4 tablespoons olive oil
1 onion, chopped
3 tomatoes, chopped
1 tablespoon tomato puree
salt and pepper to taste

Steps:

  • In a large skillet over medium heat, cook onion in olive oil until translucent. Stir in tomatoes, cook until juice begins to thicken. Stir in puree, salt and pepper. Reduce heat and simmer 15 minutes more, until rich and thick.

Based on a TV cooking show-I forget which one. A great way to use all the tomatoes that attack from your garden at the end of the summer.

2 cups tomatoes (any type-big,plum,grape,etc.-amount depending on how your garden grows)
1 tablespoon minced garlic
1 tablespoon italian seasoning
brown sugar, to taste
tomato paste, to thicken (optional)

Steps:

  • Core and chop tomatoes into chunks (If using cherry tomatoes-halve, romas-halve) and toss into pot on the stove as you go.
  • Add garlic and seasoning.
  • Simmer 1-2 hours, occasionally pressing tomatoes against side of pan with wooden spoon.
  • Add brown sugar to taste.
  • Add tomato paste (if using) to thicken.
  • Can be made in a crockpot-cook on low for 6-8 hours depending on amount.
  • Cool and freeze for summer taste in winter.

If ever you need Tomato sauce for a recipe but you ran out and all you have is that thick hard to work with tomato paste? Then this is what you need to do to make it a sauce. I came opun this when i needed sauce and only had paste.

1 (6 ounce) can tomato paste
8 -12 ounces water
1 -2 teaspoon salt

Steps:

  • In a medium bowl empty the can of Tomato Paste and the water (simply use the small empty can).*Add less or more water, until you get your desired consistency.
  • With a small wisk to minimize splater start to slowly incorporate the water and paste.
  • Add the salt to taste.
  • Place in a sealable container like an old jam jar and keep in your fridge.
  • Lasts about a week in the fridge and much much longer if frozen, and kept, into small individual servings in the freezer.

  • Wash tomatoes. Cut in half and cut out the butts. Squeeze each tomato half to roughly squash out the seeds. (Don’t worry about removing every seed).
  • Heat olive oil in a saucepan. Add onion, garlic, and dried herbs to pan. Cook over medium heat until veggies are soft and fairly translucent. Set aside.
  • Place prepared tomatoes along with cooked vegetables into a large, wide, heavy bottomed stock pot. Add water and pepper flakes. With heat at medium-high, bring to a boil. Then lower heat so sauce is simmering.
  • Simmer for about 90 minutes (no lid on pot). Check sauce after the first thirty minutes, stirring and removing any loose tomato skins. Repeat the process again in another thirty minutes. By then, you should be able to remove nearly all of the skins.
