1 pound refrigerated whole-wheat pizza dough
2 tablespoons olive oil, divided, or to taste
2 cloves garlic, minced, or to taste
1 teaspoon garlic powder, or to taste
1 teaspoon onion powder, or to taste

1 cup shredded Italian cheese blend, or to taste
¾ cup ricotta, or to taste
1 cup broccoli florets, or to taste
1 small tomato, sliced
1 tablespoon grated Parmesan cheese, or to taste

Steps:

  • Place a pizza stone on the bottom rack of your oven. Preheat oven to 450 degrees F (230 degrees C).
  • Stretch pizza dough into a round disc on a floured surface. Brush 1 tablespoon olive oil over dough. Sprinkle minced garlic, garlic powder, onion powder, salt, and pepper on top.
  • Cover dough with Italian cheese blend and dollops of ricotta. Scatter broccoli and tomato over cheese. Swirl remaining 1 tablespoon olive oil on top. Sprinkle Parmesan cheese over pizza.
  • Transfer pizza to the preheated pizza stone and bake until the crust is crispy and the cheese is melted, about 20 minutes.

4 Tbsp unsalted butter ((1/2 stick))
1/2 cup heavy cream
1 dash ground nutmeg
1 cup freshly grated Parmesan cheese
salt
black pepper
1 12" Parmesan Black Pepper Pizza Crust ((or your favorite crust))
1 cup shredded mozzarella
1 cup broccoli (chopped)
1/2 cup spinach leaves
1/2 cup cherry tomatoes (cut in half)
1/4 cup freshly grated Parmesan cheese
1/4 cup fresh basil (finely sliced or chopped, optional)

Steps:

  • To make the sauce, melt the butter in a medium saucepan over medium heat.
  • Add the nutmeg and cream to the butter. Whisk to combine. Simmer until the cream is heated through.
  • Turn the heat down to medium low. Add the Parmesan cheese. Stir occasionally until the cheese is melted. You do not want the heat too hot as it will cause the cheese to break and get lumpy.
  • When melted, add salt and pepper to taste. The sauce should be rather thick, much thicker than a normal pasta sauce. Set aside.
  • Prepare the pizza dough if not completed already. If following one of our recipes, follow instructions until the crust is par-baked (just barely cooked) and set aside.
  • Preheat oven to 450F. Place your pizza stone or baking sheet in the oven to heat.
  • Place your pizza crust on a peel or another surface that will allow you to easily transfer it to the oven. Something like a thin and flexible cutting board should work.
  • Season the crust edge if desired by lightly brushing the crust with a little olive oil and sprinkling with some Parmesan, garlic salt, or black pepper.
  • Spread out the alfredo sauce across the pizza to taste. The sauce should be pretty thick in texture.
  • Spread the mozzarella out across the pizza, with more or less to taste.
  • Spread your spinach, broccoli, and tomatoes (or vegetables of choice) over the pizza. Sprinkle with the fresh Parmesan.
  • When the oven is finished preheating, transfer the pizza to your pizza stone or baking sheet.
  • Cook until the cheese has started to turn brown, approximately 10-12 minutes (or to your desired doneness).
  • Remove the pizza from the oven. Sprinkle the fresh basil on top and some red pepper flakes if desired for an extra kick. Serve warm.

1 package (6 ounces) fresh baby spinach

  • In a large skillet, cook pancetta over medium heat until crisp. Using a slotted spoon, remove to paper towels to drain. Saute garlic in drippings for 1 minute. Add spinach; cook just until wilted. Drain spinach mixture on paper towels., In the same skillet, saute mushrooms in oil until tender; add the pepper flakes, salt and pepper. Transfer to a small bowl and let stand for 5 minutes. Stir in the mascarpone cheese, olives and pancetta. , Place crust on an ungreased pizza pan. A fabulous white pizza... again, four cheeses are used (grated parmesan, provolone, ricotta, & mozzarella) as well as fresh broccoli florets. You could substitute with spinach if you like, but we LOVE this recipe as is... I buy the pre-made pizza dough from my grocery store to save time, but you could always make your own of course. Also, I use MILD provolone - it's pre-packaged & pre-sliced think it is Belgioioso brand. Note: I use the 12 oz. bag of "Broccoli Wokly" which is already cut into florets - I steam it according to the package directions first in the bag & use the full bag on the pizza.

