THAI FRIED BANANAS (KLUAI KHAEK)
Steps:
- Gather the ingredients.
- Heat a wok or skillet with oil about 3/4 to 1-inch deep.
- Meanwhile, prepare the bananas by peeling and slicing them in half. Then slice each section in half again, but lengthwise this time.
- In a medium mixing bowl, place all-purpose flour, 1/4 cup of rice flour, cornstarch, salt, and 2 tablespoons of the shredded coconut and stir to combine.
- In a measuring cup, mix together cold water with baking soda until dissolved and pour into bowl with flour mixture.
- Add the egg and the vanilla. Stir well until fully combined.
- Place remaining 1/3 cup rice flour in a separate, dry bowl and add remaining one tablespoon shredded coconut. Mix well and set next to the batter.
- Dip banana pieces first in the batter, then gently dredge them in the rice flour-coconut mixture. This last step helps firm up the batter and is the secret to creating a crisp, rather than soggy, coating. (Depending on the size of your bananas, you might need to make more of this rice flour-coconut mixture.) You're now ready for frying.
- Make sure the oil is hot (350 to 375 F). You can test it with a breadcrumb. If it sizzles and cooks within a few seconds, the oil is hot enough for frying.
- Carefully place coated bananas in the hot oil. Fry approximately 1 minute per side, or until batter puffs up slightly and turns light- to medium-golden brown. Remove from heat and drain on paper towel.
- Serve your fried bananas as soon as possible as is, or with a side of coconut or vanilla ice cream. For a fancier presentation, place them on a serving platter and sprinkle with confectioners' sugar.

- Leave to rest for one hour.
- Peel the bananas and slice each one in half lengthwise, then across into chunks about three inches long.

- Drain quickly on a wire rack or paper towel, and serve warm.

- Cut each banana in half crosswise. Lay the banana in the center of the spring roll wrapper, with the wrapper set diagonally. Fold in the two points of the wrapper on the ends of the banana, and then fold up one side and tuck it over and under the banana, then roll until the wrapper is snugly around the banana. Secure the end by dipping your finger in a little water and wetting the ends of the wrapper to "glue" them shut.
- Put about 1 inch of vegetable oil into a frying pan, and heat until it is hot enough to make the banana sizzle when it is placed into the oil. Reduce the heat to medium high and fry, turning until all sides are golden brown. Remove from the oil and drain on paper towels. Serve while they are hot and crunchy!

- Sift the self-rising flour, the rice flour and salt into a bowl. Add enough water to make a smooth batter then mix in the roasted sesame seeds.
- Heat vegetable oil in a wok or deep fryer to 375 degrees Fahrenheit. Dip each banana piece into the batter until fully coated then fry a few pieces at a time until crisp and golden. Remove the banana pieces with a large slotted spoon or a wire basket and drain on some paper towels.

THAI FRIED BANANAS
This is one of my favorite recipes. I have it every time I go to a Thai restaurant topped with coconut ice cream or drizzled with honey. If you have never tried it, now is the time, it's so good! I use Nam, a variety of banana which can be found at most Asian Markets. You can also use sweet potatoes in this recipe.

- In a medium bowl, mix rice flour, tapioca, sugar, salt and coconut. Stir in water, a little at a time, and mix to form a thick batter.
- Peel the bananas and cut each lengthwise into 3 or 4 pieces. Heat oil in deep-fryer or deep wok to 375 degrees F (190 degrees C).
- Completely coat each banana slice in batter, then fry in hot oil until golden. Drain on paper towels. Serve at once.
- Serve with Coconut Ice Cream (vanilla ice cream with honey will do if coconut ice cream is not available).
