1 lb lean (at least 80%) ground beef
1/2 lb bulk Italian pork sausage

Steps:

  • Heat oven to 425°F. Line 15x10x1-inch baking pan with foil; spray foil with nonstick cooking spray. In large bowl, beat egg. Stir in all remaining ingredients.
  • In sprayed foil-lined pan, shape beef mixture into 8-inch square. Cut into 25 squares; do not separate.
  • Bake 20 to 25 minutes or until meatballs are thoroughly cooked and no longer pink in center. With sharp knife, cut apart meatballs.

This is originally from the Betty Crocker cookbook. My 3rd and 4th grade daughters are learning to cook and this is simple enough for them, but turns out well enough to serve to guests. (When they use this recipe, they usually sub 1/4-1/2 tsp onion powder for the chopped onion.) It's also a very versatile recipe: sometimes we also add other spices -- oregano, basil, thyme for Italian food or cinnamon and mint for Greek food.) We always oven-bake these, though there are also pan-fry and microwave options in the cookbook that we've not tried. Also good to cook ahead and freeze for later use.

1/2-2/3 cup dry breadcrumbs (can also use seasoned crumbs)
1/4 cup milk
1/4-3/4 teaspoon salt (optional)
1/2 teaspoon Worcestershire sauce
1 small onion, chopped (approx 1/4 c)
1 egg

Steps:

  • Combine all ingredients and shape into 20-24 meatballs (1 to 1-1/2 inches each).
  • To oven bake: preheat oven to 375 degrees F. Place in ungreased 9x13 pan (you may want to line it with foil for easier clean-up).
  • Bake 20-25 min or until light brown and cooked through; turn meatballs halfway through, if desired, to help maintain a round shape.
  • To pan fry: Cook in skillet on medium heat, turning as needed, until brown (approx 20 min).
  • To microwave: Place in micro-proof 12x7 pan and cover loosely.
  • Micro on high for 3 minutes; rearrange meatballs.
  • Cover again loosely and micro until brown inside, approx 5-7 min more.
  • Let stand covered for 3 minutes.

It has a devoted following online and in real life and became a fixture at my family's birthday celebrations as a crowd-friendly snack adored by all ages. I've swapped the slow cooker for a sheet pan, which allows you to enjoy meatballs from scratch in minutes, rather than hours. Orange soda lends a citrusy, sweet-and-sour-esque taste to the quick-fix barbecue sauce. Shape the meatballs into smaller sizes for snacking or go big to turn this appetizer into the main event.

2 slices white bread
1/2 cup dairy or non-dairy milk
1 pound ground beef
1/2 pound ground pork
1 large egg
1/4 cup minced scallions (2 scallions)
2 1/2 teaspoons garlic powder

1/4 teaspoon black pepper
1 cup orange soda
1/2 cup ketchup
1/3 cup packed light brown sugar
3 tablespoons apple cider vinegar
2 teaspoons Worcestershire sauce

1/4 teaspoon black pepper
2 teaspoons cornstarch

Steps:

  • Make the meatballs. Preheat the oven to 400 degrees F. Line a baking sheet with foil, then grease the foil with cooking spray.
  • In a large bowl, combine the bread and milk and let sit until the bread has absorbed the milk, about 5 minutes. Mash it all together with a fork. Add the ground beef, ground pork, egg, scallions, garlic powder, salt, and pepper. Using your hands, mix together just until combined.
  • Scoop out 2-tablespoon portions of the mixture and roll into balls. Arrange the meatballs in a single layer on the baking sheet. Bake the meatballs for about 15 minutes, until golden brown and cooked through. (Larger meatballs will require longer cooking times.) While the meatballs are baking, make the barbecue sauce.
  • Make the barbecue sauce. In a medium saucepan, whisk together the orange soda, ketchup, brown sugar, vinegar, Worcestershire, garlic powder, smoked paprika, salt, and pepper. Bring to a boil over medium heat.
  • In a small bowl, whisk together the cornstarch and water.
  • When the soda mixture comes to a boil, whisk in the cornstarch slurry. Boil the sauce, stirring occasionally, until it thickens to the consistency of syrup, 3 to 5 minutes. Remove from the heat and set the sauce aside to cool for 10 minutes.
  • Remove the meatballs from the oven, then transfer to a large bowl. Pour in the barbecue sauce, toss to combine, and serve.

