3/4 cup sugar
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 1/2 cups mashed bananas (about 3 bananas)
1 egg
1/2 cup margarine, melted

Steps:

  • Preheat oven to 375°F.
  • Combine dry ingredients in a large bowl and mix well.
  • Combine wet ingredients in a different bowl and beat well together.
  • Add beaten wet ingredients to dry ingredients; stir until moistened.
  • Fill baking cups 2/3 full and bake for 20-25 minute.

1 cup mashed bananas
1 cup creamy salad dressing (such as Miracle Whip®)
¾ cup white sugar
2 cups whole wheat flour
2 teaspoons baking soda
½ teaspoon salt

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix bananas, salad dressing, and sugar in a large bowl until smooth. Stir flour, baking soda, and salt into banana mixture until batter is just moistened. Divide batter evenly into 24 muffin cups.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 17 minutes.

These muffins are delicious and have a great texture, and they are 100% healthy! No refined flour or sweeteners. We have a big family, so this recipe makes a lot of muffins, but it is easily halved for a smaller group. To make the muffins lower in fat, replace half of the oil with unsweetened applesauce. I also use "white whole-wheat" flour, which is softer than that made with red wheat (but has the exact same nutritional value).

2 teaspoons baking soda
1 teaspoon salt
2 tablespoons wheat germ (optional)
2/3 cup olive oil or 2/3 cup canola oil
1 cup honey
4 eggs
2 cups mashed ripe bananas
1/2 cup hot water

Steps:

  • Stir together dry ingredients.
  • Beat oil and honey together; add eggs and beat well.
  • Add bananas and beat to combine.
  • Add dry ingredients to wet, alternating with hot water; mix well after each addition.
  • Spoon batter into 24 greased muffin cups; bake at 325 degrees for 15 minutes, or until muffins are golden brown and test done.
  • Remove from oven and cool on rack.

cooking spray
2 cups whole wheat flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon nutmeg
1 teaspoon cinnamon
2 tablespoons olive oil
4 tablespoons unsweetened applesauce
1/2 cup honey
2 large bananas, mashed
2 eggs
1/4 cup warm water

Steps:

  • Preheat 325. Use cooking spray to lightly grease your muffin pan.
  • Mix dry ingredients.
  • Mix oil, applesauce, honey, eggs, then, bananas.
  • Add liquid ingredients to the dry ingredients gradually while adding warm water occasionally to help moisten the mixture.
  • Bake for about 13 minutes.

3/4 cup packed brown sugar

1 cup frozen blueberries

Steps:

  • Heat the oven to 375°F.
  • Grease or line with paper liners 12 large muffin cups or 24 small muffin cups.
  • In a large bowl, whisk together the eggs, applesauce, oil, brown sugar, vanilla and bananas.
  • Combine the flour, baking soda, and cinnamon.
  • Stir into the banana mixture until moistened.
  • Stir in the blueberries until evenly distributed.
  • Spoon batter into muffin tins.
  • Bake for 20 minutes in the heated oven or until the tops of the muffins spring back when pressed lightly. Do NOT overcook or else they will be too dry.
  • Cool before removing from tins.

  • Preheat the oven to 350 degrees F. Line a muffin pan with paper or silicone liners and set aside.
  • In a large bowl whisk together the flour, baking soda, salt and baking powder. Make a well (hole) in the center of the flour mixture and drop in the eggs, butter, and syrup. Mix with a fork until it just comes together and set aside.
  • In a small bowl mash the two bananas together with the back of a fork. Carefully fold the bananas and walnuts (if using) into the muffin batter and distribute evenly into the 12 muffin cups (or 36 mini muffin cups). Bake until they begin to brown on top and a toothpick comes clean when inserted in the center, about 20 to 22 minutes for regular sized muffins or 12 to 14 minutes for mini muffins.
