EASY RED BEANS AND RICE

Easy Red Beans and Rice image

This is an easy and delicious take on a Louisiana classic that you can prepare and cook in 40 minutes! I use turkey kielbasa to cut down on the fat, but not the flavor. Season with hot pepper sauce if you like.

Rajma (Indian Red Kidney Bean Curry) image

This is a quick and easy curry made from red kidney beans. Served with either naan (flatbread) or rice. Rajma masala is sold at most food stores in the international section.

VEGAN RED BEANS AND RICE

Vegan Red Beans and Rice image

This is a healthier, vegetarian/vegan/Lent-friendly version of one of my favorite Creole dishes. This dish is typically made with ham hocks, so this version has less fat and salt by default. In Louisiana, it is traditionally served on Monday. Make it part of your weekly rotation! Allow each person at the table to add Cajun seasoning and Louisiana hot sauce to taste.

Provided by Lauren Reese

Categories     Main Dish Recipes     Rice     Beans and Rice Recipes

Time 10h25m

Yield 6

Number Of Ingredients 16

1 (16 ounce) package dry red kidney beans
3 stalks celery, chopped
1 medium onion, coarsely chopped
1 green bell pepper, chopped
6 large cloves garlic, peeled
2 tablespoons vegetable oil
2 teaspoons dried thyme
1 teaspoon dried oregano
½ teaspoon ground black pepper
½ teaspoon ground cumin
¼ teaspoon cayenne pepper
8 cups water, divided
4 dashes liquid smoke flavoring
2 bay leaves
1 cup uncooked white rice
salt to taste

Steps:

  • Place red beans into a large container and cover with several inches of cool water; let soak, 8 hours to overnight. Drain and rinse.
  • Add celery, onion, bell pepper, and garlic to a blender and process until just shy of a puree.
  • Add vegetable oil to a saucepan or stockpot over medium heat. Cook and stir vegetable mixture for 5 minutes. Add thyme, oregano, black pepper, cumin, and cayenne pepper. Cook, stirring regularly, for 2 minutes more.
  • Add 6 cups water, the beans, liquid smoke, and bay leaves. Stir to combine and turn heat up to high. Bring to a boil, reduce heat to low, and let simmer until beans begin to fall apart, 2 to 3 hours.
  • Bring remaining water and rice to a boil in another saucepan. Reduce heat to medium-low, cover, and simmer until rice is tender and water has been absorbed, 20 to 25 minutes.
  • Pour most of the cooking liquid from the beans into a bowl and reserve. Remove bay leaves. Mash about 1/3 of the beans, adding as much of the reserved liquid as necessary to reach preferred thickness. Mix with the unmashed beans and season with salt. Serve beans over rice.

EASY RED KIDNEY BEANS & BROWN RICE WITH CHILI FLAVORS (VEGAN

Easy Red Kidney Beans & Brown Rice With Chili Flavors (Vegan image

I was browsing through my copycat recipes book and found one for Popeye's Red Beans & Rice which was the base for this recipe. I didn't know what a "16-oz can red chili beans in chili gravy" was so I figured a regular can of kidney beans oughta do it...and healthy brown rice! I had a few green onions so I added them for pleasing color and flavor, made a nice burrito base with queso blanco, spinach, and tofu!

Provided by the80srule

Categories     Brown Rice

Time 55m

Yield 4 , 4 serving(s)

Number Of Ingredients 9

1 cup brown rice
2 cups water
1 dash salt
1 (16 ounce) can red kidney beans, rinsed and drained
1 tablespoon olive oil
1 teaspoon chili powder
1/4 teaspoon ground cumin
1 dash garlic salt (I used a little salt and a little garlic powder)
1/2 cup green onion, chopped

Steps:

  • Bring 2 cup lightly salted water in a heavy-bottomed saucepan to a boil, and immerse the brown rice in it. Loosely cover, lower the heat to medium-low and let simmer for 40 minutes or until the rice has absorbed all the water. Fluff it up and put it into another bowl for now.
  • Put the rinsed and drained beans into a small bowl and mix with the olive oil.
  • In the same pot you cooked the rice in, lightly heat the oiled beans but don't boil them.
  • Add the dry spices and let cook for about 5 minutes to incorporate the flavors.
  • Remove from heat, mix with the warm rice and fresh green onions if you have them, and serve immediately.

  • Slow-Cooker Vegetarian Taco Soup. Three kinds of beans add plenty of fiber to this satisfying taco soup that also lends itself to lots of toppings. Try it with shredded cheese, sour cream and cilantro, or squeeze a little lime and crumbled tortilla chips on top.
  • Pasta e Fagioli. This pasta, bean, and sausage soup tastes just like the Olive Garden favorite, and makes a great way to use up leftover veggies and beans.
  • Vegetarian Three Bean and Grape Salad. Classic bean salads just taste like summer, and this version adds celery for crunch and grapes for a hint of sweetness.
  • Bean and Vegetable Soup. This comforting slow-cooker soup comes loaded with veggies and beans and makes a great way to clean out the fridge if you have a few ingredients to use up.
  • Pasta and Bean Salad. When you can't decide between a pasta salad or a bean dish, split the difference with this cold side salad that has both. Cook the rotini – or whatever pasta you've got – just a hair shy of al dente.
  • Kidney Bean Burger with Mushrooms. If you love a black bean burger, but only have kidney beans on hand, make this one instead. It uses kidney beans and mushrooms for texture, bell peppers and onion for flavor and oats to hold it all together.
  • Red Beans and Rice with Andouille Sausage. Spicy andouille sausage jazzes up this Louisiana classic, but you can add a ham bone, diced ham, or some bacon to the beans if you like even more meat.
  • Red Kidney Bean Curry. This bean-based vegetarian curry dish is popular in Northern India, flavoring the beans with a lovely blend of garam masala, ginger, turmeric, coriander, chiles, and garlic.
  • Caribbean Beans and Rice. As many variations on this Caribbean classic exist as there are regions of the islands, but this one will get you started. Spiced with nutmeg, cloves, and cinnamon, it has a warming flavor that complements tender beans and acidic tomatoes perfectly.
  • Vegetarian Dirty Rice. If you're used to your red beans and rice coming with sausage or ham, try this vegetarian or even vegan version. With Cajun seasoning, bell pepper and onion, it has just as much zest as the traditional and none of the animal products.
