  • Mix all ingredients in 3- or 4-quart saucepan. Heat to boiling over medium heat.

2 teaspoons chicken bouillon granules
2 (15 ounce) cans Great Northern beans
⅓ cup diced carrots
⅓ cup diced onion
1 small stalk celery, diced
½ teaspoon minced garlic
1 bay leaf
¼ teaspoon ground black pepper
½ (8 ounce) pre-cooked ham steak, diced
salt to taste

Steps:

  • Bring water to a boil in a pot; add chicken bouillon and stir until dissolved.
  • Drain and rinse 1 can Great Northern beans. Reduce heat to low and stir drained beans and remaining can of undrained beans into bouillon mixture in the pot. Add carrots, onion, celery, garlic, bay leaf, and black pepper to pot; bring soup to a boil.
  • Stir ham into soup, reduce heat to low, and simmer until vegetables are tender, about 30 minutes. Season with salt.

1 (20 ounce) package 15 bean mixture, soaked overnight
1 ham bone
2 ½ cups cubed ham
1 large onion, chopped
3 stalks celery, chopped
5 large carrots, chopped

1 (12 fluid ounce) can low-sodium vegetable juice
3 cups vegetable broth
2 tablespoons Worcestershire sauce
2 tablespoons Dijon mustard
1 tablespoon chili powder
3 bay leaves
1 teaspoon ground black pepper
1 tablespoon dried parsley
3 tablespoons lemon juice
7 cups low fat, low sodium chicken broth
1 teaspoon kosher salt

Steps:

  • Place the soaked beans into a large pot and fill with enough water to cover by about 1 inch. Bring to a boil, then simmer over low for 30 minutes. Drain. Add the ham bone, ham, onion, celery, carrots, tomatoes, vegetable juice, and vegetable broth. Season with Worcestershire sauce, Dijon mustard, chili powder, bay leaves, pepper, parsley and lemon juice. Pour in enough of the chicken broth to cover the ingredients.

2 lbs dried great northern beans, rinsed, drained & picked over
4 ham hocks, 2 fresh and 2 smoked or 4 ham bone
2 onions, chopped
2 cloves, garlic minced
3 potatoes, pared and cubed
3 carrots, diced
1 cup celery, diced
3 quarts water
2 teaspoons dried thyme
1 teaspoon dried marjoram
1 teaspoon pepper
1/2 teaspoon rubbed sage

Steps:

  • Put rinsed beans in pan and cover up to 2 inches past beans in large pot -- let sit overnight.
  • Drain, put beans back in pot, add water and the rest of ingredients.

  • Take out bones and dice up any meat on bones and put back into pot -- You can add more ham if you want.
  • Discard fat and bones.

1 (16 ounce) can lima beans
1 (16 ounce) can chili beans (I use Brooks Mild Chili beans)
1 lb lean ham, cubed (I used left over Easter ham)
1 (10 ounce) can condensed tomato soup
1 (1 1/4 ounce) envelope dry onion soup mix
4 cups hot water

Steps:

  • Spray crock pot with nonfat cooking spray. Pour all cans of beans in cooker.
  • With a hand-held mixer beat beans in crock pot on high speed for 1 minute to make a thick base for the soup.
  • Add cubed ham, tomato soup, onion soup mix and water. Stir until well mixed. Cover and cook on high for 2 to 3 hours or on low for 4 to 6 hours.
  • Directions for stove top: Cook on medium- low heat for about an hour. Stir often.

