- Apple sauce. Apple sauce is not just for spreading on roast pork. It can be used to add moisture in baking recipes. You can puree the fruit yourself or simply use the stuff from a jar.
- Yogurt. The great thing about using yogurt is that you can experiment by trying various flavours to your bread and cakes. We used vanilla yogurt in this easy cinnamon bread roll recipe.
- Aquafaba. Never heard of it before? The alien name is another word for chickpea juice. It may sound disgusting but the liquid you get in a tin of chickpeas works perfectly in recipes such as meringues.
- Mashed banana. Not only do bananas add natural sweetness to your baking, they count as one of your five a day too. They work brilliantly in pancakes. For one egg use half a banana.
- Chia seeds. They may look like frog spawn when mixed with water, but you can use them in baking and desserts. For one egg use one tablespoon of chia (ground or whole) mixed with three tablespoons of water.
- Flaxseed. These little seeds are also high in fibre and contain Omega-3 essential fatty acids which have been shown to have healthy effects on your heart.
- Tofu. If you crumble firm tofu into a frying pan and add salt, pepper, turmeric, butter and milk, it looks just like scrambled egg. Obviously it doesn't taste exactly the same, but it's a good option if you're craving scrambled eggs on buttery toast and haven't got any eggs to hand.
- Egg replacement. Brands such as Follow Your Heart Vegan Egg, Orgran and Free and Easy offer excellent egg-free powders. While the latter two are best in baking, Follow Your Heart Vegan Egg is great for scrambled egg.
- Apple cider vinegar and milk. If you add a tablespoon of apple cider vinegar to 60ml of milk you will get a bubbly mix which works wonders in cake. Make sure you leave it to curdle for five minutes before adding it to the rest of the cake ingredients.
- Can of fizzy drink. It's true, a can of coke or lemonade can be used to replace three eggs. We tried it in this Betty Crocker cake mix and this is what happened.
