EASY SPANISH PORK DIP SANDWICHES

Another one from Southern Living, this crockpot recipe is somewhat similar to Cuban-style pork in flavor. Mojo criollo is a Cuban marinade/sauce made from sour orange juice, garlic, olive oil, and (usually) oregano. Most grocery stores carry mojo criollo now, I think, but you can make your own very easily if you can't find it.

3 tablespoons garlic pepper seasoning
2 teaspoons salt
1 (4 -5 lb) boneless pork shoulder, cut in half
1/4 cup vegetable oil
3/4 cup mojo criollo
2 (7/8 ounce) envelopes pork gravy mix
2 cups water
1/4 cup white vinegar
2 bay leaves
1 medium onion, thinly sliced
8 small French rolls

Steps:

  • Sprinkle roast evenly with garlic pepper and salt. Brown in hot oil in large skillet for 2 minutes on each side or until lightly browned. Place in a 6-qt slow cooker, fat sides up.
  • Combine mojo criollo, pork gravy mix, water, and bay leaves; pour over roast. Top with sliced onion.
  • Cover and cook on high 1 hour.
  • Reduce heat to low and cook 4-5 hours or until meat is tender and shreds easily. Discard bay leaves.
  • Leave the liquid and onions in the crockpot and remove the pork to a large bowl. Shred the pork with two forks. Add 1 cup reserved liquid to moisten the shredded meat.
  • Slice mini French rolls in half. Place shredded pork and onion slices on bottom bread halves and top with the remaining halves.
  • Spoon remaining reserved liquid into individual bowls for dipping.

9 pounds skin-on, bone-in pork shoulder (picnic) roast
1 lime, halved
10 cloves garlic
2 ½ tablespoons salt
1 ½ tablespoons olive oil, divided
1 tablespoon dried oregano
1 ½ teaspoons ground black pepper
1 ¼ teaspoons adobo seasoning (such as Goya®)
1 teaspoon vinegar
¼ teaspoon sazon seasoning
2 (12 fluid ounce) cans or bottles beer (such as Budweiser®)

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Rub pork shoulder all over with lime.
  • Mash garlic into paste in a mortar and pestle or pilon. Transfer to a bowl; mix in salt, 1 tablespoon oil, oregano, black pepper, adobo seasoning, and vinegar.
  • Lift skin off the pork to 1-inch from the narrow part of the bone. Make 3/4-inch slits all over the pork with a sharp knife. Stuff seasoned garlic paste into the slits. Pull skin back over to cover the pork.
  • Mix remaining 1/2 teaspoon oil and sazon seasoning together in a small bowl. Rub over the skin of the pork.
  • Transfer pork to a large roasting pan. Pour in beer. Cover with aluminum foil, sealing well.
  • Roast in the preheated oven until slightly pink in the center, about 3 hours.
  • Increase oven temperature to 350 degrees F (175 degrees C). Uncover pork and continue roasting until skin is golden brown and crispy, about 2 1/2 hours. Remove from oven and let stand for 10 minutes before carving.

LOMO ADOBADO (SPANISH MARINATED PORK LOIN)

An easy Spanish style pork tenderloin fillet. Also works with loin and steaks. Perfect with fresh bread and onions or with spicy rice and vegetables.

Steps:

  • Cut pork into 1cm slices and add to a glass bowl
  • Add minced garlic, olive oil, paprika, oregeno, salt and white wine to pork and mix through so all the pork is covered in marinade.
  • Refrigerate for 1 hour minimum. (Best over night)
  • To cook add olive oil to pan on a medium heat Fry until cooked through (around 10 minutes). Cooking in 2 batches might be necessary if using a smaller pan.
  • Serve with fresh bread or rice and vegetables.

My version of Cuban sandwiches. I used Barb Gertz's Recipe #56080 in the sandwiches and they came out fabulous! This is a hearty sandwich thats crispy on the outside and cheesy on the inside. The pickles are a must!

4 Portuguese rolls
4 tablespoons butter
chicken or pork roast
1/2 lb sliced swiss cheese
sliced dill pickle
Dijon mustard
mayonnaise (or Honey Mustard Dipping Sauce)

Steps:

  • Preheat the griddle.
  • Add mustard to one side and mayonnaise to to the other cut side of the rolls.
  • Build each sandwich with the roasted turkey, pork, cheese, and pickles.
  • Spread outside of roll with butter.
  • Place the sandwich on the hot griddle, cover with a cookie sheet, and place heavy iron skillet or sandwich press to flatten.
  • Grill the sandwich for a few minutes on each side.
  • Slice in half diagonally and serve.

ROAST PORK DIP

This roast pork dip sandwich, with shredded meat slathered in a rich roux-based dipping sauce, comes from Brian Landry, the chef and an owner of Borgne Restaurant in New Orleans. Pork butt, pierced with garlic slivers and rubbed with fresh rosemary, is slow-roasted until meltingly tender on a bed of vegetables that flavor the final sauce. The meat can be made ahead and then reheated before it is tucked into a crusty roll, a delicious tweak on the po' boy. "They say the sign of a good po' boy is how many napkins it takes to get through a sandwich," Mr. Landry said. "This one takes a lot of napkins." At Borgne he garnishes it with crispy fried onions, Tabasco-enhanced mayonnaise and melted Swiss cheese.

1 bone-in pork butt (approximately 5 to 7 pounds)
1 head garlic, broken into individual cloves and peeled
Kosher salt
Black pepper
1 tablespoon fresh thyme, finely chopped, plus 1 teaspoon leaves
2 teaspoons fresh rosemary, finely chopped
3 celery stalks, roughly chopped
1 carrot, roughly chopped
1 onion, roughly chopped
2 fresh bay leaves
4 cups chicken stock
1 cup white wine
1/2 cup crushed tomatoes
3 tablespoons unsalted butter
3 tablespoons all-purpose flour
Crusty rolls or baguette

Steps:

  • Heat oven to 400 degrees. Using a small knife, make several incisions about 1/2 inch long and 1 inch deep all over the pork. Cut garlic cloves in half lengthwise and insert garlic pieces into each incision. Generously season pork all over with salt, pepper, chopped thyme and rosemary.
  • Place celery, carrot, onion and bay leaves in a large roasting pan. Lay pork butt on top, fat side up.
  • Roast pork for 30 minutes, then lower oven temperature to 300 degrees. Add chicken stock, wine and tomatoes to roasting pan. Continue to cook pork until internal temperature registers 190 degrees with an instant-read thermometer and meat is fork-tender, another 3 to 4 hours. If pork begins to brown too quickly, cover loosely with aluminum foil.
  • Transfer pork to a platter and allow to rest for at least 20 minutes. Using a fine sieve, strain cooking liquid. Skim off as much fat as you can and reserve liquid.
  • Melt butter in a medium saucepan over medium heat. Whisk in flour and cook, stirring constantly until a light brown roux is formed, 7 to 8 minutes. Whisk in 4 cups of the drippings and cook, stirring constantly, until mixture is smooth and reaches the consistency of sauce, about 10 minutes. Season with thyme leaves, salt and pepper.
  • When pork is cool enough to handle, shred with a fork, then add it along with the sauce back to a large pan and reheat. Serve on crusty rolls or baguette, garnished as desired.