1 (20 ounce) package dry beans (I recommend Hurst 15 Bean blend, with included spice packet)
1 ham bone
2 1/2 cups ham, chopped
1 cup bacon bits (please use real bacon bits, not imitation salad topping)
5 large carrots, chopped, divided in half
3 stalks celery & leaves, chopped, divided in half
1 large onion, chopped, divided in half
10 cups chicken broth, divided
3 bay leaves
2 tablespoons Worcestershire sauce
3 drops liquid smoke
2 tablespoons Dijon mustard (or spicy brown)
1 tablespoon chili powder
1 tablespoon dried parsley
1 teaspoon ground rosemary
1 teaspoon black pepper, ground
1 (12 ounce) can vegetable juice (V8)
2 (10 ounce) cans diced tomatoes and green chilies (Rotel)
3 tablespoons lemon juice (approximately 1 large lemon)

Steps:

  • Notes before you begin: Sort through your beans carefully and discard any small stones or debris, and any damaged beans. Rinse the beans with cool water. You have two options for preparing your beans before you cook them. You can either 1) soak them overnight in cold water, or 2) cover the beans with water, bring to a boil for 5 minutes, then turn off the heat, cover the beans and let rest for 70 minutes in the hot water. Drain the beans and add them to a large stock pot. Now your beans are ready to use.
  • To your stock pot and beans, add the ham bone, chopped ham, bacon bits, half the onion, half the celery, half the carrots, and enough broth to cover 2 inches over the beans. Season with Worcestershire sauce, Liquid Smoke, Dijon mustard, chili powder, bay leaves, pepper, parsley, rosemary.
  • Simmer uncovered over low heat, stirring occasionally, for about 2.5 hours. Add more chicken broth as needed to keep beans covered.
  • Remove the ham bone. Add diced tomatoes and chillies, vegetable juice, and remaining vegetables. Continue to simmer for 1 hour. Add more broth as needed.
  • Add the seasoning packet that came with the dry beans. Add lemon juice. Add salt and pepper to taste. Simmer for 30 minutes while you make cornbread, rice, or other side dishes. Remove bay leaves before serving.
  • TIPS: It is important that you don't add acidic ingredients such as tomatoes or lemon juice until the end of the cooking process as noted above. Acid tends to affect cooking times and can make beans tough and chewy.
  • Beans contain a natural sugar called Riffanose that is not digestible by the human body and can cause excess gas. One way to cut down on the gas is to cook a large, peeled potato with your beans for at least one hour. I cut the potato in half and add it during the first hour of cooking. Be sure to take it out and discard it. Eating it can make you sick to your stomach, as the potato absorbs a large percentage of the Riffanose.
  • Finally, it's important to note that it takes several hours for the flavor of this soup to properly develop, so resist the urge to taste it until the last 30 minutes. Definitely do not add salt until the end because it tends to get saltier as the broth cooks out. If you find it to be too salty, add hot water. As with any soup or stew, the flavor is best the next day, so feel free to make ahead. This soup can be made in the crock pot, using a full 8 hours cooking time. It freezes well.

4 packaged ham hocks
1 1/2 cups of dry beans (I prefer pinto beans or navy beans)
3 large red potatoes, diced
2 large carrots, chopped
1 large onion, diced
1 chicken bouillon cube
salt and pepper

Steps:

  • .In a crock pot let the beans sit on low in water for about an hour till they are a little soft (make sure they are not to soft, they should still not be edible!).
  • Place thawed ham hocks and beans into a large cooking pot and fill the pot half way with water and turn the heat on medium-medium high heat. Let it start to boil and make sure to stir every now and then (the beans like to stick to the pot.
  • When it's boiled for about 10 minutes place in potatoes and let boil till the potatoes start to soften.
  • After the potatoes have started to soften throw in the the carrots and onions and stir in the chicken bouillon cube.
  • Let boil another 20 or 30 minutes then add salt and pepper to taste, and let the heat down to low.
  • Warning! If you don't turn the heat down or off the beans will turn the whole soup into mush!
  • With a sharp knife and a pair of tongs, grab the ham hocks (warning hot!) and start cutting off the good meat from the bone (I always leave in a little bit of fat for taste, not for eating though). Careful these suckers are slippery so use a cutting board. Discard bones once the meat has been removed (or give them to your dogs as a treat).
  • Once the meaty chunks have been stirred in you can serve hot with cornbread! YUM!

