Easy calzones make for a fun lunch or dinner. These stuffed pizza pockets are filled with all the classic toppings - meat, cheese and your choice of sauce.

2 lb pizza dough
1 cup pizza sauce
1 cup pepperoni
1/2 cup salami
2 cups shredded mozzarella
1 cup ricotta cheese
2 tbsp oil
1/2 cup parmesan cheese

Steps:

  • Preheat the oven to 475 °F. Line the baking sheet with parchment paper or spray it with oil.
  • Divide the dough into 8 equally sized pieces. Roll each piece into a 1/4" thick circle.
  • Place the filling on half of each circle (pizza sauce, ricotta, pepperoni, salami and shredded mozzarella). Make sure to leave the edges clean to allow for sealing the calzone. Fold the side over the filling and crimp the edges.
  • Place calzones on a baking sheet, leaving space apart. Cut a small vent on the top of each calzone. Brush the tops with oil and sprinkle with parmesan cheese. Bake for 15 minutes or until golden brown.

Nonstick cooking spray, for the baking sheet and plastic wrap
12 frozen unbaked dinner rolls
One 10-ounce box frozen chopped spinach, thawed
1 cup chopped drained canned artichoke quarters
1 cup shredded low-moisture mozzarella
1 cup whole-milk ricotta
1/4 cup grated Parmesan
1/4 cup heavy cream
Freshly ground black pepper
All-purpose flour, for dusting
Warm marinara sauce, for dipping
Serving suggestion: salad

Steps:

  • Coat a baking sheet and some plastic wrap with the cooking spray. Place the rolls on the baking sheet and cover with the plastic wrap. Let thaw and rise for 2 to 3 hours.
  • Meanwhile, make the filling: Place the spinach in a kitchen towel and wring dry. Put in a large bowl, separating any clumps. Add the artichokes, mozzarella, ricotta, Parmesan and heavy cream and stir until combined. Season with pepper.
  • Preheat the oven to 400 degrees F.
  • Roll out each dinner roll on a lightly floured surface into a 5-inch round. Spoon 1/4 cup of the filling on half of each dough round. Dampen the edges of the rounds with water, then fold the dough over the filling to enclose, pressing the edges to seal.
  • Arrange the calzones on 2 baking sheets lined with parchment paper. Bake until golden brown, 10 to 13 minutes.
  • Serve the calzones with the warmed marinara sauce for dipping, and a salad.

Set aside some extra time one weekend to make a dozen of these calzones. Then pack your freezer full of them and know you've got healthy lunches or dinners for those hectic days covered.

3 tablespoons extra-virgin olive oil
1 pound lean ground beef
Kosher salt
1/4 teaspoon crushed red pepper flakes
8 ounces cremini mushrooms, sliced (about 1 cup)
4 cloves garlic, finely minced
6 cups packed baby spinach (about 5 ounces)
One 28-ounce can crushed tomatoes
3 pounds whole-wheat or regular pizza dough
Cooking spray
Whole wheat or all-purpose flour, for the work surface
2 1/4 cups shredded part-skim mozzarella
1 large egg, beaten

Steps:

