An easy to make one dish meal that I found in a grocery store cookbook. Add hot rolls and it is dinner! Yum!

1 lb boneless round steak, pounded or 1 lb boneless round steak, swissed by machine
1 cup carrot, sliced
1 large onion, halved and thinly sliced
1 (12 ounce) jar home-style beef gravy
1 (14 1/2 ounce) can diced tomatoes
1/4 teaspoon thyme
1/2 teaspoon pepper
garlic instant mashed potatoes, 1 box prepared as instructed on the box
1/4 teaspoon thyme
1 teaspoon dried parsley

Steps:

  • Heat oven to 325 degrees Fahrenheit.
  • Cut beef into serving size pieces and arrange in 2 quart baking dish.
  • Top beef with carrots and onion.
  • In a bowl, combine gravy, tomatoes, 1/4 teaspoon thyme and pepper; mix well.
  • Pour gravy mixture over meat and vegetables.
  • Cover with foil.
  • Bake for 2 hours.
  • Make the instant garlic mashed potatoes as instructed on the package, adding 1/4 teaspoon thyme and dried parsley.
  • Uncover meat, top with dollops of potatoes (you can pipe the potatoes on top to make it prettier if you want).
  • Bake uncovered an additional 20 minutes until potatoes are just light brown.

For dinner tonight, try Alton Brown's Swiss Steak cutlets from Good Eats on Food Network, cooked in bacon drippings and smothered in an oniony beef gravy.

2 pounds beef bottom round, trimmed of excess fat
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
3/4 cup all-purpose flour
1/4 cup vegetable oil or bacon drippings
1 large onion, thinly sliced
2 cloves garlic, minced
2 stalks celery, chopped
1 tablespoon tomato paste
1 (14.5-ounce) can diced tomatoes
1 teaspoon smoked paprika
1 teaspoon dried oregano
1 tablespoon Worcestershire sauce
1 1/2 cups beef broth

Steps:

  • Preheat the oven to 325 degrees F.
  • Cut the meat with the grain into 1/2-inch thick slices and season on both sides with the salt and pepper. Place the flour into a pie pan. Dredge the pieces of meat on both sides in the flour mixture. Tenderize the meat using a needling device, until each slice is 1/4-inch thick. Dredge the slices on both sides once more and set aside.
  • Add enough of the bacon drippings or vegetable oil to just cover the bottom of a 4 to 5-quart Dutch oven set over medium-high heat. Once the oil begins to shimmer, add the steaks to the pan, being careful not to overcrowd. Cook until golden brown on both sides, approximately 2 minutes per side. Remove the steaks to a plate and repeat until all of the steaks have been browned.
  • Remove the last steaks from the pot and add the onions, garlic, and celery. Saute for 1 to 2 minutes. Add the tomato paste and stir to combine. Next add the tomatoes, paprika, oregano, Worcestershire sauce and beef broth and stir to combine. Return the meat to the pot, submerging it in the liquid. Cover the pot and place it in the oven on the middle rack. Cook for 1 1/2 to 2 hours or until the meat is tender and falling apart.

½ teaspoon salt
¼ teaspoon ground black pepper
2 pounds beef round steak, cut 1-inch thick
2 tablespoons vegetable oil
¼ cup water, or as needed
1 (14.5 ounce) can diced tomatoes
½ cup minced green bell pepper
1 teaspoon onion powder
½ teaspoon salt
⅛ teaspoon ground black pepper

Steps:

  • Stir flour, 1/2 teaspoon salt, and 1/4 teaspoon black pepper together in a bowl. Sprinkle pieces of steak with flour mixture and pound the flour mixture into the meat with a meat mallet or the edge of a sturdy plate.
  • Heat vegetable oil in a large skillet over medium heat; cook the floured beef in the hot oil until browned on both sides, about 15 minutes. Reduce heat to low, pour in water, cover skillet, and simmer beef until tender, about 1 hour. Add more water to the skillet if needed to prevent burning.
  • Mix diced tomatoes, green bell pepper, onion powder, 1/2 teaspoon salt, and 1/8 teaspoon black pepper in a bowl. Pour tomato mixture over beef, bring to a simmer, and cook until sauce has thickened, about 30 more minutes.

1/2 teaspoon salt

2 pounds beef top round steak, cut into serving-size pieces

GRAVY:
1/4 cup all-purpose flour
1/4 teaspoon salt

1-1/4 cups beef broth or water

Steps:

  • Preheat oven to 325°. In a large shallow dish, combine flour, salt and pepper. Pound steak with a mallet to tenderize. Add meat, a few pieces at a time, and toss to coat., In an ovenproof Dutch oven, brown steak in oil on both sides. Arrange onion slices between layers of meat. Add water and Worcestershire sauce. , Cover and bake 2 to 2-1/2 hours or until meat is very tender. Remove to a serving platter and keep warm. , In a small bowl, combine flour, salt, pepper and broth until smooth; stir into pan juices. 2 pounds cube steaks, pounded thin and cut into bite-sized pieces
1 ½ tablespoons all-purpose flour

1 (1.2 ounce) package brown gravy mix
2 (14.5 ounce) cans stewed tomatoes
1 (12 ounce) package egg noodles

Steps:

  • Heat oil in a Dutch oven over medium heat. Dredge steak strips in flour. Working in batches, place strips in hot oil. Fry until browned on both sides. Remove to a warm platter. 2 (1/2 pound) beef sirloin tip steaks

1 ½ teaspoons dried oregano
1 bay leaf

1/3 cup flour
1/2 teaspoon garlic salt
1/4 teaspoon pepper
2 lbs cube steaks
3 tablespoons vegetable oil
2 (8 ounce) cans tomato sauce
1 (1 1/3 ounce) package dry onion soup mix
1 cup sour cream

Steps:

  • Combine first 3 ingredients.
  • Dredge cube steak in flour mixture.
  • Heat oil in a dutch oven over medium-high heat; add steak, in batches, and cook until no longer pink.
  • Return all steak to pot.
  • Stir in tomato sauce and soup mix; bring to a boil.
  • Cover, reduce heat, and simmer 15 minutes.
  • Remove steak to serving platter, reserving liquid in pot; keep warm.
  • Stir sour cream into tomato mixture; simmer, stirring constantly, until heated. Do Not Boil.
  • Serve over steak.
  • To Freeze: Combined the flour, garlic and pepper and dredged the cube steaks.
  • Fry the meat quickly in the oil to brown and crisp rather than cooking.
  • Set aside to cool.
  • Add the tomato sauce and soup mix to the pan and cool.
  • Freeze the meat and sauce in separate ziplok bags.
  • To Serve: After thawing add the meat and sauce to the pan.
  • Simmer for 15 minutes or until the meat is heated through.
  • Remove the meat and add the sour cream.

My family loves this family recipe for swiss steak. As a kid I loved to come home from school and smell this cooking in the crock pot. My Mom serves it with white rice or buttered egg noodles, I love it with steamed veggies. For easy clean up I use either a Reynolds crock-pot liner (hard to find) or dump all ingredients (except mushrooms or they will be real soft) in a Reynolds oven-bag twist-tie and put the whole thing in the crock pot, pop on the lid and in 6-8hrs, viola dinner.
