We like to have this for dinner during the summer - a tasty light meal that doesn't heat up the kitchen. You could serve tortilla chips on the side, if you want.

3 boneless skinless chicken breasts
1 tablespoon olive oil
1 tablespoon fajita seasoning mix or 1 tablespoon taco seasoning
4 1/2 cups lettuce, assorted, torn
2 tomatoes, cut in wedges
1/2 cucumber, peeled and slices
4 green onions, chopped
1 avocado, diced
1 cup corn, thawed
1 cup black beans
1/4 cup cilantro, chopped
cilantro salad dressing (purchased or use recipe 30146 "Cilantro Dressing for Salads" by Bergy)

Steps:

  • Rub chicken with olive oil and fajita seasoning. Grill over lot heat until done. Set aside and keep warm.
  • While the chicken is grilling, prepare and combine the remaining salad ingredients, except the dressing.
  • Slice chicken 1/4" thick, against the grain, and add to salad. Toss with dressing to taste.
  • Serve immediately.

2 flour tortillas (6 inches), cut into 1/2-inch strips
Butter-flavored cooking spray
1 pound boneless skinless chicken breasts, cut into 1-inch cubes
1 teaspoon olive oil
6 cups ready-to-serve salad greens
1 can (15-1/4 ounces) whole kernel corn, drained
1 can (15 ounces) black beans, rinsed and drained
2 cups chopped tomatoes, divided
1 medium green pepper, diced
1/2 cup cubed peeled jicama or sliced water chestnuts
1/3 cup chopped green onions
1/2 cup shredded reduced-fat cheddar cheese
2/3 cup fat-free ranch salad dressing
4 teaspoons barbecue sauce

Steps:

  • Place tortilla strips on a baking sheet; spritz both sides of strips with butter-flavored cooking spray. Bake at 350° for 4-5 minutes or until crisp. Meanwhile, in a large nonstick skillet, cook chicken in oil over medium heat until no longer pink; set aside. , Combine the salad greens, corn, beans, 1 cup tomatoes, green pepper, jicama and onions; arrange on a serving platter. Place chicken in center of salad; sprinkle with cheese and remaining tomatoes. Arrange tortilla strips around chicken. , In a small bowl, combine the ranch dressing and barbecue sauce; serve with salad.

This is great, cool & tasty salad for the summer, easy to bring to a cookout. Just wait until you're there to add the Dorito chips so they don't get soggy!

1 1/2 lbs boneless chicken, shredded
1 head iceberg lettuce, torn into pieces
1/4 cup oil
1/4 cup water
1/4 cup lemon juice
1 (1 ounce) package taco seasoning mix (such as McCormick's, or any brand)
1 (14 ounce) can of sliced black olives, drained
4 tomatoes, cut up
2 cups shredded cheddar cheese or 2 cups monterey jack cheese
2 (8 ounce) bottles Catalina dressing
1 (15 ounce) bag of dorito's nacho chips, hand crushed. (not sure on the actual ounces, the large party size bag)

Steps:

  • Boil chicken breasts until done, approx 20 minutes, cool and shred chicken.
  • Mix together the taco seasoning mix with the oil, water and lemon juice in a bowl, add chicken and marinade for 30 minutes. Drain when done.
  • In large salad bowl mix all ingredients together. Serve.
  • Note: You can also cook the chicken on the grill rather than boil.
  • Also if your bringing to a cookout, don't add the crushed Dorito's until you get there!
  • Cooking time is marinating time for the chicken.

1 (15 ounce) can black beans, rinsed and drained
1 medium green bell pepper, diced
2 medium ripe avocados, diced
2 medium Roma tomatoes, diced
4 stalks green onions, sliced
¼ cup chopped fresh cilantro
⅔ cup plain Greek yogurt
½ cup mayonnaise
1 tablespoon taco seasoning mix
1 tablespoon dry ranch dressing mix
1 cup crushed tortilla chips

Steps:

  • Combine lettuce, chicken, corn, beans, bell pepper, avocados, tomatoes, green onions, and cilantro for salad in a large bowl.
  • Stir yogurt, mayonnaise, taco seasoning, and ranch dressing mix for dressing together in a small bowl.
  • Pour 1/2 of the dressing over the salad and toss to combine. Gradually add more dressing until it is dressed to your liking. Top with tortilla chips before serving.