  • Set a pizza stone or baking sheet on an oven rack in the bottom third of the oven, and preheat to 425 degrees F.
  • Heat 1 1/2 tablespoons of the oil in a large nonstick skillet over medium-high heat. Add the ground beef, 3/4 teaspoon salt and half the pepper flakes, and cook, breaking the beef up into large chunks with a wooden spoon, until the beef is browned all over, about 3 minutes. Add the mushrooms, 2/3 of the garlic and 3/4 teaspoon salt, and cook for 3 minutes more. Fold in the spinach, and cook until wilted, about 1 minute (the mixture should be relatively dry). Transfer the mixture to a large bowl, and let cool completely.
  • Reduce the heat to medium. Add the remaining oil, garlic and pepper flakes to the skillet, and cook, stirring, to lightly brown the garlic, about 1 minute. Add the tomatoes and 3/4 teaspoon salt, and simmer the sauce until thick, about 6 minutes; set aside.
  • Divide the pizza dough into 12 balls. Spray 2 baking sheets with cooking spray. On a well-floured surface, roll out each ball into a 6- or 7-inch circle 1/8 inch thick. On the bottom half of each circle, mound 1/4 cup of the cooled beef mixture and top with 3 tablespoons of the mozzarella. Fold over the top half of the dough to form a semicircle, and pinch the edges to seal. Carefully transfer the calzones with a spatula to the prepared baking sheets. Lightly brush with the beaten egg. Cut 2 small slits on top of each to vent steam.
  • Refrigerate half the calzones. With a spatula, transfer the rest of the calzones to the hot pizza stone or baking sheet and bake until golden brown, about 22 minutes. Repeat with the remaining calzones. Reheat the tomato sauce, and serve on the side.
  • To freeze: Let the baked calzones cool completely, then wrap each one tightly in plastic wrap and then aluminum foil. Place them in freezer bags, and freeze for up to a month. The sauce can be frozen in 12 small freezer bags for up to a month.
  • To reheat: Thaw the frozen calzones in the fridge for 1 to 2 hours. Unwrap the calzones, then microwave them on a microwave-safe plate in 1-minute increments, rotating them after each, until heated through, 2 to 4 minutes. To reheat the sauce, microwave it in a microwave-safe bowl in 30-second increments, stirring after each, until the sauce is hot.

2 tablespoons dried Italian seasoning
3 cups shredded mozzarella cheese
1 cup freshly grated Parmesan cheese
1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry
salt and pepper to taste
1 (32 ounce) package frozen white bread dough, thawed

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • In a large bowl, mix together the ricotta cheese, eggs, Italian seasoning, mozzarella cheese, Parmesan cheese and spinach. Set aside.
  • Divide the bread dough into 8 pieces and roll each piece out to about an 8 inch circle. Spoon about 1/2 cup of the ricotta filling onto each circle, fold over and seal the edges. Place onto a greased cookie sheet.
  • Bake for 30 minutes in the preheated oven, or until nicely browned on the tops and bottoms.

1 Tbsp olive oil, plus more for brushing
8 oz sliced crimini (baby bella) mushrooms
3/4 tsp fennel seed
2 clove garlic, minced
1/2 tsp dried oregano
4 c fresh baby spinach
13.8 oz refrigerated pizza crust dough
3 Tbsp grated parmesan cheese, plus additional for sprinkling
1 c fontian cheese, grated
1/4 c whole milk ricotta
1/4 tsp crushed red pepper flakes
SUN/ROASTED MARINARA
6 oz tomato paste, italian
6 1/2 oz sun dried tomato pesto
14 1/2 oz fire roasted crushed tomatoes
3-4 oz raisins
1 c chianti
1/2 tsp minced garlic
1/2 tsp dried oregano
3 Tbsp finely sliced fresh basil
1 tsp fennel seeds
1 tsp red pepper flakes

Steps:

  • 1. FOR THE CALZONE - Preheat oven to 425°F. Heat 1 tablespoon oil in heavy large skillet over medium-high heat. Add mushrooms and fennel seeds; sauté until mushrooms are brown, stirring often, about 5 minutes. Add garlic and oregano; stir 1 minute. Add spinach; stir just until wilted, about 1 minute. Transfer to medium bowl. Season with salt and pepper. Line rimless baking sheet with parchment. Sprinkle paper with flour. Roll out dough on lined baking sheet to 15 x 10-inch rectangle. Sprinkle Parmesan crosswise over half of crust, leaving 1-inch plain border. Top with Fontina, then mushroom mixture, distributing evenly. Spoon dollops of ricotta cheese over; sprinkle with crushed red pepper. Fold plain half of dough up over filling. Crimp edges tightly to seal. Brush with oil. Bake calzone until puffed and brown, about 18 minutes. Brush with oil, top with additional Parmesan and serve.
  • 2. FOR THE MARINARA - Place raisins in in bowl and soak in Chianti for at least 2 hours. Place raisin/wine mixture in a food processor and pulse until a smooth puree is obtained. Place raisin-wine mixture in a medium sauce pan along with the rest of the ingredients and heat over medium-low heat, stirring constantly, about 5-7 minutes, or until the sauce thickens. Remove from heat and refrigerate for at least 4 hours. Reheat before serving.