1 1 pound refrigerated pizza crust dough (I like Trader Joe's garlic & herb dough for this one) or use your own favorite pizza dough
24 medium cloves garlic (about 2 heads, separated, peel left on)
1 tablespoon + 2 teaspoons olive oil + more for working the crust
1 cup part-skim ricotta cheese (whole milk ricotta works too)
2 tablespoons chopped fresh basil
1 teaspoon honey
1/2 teaspoon dried oregano
1/2 teaspoon kosher salt + more for sprinkling the garlic
1/4 teaspoon freshly ground black pepper
1 10-ounce bag frozen chopped spinach, thawed and squeezed to remove any excess moisture
2 cups shredded mozzarella cheese (divided) (about 8 ounces)
1 1/2 pound boneless, skinless chicken breast
1 teaspoon kosher salt
Freshly ground black pepper
1 tablespoon olive oil

Steps:

  • Preheat oven to 375 degrees Fahrenheit.
  • Drizzle a baking sheet with a little olive oil and place the pizza dough on top to rest before working. (Trader Joe's pizza dough requires 30 minutes sitting at room temperature, so I usually do that first).
  • Lay out a large square of foil and place the garlic cloves on top (be sure you leave the peel on!). Drizzle with 1 tablespoon olive oil and sprinkle with a couple of pinches of kosher salt. Fold the foil into a sealed packet and place in the oven (put it on a baking sheet if you're worried about leaking). Roast the garlic until soft, golden, and fragrant, about 25 minutes. Remove from oven and set aside to cool. Once cool enough to handle, peel the cloves and discard the skins. Increase oven heat to 450 degrees Fahrenheit to prepare it for baking the pizza.
  • Add 8 of the peeled garlic cloves to a small bowl. Smash with a fork. Add the ricotta, 2 teaspoons olive oil, basil, honey, oregano, 1/2 teaspoon kosher salt, and pepper. Mix well.
  • If using chicken, heat the outdoor grill or an indoor grill pan on medium-high. Rub the chicken with 1 tablespoon olive oil and sprinkle with salt and pepper. Cook, flipping occasionally, until cooked through (we always check the internal temperature, which should register 165 degrees Fahrenheit). Set aside to cool. Once cool, cut into chunks.
  • Stretch the pizza crust into a large (approx. 14-inch) round and place on greased cookie sheet or a pizza stone. If creating one meatless version and one chicken version, split the dough in half and stretch each into smaller rounds, approximately 8 inches or so, and place each on an olive-oil-greased cookie sheet.
  • Top the crust(s) with tablespoon-sized mounts of ricotta, as evenly spaced as possible (but it doesn't have to be perfect!) Scatter with spinach and remaining garlic cloves. Top with cooked chicken chunks if using (you may only want to use half of the chicken if you're making two smaller pizzas). Scatter mozzarella cheese over the top(s).
  • Bake at 450 degrees Fahrenheit until the crust is crisp and golden and the cheese is melted and bubbling, 9-10 minutes. Remove from oven and allow to cool for a couple of minutes before slicing into wedges with a pizza cutter and serving.

2 pkg instant pizza crust mix (if using lg cookie sheet as in pic)
1 c fresh spinach leaves or enough to spread over entire pizza
1 c chopped broccoli florets
1 jar(s) alfredo sauce
1 pkg shredded mozzerella

  • 1. Prepare pizza crust as directed. (Some have different temp settings. So just keep an eye on them when baking.) Preheat oven to setting recommended on package.
  • 2. Chop broccoli florets into smaller pieces if you like. Keep spinach whole. It will shrink up when cooked.
  • 3. When dough is ready, spread on cookie sheet. Spread jar of alfredo sauce evenly over dough. Place as little or as much fresh spinach as you desire over sauce. Add chopped broccoli. Sprinkle shredded mozzarella evenly. Bake about 10 - 20 min or until cheese is melted & crust is golden brown.

8 ounces boneless, skinless chicken breasts

4 cups chopped spinach

1/4 teaspoon dried oregano
1/4 teaspoon dried basil
1/4 cup yellow cornmeal
1 (13.8-ounce can) refrigerated classic pizza crust
8 (1-ounce slices) fresh mozzarella cheese
1 head garlic
2 tablespoons olive oil
Kosher salt and freshly ground black pepper, to taste

Steps:

  • Preheat oven to 400 degrees F. Cut head of garlic, about 1/4-inch, to expose tops of garlic cloves. Place garlic head, cut side up, in a sheet of foil. Drizzle with olive oil; season with salt and pepper, to taste. Fold up all 4 sides of the foil and cover tightly. Place into oven and roast until cloves are golden brown and tender, about 35-40 minutes. Let cool before squeezing cloves from skin; reserve and mince 8 garlic cloves.* Preheat oven to 450 degrees F. Lightly coat a baking sheet or pizza pan with olive oil. Heat 2 tablespoons olive oil in a large skillet over medium high heat. Season chicken with salt and pepper, to taste. Heat remaining 1 tablespoon olive oil in the skillet. Stir in spinach until wilted, about 2-3 minutes; season with red pepper flakes, salt and pepper. Set aside. In a small bowl, whisk together ricotta cheese, thyme, oregano, basil and reserved garlic cloves; season with salt and pepper, to taste. Working on a surface that has been sprinkled with cornmeal, roll out the pizza into a 12-inch-diameter round. Transfer to prepared baking sheet or pizza pan.