3 cups potatoes, peeled and cut into 1-inch cubes
2 cups ham, cubed, cooked
1 cup onion, chopped (1 large)
4 cups water
1 tablespoon cooking oil
1/4 cup all-purpose flour
1 tablespoon fresh dill, snipped or 1 teaspoon dried dill, crushed (I do not like dill so I added 1/2 tsp. basil and 1 bay leaf.)
1/4 teaspoon salt
1/4 teaspoon black pepper
1 cup half-and-half or 1 cup light cream

Steps:

  • In a 4- or 6-quart pressure cooker combine green beans, potatoes, ham, onion, water, and oil. Lock lid in place. Place pressure regulator on vent pipe. Over high heat, bring cooker up to pressure.
  • Reduce heat just enough to maintain pressure and pressure regulator rocks gently; cook for 3 minutes.
  • Quick-release the pressure. Carefully remove the lid.

1 red onion
2 -3 garlic cloves
2 spring onions

1/4 cup basil

  • Heat 1 tbsp stock in large pot and saute finely diced red onion, finely sliced ham (I used deli leg off the bone) and garlic for about 5 minutes.

1 pound dry great Northern beans
8 cups water
½ teaspoon salt
1 ham hock
1 cup chopped carrots
½ stalk celery, chopped
1 cup chopped onion
1 teaspoon minced garlic

2 cups chopped ham
½ teaspoon ground white pepper

Steps:

  • Rinse the beans, sorting out any broken or discolored ones. In a large pot over high heat, bring the water to a boil. Add the salt and the beans and remove from heat. Let beans sit in the hot water for at least 60 minutes.
  • After the 60 minutes of soaking, return the pot to high heat and place the ham bone, carrots, celery, onion, garlic, mustard and bay leaves in the pot. Stir well, bring to a boil, reduce heat to low and simmer for 60 more minutes.
  • Remove ham bone and discard. Stir in the chopped ham and simmer for 30 more minutes. Season with ground white pepper to taste.

I was looking for a recipe to use parmesean cheese rinds and found this recipe. The rind is the outer edges, furthest away from the center, of cheese that has been formed into a disk or wheel of cheese. On some types of cheese, the outside of the cheese is often a wax coating covering the Rind which is the section closest to the outside that begins to harden as the cheese ages. Since the hardened Rind is not considered to be good for eating or grating, it often cut from the cheese and used as a seasoning for foods. The Rind from Parmigiano-Reggiano cheese is very popular as a flavoring to be added to soups, stews, dried beans, soup broth, and canned or fresh vegetables. To save the Rind for future use, wrap it in airtight plastic and freeze. A combination of ingredients makes this soup similar to Italian soups - a very hearty ham and bean soup that goes well with crusty breads and cheese.

  • Continue cooking on simmer for an additional 30 to 45 minutes or until beans are soft.

1 lb dry pinto beans
8 cups water
4 cups water
1 1/2-2 lbs meaty smoked pork hocks
1 large onion, chopped (about 1 cup)
1/4 teaspoon ground black pepper
chopped red onion, for garnish (optional)

Steps:

  • Sort and rinse the beans and place in a 4 1/2 quart (or larger) dutch oven.
  • Add 8 cups of water. Bring to boiling and reduce heat.
  • Simmer, uncovered, 2 minutes. Remove from heat, cover and let stand for 1 hour.
  • Alternatively, place beans in dutch oven and cover with 8 cups of water. Cover and let soak overnight. (Do not do this step if you do steps #1-3.).
  • Drain and rinse beans.
  • Put the beans back in the dutch oven and add 4 cups of water and remaining ingredients (except red onion).
  • Bring to a boil and reduce heat.
  • Simmer, covered, for 1 1/4 to 1 3/4 hours or until the beans are tender and beginning to split.
  • Check beans occasionally during cooking. Add water if necessary, or you can remove the lid the last 10 minutes of cooking if the beans are too runny.
  • Remove from heat.
  • Remove pork hock and cool slightly. Trim off meat and chop, return meat to the beans. Heat through.
  • Add salt to taste if your pork isn't very salty.
  • Top with red onion, if desired.
  • To serve, place a piece of cornbread in a bowl and spoon the soup over the cornbread.