Calzones are great to satisfy a pizza craving without having to make an entire pizza. I love the combo of spinach, mushrooms, and tomatoes, though you can really put any pizza toppings you like in this.

1/2 cup whole wheat flour
1 tablespoon active dry yeast
1/4 teaspoon sugar
1/2 teaspoon salt
1/2 cup warm water
2 tablespoons olive oil
1/2 cup unbleached white flour
2 -3 fresh tomatoes, diced
1 1/2 cups cooked spinach
1 cup mushroom
mozzarella cheese
parmesan cheese

Steps:

  • Preheat oven to 375°F.
  • Combine the whole wheat flour, sugar, yeast, and salt in a medium mixing bowl.
  • Warm the water and oil on low until just warm to the touch and not hot. Add to the flour mixture and beat with a spoon until almost smooth. Stir in 1/2 cup white flour.
  • Turn the dough onto a lightly floured surface. Gradually add white flour, 1/2 teaspoons at a time, until smooth and it no longer sticks to your hands or feels tacky. Then knead for several minutes.
  • Oil the mixing bowl. Shape the dough into a ball and place in the bowl, rolling it around until it is coated with oil. Set aside in a warm place to rise for 25 minutes.
  • After the dough rises, place it on a lightly floured surface and either roll with a rolling pin or press and push the dough into a circle. Cut the dough in two.
  • Repeat the above step, rolling the dough out into two circles. Sprinkle with Parmesan, then place 1/2 the tomatoes, spinach, mushrooms, spinach, and mozzarella in the center. Fold the dough over and press closed around edge. You may need to use a little water around the edge to get the dough to stick, or even fold the top over the bottom around the edge to close the calzone.
  • Place calzones onto baking sheet that's been sprayed with nonstick spray. Lightly oil each side of calzone with olive oil. Sprinkle with parmesan and bake for approximately 20 minutes or until golden.

I came up with this recipe as a way to get my kids to eat spinach. Plus I love anything stuffed in dough! I used the refrigerated Pillsbury brand of dough. Feel free to increase or decrease the cheese amount. I tried to stay to a healthy serving size. I am sure other pizza type toppings would taste great inside this too! Please experiment and share your ideas!

Number Of Ingredients 9

1 (13 ounce) package pizza dough
10 ounces frozen chopped spinach (thawed)
1/2 cup sliced mushrooms
1 tablespoon minced garlic
4 ounces cream cheese (I used 1/3 less fat variety)
1/2 cup grated parmesan cheese
salt & pepper, for taste (to season)
1 -2 tablespoon melted butter (for brushing on top of calazones) or 1 egg white (for brushing on top of calazones)
1 (8 ounce) jar marinara sauce (used to dipped calazones in!)

Steps:

  • Heat thawed spinach in a skillet on medium heat. Add garlic, salt, and pepper-stir together. Add cream cheese and 1/4 cup of the parmesan cheese and stir until melted. Add sliced mushrooms and cook 5 minutes more. Remove from heat and let stand.
  • Grease a pizza/cookie sheet. Roll out the pizza dough from the pkg. Stretch the dough to just fit the cooking sheet. Cut the dough into 4 rectangles.
  • Divide Spinach mixture into 4 portions. Drop one portion onto each pizza dough rectangle. Take one corner of the dough and pull it to the opposite corner to enclose the spinach mixture. Pinch close to form a triangle. Brush tops with either melted butter or egg white. Sprinkle tops with remaining parmesan cheese.
  • Bake calazones for 15 minutes or until golden brown. Cool for 5 minutes before serving. Use marinara sauce as a side to dip your calazone in!
