The most delicious crockpot cheesy cauliflower soup that's packed with vegetables, good for you, and easy to make. Super creamy, full of veggies, and freezer friendly.

6 cups cauliflower florets
1 cup carrots, diced
1 cup onion, diced
3 celery stalks, diced
2 garlic cloves, diced
4 cups vegetable broth (or chicken)
1/4 cup all purpose flour (skip for low carb or gluten free)
1.5 cups canned nonfat evaporated milk
1/2 cup skim milk
Salt and pepper
1.5 cups reduced fat shredded cheddar cheese

Steps:

  • Add the cauliflower, carrots, onion, celery, garlic, and broth to the crockpot. Cook on low for 4 hours or until veggies are soft.
  • Stir together the flour, evaporated milk, and skim milk. Add to the slow cooker and turn it up to high for 1 hour. This will thicken up the soup.
  • Season the soup with salt and pepper to taste. Use an immersion blender (or blend in batches) until smooth. Stir in the cheese until it melts completely.

  • Put cauliflower, onion, celery and chicken stock in crockpot.
  • Cover and cook on low for 4-6 hours.
  • Puree in blender.
  • Return to crockpot and blend in cream, worcestershire and cheese.
  • Add salt and pepper to taste.
  • Stir to mix.

2 medium heads cauliflower, cut into florets (about 18 cups)
1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
2 cups shredded cheddar cheese
1 cup sour cream
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 cup butter, cubed
1 cup dry bread crumbs

Steps:

  • In a 6-qt. slow cooker, combine cauliflower, soup and cheese. Cook, covered, on low for 5-6 hours or until cauliflower is tender. Stir in sour cream, salt and pepper., In a small skillet, melt butter over medium heat. Add bread crumbs; cook and stir until golden brown, 2-3 minutes. Sprinkle over cauliflower.

1 teaspoon English mustard
3 bay leaves

Steps:

  • Combine cauliflower, Cheddar cheese, onion, mustard, bay leaves, salt, and pepper in a slow cooker. Pour in hot chicken broth.

4 cups cauliflower florets
4 tablespoons butter or 4 tablespoons margarine
1 small yellow onion, minced
2 tablespoons flour
2 cups chicken stock (can use vegetable if preferred)
1 cup milk (or half & half or cream, whatever works for you)
3 ounces cream cheese with garlic and herbs

Steps:

  • In large pot melt butter.
  • Saute onion until tender on medium heat.
  • Add cauliflower florets. Saute califlower and onion for about 2 minutes.
  • Sprinkle flour over butter and veggie mixture.
  • Saute for 1 minute.
  • Add stock.
  • Stir until combined.
  • Cover and cook on medium heat for about 15 minutes or until cauliflower is tender.
  • Add milk and cream cheese.
  • Stir for about 10 minutes until combined and thick.