Steps:

  • Preheat the oven to 400ºF. Combine the ground turkey, egg, breadcrumbs, 2 Tbsp of BBQ sauce (reserve the remaining ¼ cup for later), garlic powder, smoked paprika, and salt in a bowl. Mix the ingredients together by hand until evenly combined.
  • Divide and shape the meat mixture into 16 meatballs. This is easiest by first dividing the mixture into four equal portions, then dividing and shaping each of those portions into four meatballs. The mixture may be fairly wet. That is okay. Place the meatballs on a parchment lined baking sheet and set aside.
  • Slice the bell pepper and onion into ¼-inch wide strips. Place the pepper and onion slices on a second baking sheet (lined or unlined, your choice) and drizzle with cooking oil. Toss to coat, then season with salt. Spread the peppers and onions evenly over one side of the baking sheet.
  • Remove the pineapple slices from the can and blot them dry with paper towel. Lay the pineapple slices over the second half of the baking sheet with the peppers and onions.
  • Place both baking sheets in the preheated oven and roast for 15 minutes.
  • While the sheet pans are in the oven, begin cooking the rice. Add the rice and 1.5 cups water to a sauce pot. Place a lid on top and bring the water up to a boil. Once boiling, turn the heat down to low. Let the rice simmer for 15 minutes. After 15 minutes, turn the heat off and let the rice rest, undisturbed and with the lid on, until the rest of the meal is finished.
  • After roasting for 15 minutes, take the sheet pan with the vegetables out and give the peppers and onions a stir. Use a brush to lightly coat the pineapple slices with about 2 Tbsp BBQ sauce. Return that sheet pan to the oven.
  • Remove the sheet pan with the meatballs and use the brush to lightly coat the meatballs with the remaining 2 Tbsp BBQ sauce. Return the sheet pan to the oven. Finish roasting both sheet pans for an additional 10 minutes.
  • After the meatballs, peppers, onions, and pineapple have finished roasting, it's time to serve! Fluff the rice with a fork, then add about ¾ cup rice to each bowl or meal prep container. Divide the meatballs, peppers, onions, and pineapple slices between the four bowls. Top with sliced green onion, then enjoy!

Steps:

  • Heat the oven to 400 degrees F and position a rack in the center.
  • In a large mixing bowl, combine the vegetables, garlic, oregano, salt and pepper. Drizzle 2 extra virgin olive oil and toss to combine. Transfer the vegetables to a large lightly oiled sheet pan and spread them out.
  • In the same large bowl, combine the meat, onions, garlic, parsley, oregano, mint, Parmesan, bread crumbs and egg. Season with a big pinch of kosher salt and black pepper. Drizzle with a little olive oil (about 1 tbsp). Mix until everything is well-combined. Form the meat mixture into 1-inch meatballs and lightly press the center of the meatballs with your thumb (do not completely flatten).

1 lb. sweet Italian sausage
4 large eggs, beaten to blend
1 1/2 cups finely grated Parmesan
2 tsp. kosher salt
Extra-virgin olive oil (for greasing)

Steps:

  • Place bread in a large bowl, pour milk over, and let sit until moistened, about 5 minutes. Squeeze bread with your hands to remove excess milk; discard milk. Tear bread into pea-size pieces and return to bowl.
  • Add beef, sausage, eggs, Parmesan, and salt to bread. Using your hands, gently mix until evenly distributed (do not overmix).
  • To serve immediately:
  • Arrange racks in upper and lower thirds of oven; preheat to 500°F. Lightly coat three 18x13" rimmed baking sheets with oil. Fill a small bowl with cool water. Moisten your hands and roll meat mixture between palms into ping pong-size balls (about 1.5" diameter; 1.2 oz. each), occasionally moistening hands as needed. Arrange meatballs 1/2" apart on prepared sheets.
  • Roast meatballs, rotating racks top to bottom once halfway through, until lightly browned and cooked through, 8-10 minutes.
  • To freeze to serve later:

Moisten your hands and roll meat mixture between palms into ping pong-size balls (about 1.5" diameter; 1.2 oz. each), occasionally moistening hands as needed.   • Add vegetable oil to a baking sheet, then use your palms to roll the meatball mixture into even balls about the size of a golf ball, placing them directly on the baking sheet when formed. Gently roll the meatballs to coat in oil, then transfer to oven and bake at 220°C/425°F for approx. 10 min.
  • Add walnuts to a small saucepan with olive oil and anchovy fillets over medium-low heat. Let fry and stir occasionally, until walnuts are golden brown and anchovy fillets are no longer visible, for approx. 6 min.

  • Form the mixture into small chicken meatballs about 1 1/2 tbsp each (whatever size you choose, stick to it for even cooking.) Arrange the chicken meatballs on the same sheet pan with the tomatoes and onions (nestle them in between the veggies, making sure not to crowd the meatballs.)
