool for 5 minutes before serving.

- Brown sausage and drain; set aside.
- Butter casserole dish.
- Sprinkle half grated cheese on top of butter.
- Crack eggs on top of cheese; break yolks.
- Add salt and pepper.
- Pour unwhipped cream over eggs.
- Top with cooked sausage.
- Top with rest of cheese.
- Bake 30 minutes at 350 degrees Fahrenheit.
- Can be made ahead of time.

Steps:
- Pre-heat oven to 180°C.
- Fry the sausages until browned. Chop into chunky pieces and set aside.
- Fry the onion and bacon until the onion is soft.
- Into a large casserole combine all of the ingredients and mix until well combined.
- Bake uncovered for 30 minutes.
- Stir in the parsley and serve.

Steps:
- Heat oven to 375 degrees.
- Coat a 9x13 pan with Pam.
- Melt butter and mix with the potatoes and onion, then line bottom of prepared pan.
- Brown the sausage over medium-high heat, adding mushrooms about half way through.
- Meanwhile, mix cheddar cheese and cottage cheese.
- Layer 1/2 the cheese mixture, then sausage mixture and bacon bits, then the remaining cheese mixture over potatoes in the pan.
- Pour egg beaters evenly over entire pan.
- Bake for about an hour, or until a knife inserted in the center comes out clean.

A great healthy recipe which works as a winter warmer but also in the summer months. Any variation of vegetables can be used which gives the dish an original taste every time. (All measurements are just suggested amounts, use however much you need to fill your pot)

- Line the bottom of a dutch oven with lettuce.
- Prepare raw vegetables and add them to the pot making sure that they are well mixed.
- Season vegetables with a liberal amount of salt,pepper and mixed herbs, mixing them once more to ensure that the seasoning is spread throughout.
- Place rashers of bacon across the top of the vegetables. (If you don't have enough bacon to cover the top of your pot then more can be used, I have calculated for 1 rasher per person but you may prefer more).
- Cook in oven at 200C for 45-50 minutes.

SAUSAGE-VEGETABLE EGG BAKE

- Preheat oven to 350°. In a large skillet, cook sausage over medium heat 5-7 minutes or until no longer pink, breaking into crumbles. Using a slotted spoon, transfer sausage to a greased 13x9-in. baking dish, spreading evenly. Remove drippings from pan., In same skillet, heat butter over medium-high heat. Add mushrooms; cook and stir until tender, 3-5 minutes. Add Swiss chard, wine and garlic; cook and stir until chard is tender and liquid is almost evaporated, 1-2 minutes longer. Add to baking dish., In a large bowl, whisk eggs, milk, salt and pepper until blended; pour over vegetable mixture. Sprinkle with mozzarella cheese., Bake, uncovered, 45 minutes. Sprinkle with Parmesan cheese. Bake until a knife inserted in the center comes out clean, 10-15 minutes longer. Let stand 5 minutes before serving. Sprinkle with parsley.
